The FSMA Produce Safety Rule (PSR) requires citrus packers to more closely assess, manage, and monitor food safety risks. Although there have been no foodborne illness outbreaks and only one recall in fresh citrus, the risk of pathogens coming in on the fruit and cross contamination during washing still exists. Packhouses have dynamic washing systems and in-plant validations may be the only way to demonstrate compliance with the PSR. Angiotensin I-Converting Enzyme Inhibitory And Antioxidative Activities Of The Bioactive Peptides In The Crude Salt-Soluble Protein Hydrolysates Of Pili Nut (Canarium Ovatum Engl.) Cv. Mayon Kernel, Ella Mae Gamba, Lawrence Yves Uy, Mary Ann Torio

The in silico enzyme digestion and peptide function annotation of pili nut (Canarium ovatum Engl.) 11S globulin protein sequence revealed the presence of bioactive peptides with antihypertensive and antioxidative activities. Molecular docking simulations showed that the proline-histidine (PH) ligand can better inhibit angiotensin I-converting enzyme (ACE) activity than captopril. This result was verified through biochemical assays. Pili kernel protein was extracted with 0.5 M NaCl buffer using the modified Osborne fractionation method, which yielded 100 mg of protein per gram of defatted pili kernel determined via Bradford assay. In the recent past, the Horn of Africa witnessed an upsurge in the desert locust (Schistocerca gregaria) invasion. This has raised major concerns over the massive food insecurity, socioeconomic impacts, and livelihood losses caused by these recurring invasions. This study determined the potential vegetation damage due to desert locusts (DLs) and predicted the suitable habitat at high risk of invasion by the DLs using current and future climate change scenarios in Kenya. This dissertation focuses on enhancing the bioactivity and emulsifying properties of camel whey through peptic hydrolysis and conjugation with quercetin, respectively. Peptic hydrolysis of camel whey using pepsin was performed using a general full factorial design (33) to study the effects of temperature (30, 37, and 45°C), times (120, 240, and 360 min), and enzyme concentrations (0.5, 1, and 2%) on antihypertensive and antilipidemic properties. The generated hydrolysates showed higher inhibition of pancreatic lipase (0.465 to 7.5 mg/mL), cholesterol esterase (0.240 to 1.243 mg/mL), and Angiotensin Converting Enzyme (ACE) (0.197 to 1.307 mg/mL) compared to control camel whey. In 2020, a single-response-based, valence × arousal circumplex-inspired emotion questionnaire (CEQ) was developed. Using a between-participants design, previous studies have found that a multiple response (MR) condition better discriminated test samples (e.g., written food names) based on their evoked emotions than a single response (SR) condition. We aimed to compare the dietary intakes of Australian patients with non-alcoholic fatty liver disease (NAFLD) to general Australian population intake data and determine whether the intake of any nutrient or food group was able to predict the degree of steatosis. Dietary data from fifty adult patients with NAFLD were compared to intake data from the Australian Health Survey for energy, macronutrients, fat sub-types, alcohol, iron, folate, sugar, fibre, sodium and caffeine. Objectives

Despite the public-health significance of both malnutrition and crises, little has been done to explore the convergence of the two domains and develop ways to improve policies and practices, especially in rural communities. This article remedies that knowledge gap by focusing on nutrition-related changes, responses, and practices during crisis situations in Siargao Island, Philippines, using the COVID-19 pandemic as a backdrop.

This study is directed towards developing a fast, non-destructive, and easy-to-use handheld multimode spectroscopic system for fish quality assessment. We apply data fusion of visible near infra-red (VIS-NIR) and short wave infra-red (SWIR) reflectance and fluorescence (FL) spectroscopy data features to classify fish from fresh to spoiled condition. Farmed Atlantic and wild coho and chinook salmon and sablefish fillets were measured. This study investigated the release of microplastics and nanoplastics from plastic containers and reusable food pouches under different usage scenarios, using DI water and 3% acetic acid as food simulants for aqueous foods and acidic foods. The results indicated that microwave heating caused the highest release of microplastics and nanoplastics into food compared to other usage scenarios, such as refrigeration or room-temperature storage. It was found that some containers could release as many as 4.22 million microplastic and 2.11 billion nanoplastic particles from only one square centimeter of plastic area within 3 min of microwave heating. The main objective of this study was to investigate the effectiveness of ultraviolet light (UV-C) emitting diodes for the decontamination of stainless steel food contact surfaces. Listeria monocytogenes (ATCC 19115), Escherichia coli (ATCC 25922), and Salmonella enterica serovar Typhimurium (ATCC 700720) were chosen as challenge microorganisms. Target microorganisms were subjected to UV-C dosages of 0, 2, 4, 6, and 8 mJ cm−2 at an average fluence of 0.163 mW/cm2 using a near-collimated beam operating at 279 nm wavelength. This study identified marginal agricultural lands in the Lower Mississippi Alluvial Valley using crop yield predicting models. The Random Forest Regression (RFR) and Multiple Linear Regression (MLR) models were trained and validated using county-level crop yield data, climate data, soil properties, and Normalized Difference Vegetation Index (NDVI). The RFR model outperformed MLR model in estimating soybean and corn yields, with an index of agreement (d) of 0.98 and 0.96, Nash-Sutcliffe model efficiency (NSE) of 0.88 and 0.93, and root mean square error (RMSE) of 9.34% and 5.84%, respectively. While shrimp is the most-consumed seafood product in the United States, there is a lack of research into the extent of short-weighting and mislabeling of shrimp in the marketplace. Meat analogs are becoming increasingly popular for health, environmental, and ethical reasons. However, these products are at risk for contamination with Salmonella enterica. Therefore, it is important to ensure that detection methods for S. enterica in meat analog products are effective. Currently, the Bacteriological Analytical Manual (BAM) chapter on Salmonella detection calls for pre-enrichment of meat analogs using lactose broth (LB) with added surfactants, Tergitol Anionic 7 or Triton X-100. Effective decolorization methods mitigating green compound formation from alkaline chlorogenic acid-amino acid reactions can facilitate greater consumption of chlorogenic acid-rich products. While thiols show promise as decolorization agents to replace sulfites, their application has not been optimized. In this work, cysteine and glutathione were probed for their varying kinetic effects on the onset of chlorogenic acid-lysine induced greening. A six-parameter model developed from a reparametrized Weibull cumulative distribution function accurately captured the time- and thiol concentration-dependence of greening in chlorogenic acid-lysine-thiol solutions at pH 8.0 and 9.0, illustrating the pH-dependence of each thiol’s effectiveness at lowering terminal greening magnitude as …

Mesquite trees continue to invade forests and range lands in many countries across the world. The cost to remove these trees is staggering. In Texas, landowners spent $25 million over a 10- year period to clear 300,000 ha of mesquite trees, a fraction of the 22 million ha of Texas land affected by this invasion. I combine a literature review with my own anecdotal experiences as an individual with Celiac’s Disease who has lived and studied in Italy. Wong Lo Kat (or Wanglaoji in Mandarin) is a popular soft drink containing herbal tea that is often used as a Chinese folk remedy for mild ailments. The herbs included in the drink are the following: Chinese Mesona, White Frangipani, Microcos, Chrysanthemum, Japanese Honeysuckle, Heal All, and Chinese Licorice. Garlic, from the allium family, is known to contain organosulfur compounds. These compounds contain antioxidants, which provide a plethora of potential health benefits. Black garlic is created by processing regular garlic at temperatures ranging between 60-90°C, with high humidity for upwards of one month. The process of making black garlic alters these components, potentially increasing the antioxidant capacity. This end product yields a garlic that is a deep black color with a sweet flavor, pungent aroma, and a soft malleable texture. This study was designed to examine the poor (non-nutritional) food choices that college freshman make when living on-campus and eating at on-campus dining facilities. These poor choices lead to excessive weight gain, eating disorders, declining health and wellness, and mental health issues (i.e. depression, anxiety, lack of self-confidence). These side effects can lead to a less than desirable 1st year college experience and lack of academic success.
