MOST of the commercial apples grown throughout the world today have originated as chance seedlings and commercialised by observant nurserymen or fruit growers.

Many Tasmanian varieties were established this way—the Sturma, Democrat and Crofton.

But the seedling which has had the greatest impact on apple growing in Australia is the Granny Smith and its rise to fame is an interesting story.

We preserve fruits to try to spread this short period, and to have them on hand to vary menus when fruit is out of season.

A cupboard shelf packed with bottles of colourful, neatly arranged preserved fruits is indeed a satisfying sight.

Bottling is the most popular method, with pickling being done to a smaller extent.

The demand for beer light in color has placed emphasis on the need to regulate malting as to produce, naturally and consistently, malts that are light in color (Bawden and Artis 1954), and malt having a clean pleasing aroma (Hopkins and Krause 1937). Even when bright barley, relatively free of field fungi, is malted, the finished product tends to be darker in color than the starting materials; in some cases to the extent that bleaching with sulfur dioxide gas is required (Hopkins and Krause 1937; Oesting et al. 1949). Levulose (D-fructose, fruit sugar), C6H12O6 is a white crystalline ketohexose. This sugar has distinctive properties which make it of commercial interest. It is more costly than ordinary table sugar (sucrose). Levulose is characterized by a high degree of sweetness (6), great solubility (20), and medical usefulness when administered intravenously. Joslin (21) and Root and Baker (32) found levulose to be of great value in the treatment of diabetes. In certain industrial areas fluorides are present in various amounts in the atmosphere. These fluorides are liberated by industrial processes at high temperature in treatment of materials containing fluoride, either as a natural impurity, or as added material for technical purposes. Equipment and procedures have been installed in many plants to reduce the output of fluorides significantly, yet forage and hay grown near the plants may contain elevated amounts of fluorides. During recent years, the dairy industry has been aware of a defect in Cheddar cheese known as "late gas". This causes the mechanical openings to enlarge and become shiny. In Cottage cheese the defect exhibits itself in a general lowering of the grade and quality of the finished product.

Workers in the industry have related this defect to the starter culture, although contamination of milk, equipment and cultures may also be a source. They conclude that with a source of good quality milk and proper manufacturing procedures and efficient sanitation methods, the defect may persist.
