Green beans are an important crop grown for processing in both Arkansas and Missouri. Green beans are harvested mechanically using non-selective picking fingers. Harvested beans are then transported in bulk to processing plants that are located at various locations throughout the mid-South. Thus, the crop is managed for high quality, avoiding pod blemishes caused by insects and diseases. One of the consistent quality problems that affect Arkansas and Missouri green bean crops is pod rot. The Rapid Visco-Analyser (RVA) and the Micro Visco-Amylograph (MVA) were compared in measuring the viscosity properties of rice flours. A total of 72 rice samples were procured from three cultivars harvested at two locations and three moisture contents and separated into thin, medium, and thick kernel-thickness fractions. A fast and a slow heating rate was used in the procedure for both instruments. Cultivar, kernel thickness, and harvest location affected rice viscosity. The RVA viscosity profiles using a fast heating rate were best correlated with those of the MVA using a slow heating rate. The RVA slow heating rate resulted in …

Previous studies have suggested that carbohydrates may affect expression of virulence genes in Listeria monocytogenes. Which carbohydrates influence virulence gene expression and how carbohydrates mediate expression, however, is not clear. The goal of this work was to examine how carbohydrates affect virulence gene expression in L. monocytogenes 10403S. Growth studies were conducted in medium containing glucose and various sugars. Metabolism of arbutin, arabitol, cellobiose, mannose, maltose, trehalose, and salicin were repressed in the presence of glucose. Only when glucose was consumed were these sugars fermented, indicating that catabolite repression by glucose had occurred. To determine whether virulence gene expression …

Background:While the ingestion of small amounts of an offending food can elicit adverse reactions in individuals with IgE-mediated food allergies, little information is known regarding these threshold doses for specific allergenic foods. While low-dose challenge trials have been conducted on an appreciable number of allergic individuals, a variety of different clinical protocols were used making the estimation of the threshold dose very difficult.
Objective: A roundtable conference was convened to develop a consensus clinical protocol for low-dose challenge trials for the estimation of threshold doses for specific allergenic foods.

Isopentenyl transferase (IPT) is an enzyme encoded by a bacterial gene that catalyzes the rate-limiting step in cytokinin biosynthesis. Under the control of senescence-associated promoter (pSAG12), isolated from Arabidopsis thaliana, it has been shown to delay senescence in several herbaceous species. Cytokinin synthesis begins at the onset of senescence and is then stopped when senescence ceases. This auto regulatory control of the transgene ensures normal development and morphology of the transformed plant, which may be affected in plants constitutively expressing ipt. The three gem-dimethyl-substituted cyclopentane derivatives 1-(2-propionyl)-4,4-dimethyl-2-isopropenylcyclopentane, 2-isopropenyl-4,4-dimethylcyclopentanecarboxyaldehyde and 1-hydroxy- methyl-2-isopropenyl-4,4-dimethylcyclopentane have been synthesized employing a thermally induced ene reaction as a key step. Each of the three compounds has been obtained predominantly as the cis isomer. The successful synthesis of these compounds affords opportunities for their further ellaboration towards sesquiterpenes of the protoilludane skeleton.

Objective: The purpose of this study was to discover whether the weight-related messages and themes from food advertisements in women's magazines reinforce or contradict the messages communicated in nutrition-related articles focusing on weight control within the same magazines.
Design: Content analysis of 48 issues of weight-related content six popular women's magazines, 2001-2002. There were three magazines in each of two categories, "homemaking" and "health." All food and nutrition advertisements were analyzed (n=954), along with all nutrition articles (n=336). Identifying those seniors most likely to adopt a healthy diet, the relative importance they place on certain perceived benefits associated with a healthy diet, and whether these perceived benefits are associated with selected demographic, lifestyle, and health history variables is important for directing effective dietary health promotion programs. Methods: Analyses are based on a cross-sectional convenience sample of 670 seniors aged 50 years and older at the 2002 World Senior Games in St. George, Utah. Data are assessed using frequencies, bivariate analysis, analysis of variance, and multiple logistic regression analysis. The nutritional value of the kernel meals of three species of lupin (Lupinus albus, L. angustifolius and L. luteus) was compared against each other and a reference ingredient of solvent extracted soybean meal, when fed to rainbow trout (Oncorhynchus mykiss). Each lupin kernel meal was included in test diets at 300 g/kg and also at a greater level, representing 50% of the total protein content in the diet. The digestibility of protein of all lupin kernel meals was better than for the soybean meal. The highest protein digestibility was that from L. luteus kernel meal at 30% inclusion (100%), which …

Background: Characterization of fatal and nonfatal reactions to food indicates that the majority of reactions are due to the ingestion of prepared foods rather than the nonprocessed allergen. In an ongoing study that used a double-blind placebo-controlled food challenge to investigate peanut allergy and clinical symptoms, the observed reaction severity in four of the first six subjects was greater than anticipated. We hypothesized that this was due to differences in the composition of the challenge vehicle.

An understanding of the involvement of bacterial cytoplasmic filaments in cell division requires the elucidation of the structural organization of those filamentous structures. Treponemal cytoplasmic filaments are composed of one protein, CfpA, and have been demonstrated to be involved in cell division. In this study, we used electron tomography to show that the filaments are part of a complex with a novel molecular organization that includes at least two distinct features decorating the filaments. One set of components appears to anchor the filaments to the cytoplasmic membrane. The other set of components appears to bridge the cytoplasmic filaments on the …

General combining ability (GCA) i.e. GCA males and GCA females, and Specific combining ability (SCA) were estimated. Lactobacillus acidophilus is a probiotic organism that displays the ability to use prebiotic compounds such as fructooligosaccharides (FOS), which stimulate the growth of beneficial commensals in the gastrointestinal tract. However, little is known about the mechanisms and genes involved in FOS utilization by Lactobacillus species. Analysis of the L. acidophilus NCFM genome revealed an msm locus composed of a transcriptional regulator of the LacI family, a four-component ATP-binding cassette (ABC) transport system, a fructosidase, and a sucrose phosphorylase. Transcriptional analysis of this operon demonstrated that gene expression was induced by sucrose and FOS but not by glucose or fructose, suggesting …

Dehydrated food commodities can be packaged in restaurant-size No.10 cans intended for long-term storage for such uses as personal storage, emergency relief efforts and military rations. Over the past few decades, nonfat dry milk (NFDM) has been retail-packaged for long-term storage in No. 10 cans under reduced oxygen concentrations for use in emergency situations. Little information is available concerning the quality of NFDM held in such conditions for prolonged storage periods. The objective of this research was to evaluate the quality attributes of NFDM in hermetically sealed cans with reduced oxygen levels held in long-term storage. Dry foods, such as white rice, are available for retail sale packaged in No. 10 cans for long-term storage in case of natural disasters or other emergencies. Little information is available regarding the quality of such products that are packaged for prolonged storage using hermetically sealed containers and oxygen absorbers. Traditionally, shelf life studies of cereal staples have investigated quality after storage for a maximum of several (~18) months. However, there is a market for product that will store for much longer periods of time, intended for such uses as personal storage, emergency relief efforts and military rations. This report summarizes the initial findings of a survey of members of the Chefs Collaborative organization. The Chefs Collaborative is a national network of more than 1,000 members of the food community who promote sustainable cuisine by celebrating the joys of local, seasonal and artisanal ingredients. Powdery mildew is caused by the fungal pathogen Uncinula necator. It is the most persistent fungal problem of grapes in WA and one of the most widespread fungal diseases of grapevines in the world. It is characterised by ash-grey to white powdery growth on green tissue of the vine. If uncontrolled it can cause serious crop losses and impair wine quality.
