Background: The Food Allergen Labeling and Consumer Protection Act (FALCPA) recently required bolded allergens or “contains” statements on food product labels. Very few U.S. studies have looked at the accidental food allergen ingestion rate in adults. Since the emotional and medical costs of allergic reactions can be high, it is important to determine if the FALCPA is helping to reduce the accidental food allergen ingestion rate in adults with self-reported food allergies.

It has long been recognized that limitations exist in the analytical methodology for amylose determination. This study was conducted to evaluate various amylose determination methods. Purified amylose and amylopectin fractions were obtained from com, rice, wheat, and potato and then mixed in proportion to make 10, 20, 30, 50, and 80% amylose content starch samples for each source. These samples, considered amylose standards, were analyzed using differential scanning calorimetry (DSC), high-performance size-exclusion chromatography (HPSEC), and iodine binding procedures to generate standard curves for each of the methods. In this study, the association between genotypic and selected phenotypic characteristics was examined in a collection of Canadian Escherichia coli O157:H7 strains isolated from humans and cattle in the provinces of Alberta, Ontario, Saskatchewan, and Quebec. In a subset of 69 strains selected on the basis of specific phage types (PTs), a strong correlation between the lineage-specific polymorphism assay (LSPA6) genotype and PT was observed with all strains of PTs 4, 14, 21, 31, 33, and 87 belonging to the LSPA6 lineage I (LSPA6-LI) genotype, while those of PTs 23, 45, 67, and 74 belonged to LSPA6 lineage II (LSPA6-LII) …

Cch1, a putative voltage-gated calcium ion channel, was investigated for its role in ascus development in Gibberella zeae. Gene replacement mutants of CCH1 were generated and found to have asci which did not forcibly discharge spores, although morphologically ascus and ascospore development in the majority of asci appeared normal. Additionally, mycelial growth was significantly slower, and sexual development was slightly delayed in the mutant; mutant mycelia showed a distinctive fluffy morphology, and no cirrhi were produced. Wheat infected with Δcch1 mutants developed symptoms comparable to wheat infected with the wild type; however, the mutants showed a reduced ability …

GM crops have great potential to improve food quality, increase harvest yields and decrease dependency on certain chemical pesticides. Before entering the market their safety needs to be scrutinized. This includes a detailed analysis of allergenic risks, as the safety of allergic consumers has high priority. However, not all tests currently being applied to assessing allergenicity have a sound scientific basis. Recent events with transgenic crops reveal the fallacy of applying such tests to GM crops.

Experiments were conducted to determine the effectiveness of different treatments based on the use of neutral electrolysed water (EW) on fresh-cut lettuce. EW was diluted to obtain different free chlorine concentrations (120, 60 and 12 ppm) and compared with standard washing treatment of 120 ppm chlorine solution. Shelf-life quality and safety markers were studied at the beginning and at the end of the 7-day storage at 4 ºC. The antioxidant capacity of 30 spices used frequently in ready meals and a selection of key compounds from spices were investigated in the current study using ferric reducing antioxidant properties (FRAP), 2,2'-azinobis(3-ethylebenzothiaziline-6-sulfonate) (ABTS) and microsomal lipid peroxidation (MLP) assays. Antioxidant capacities of the spice extracts were compared to 5 popular synthetic antioxidants [buylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT), tert-butylated hydroquinone (TBHQ), propyl gallate (PG) and octyl gallate (OG)]. Results showed that clove extracts had the highest antioxidant capacity as measured by FRAP, ABTS and MLP assays. Extracts from garlic powder were the lowest ranked of all the spices examined. Optimisation of short time blanching (steaming) was investigated using response surface methodology by analysing quality and microbial and nutritional markers over the shelflife of packaged fresh-cut lettuce. Steamer treatment time (5–10 s) and storage (1–10 days) were used as independent factors in order to optimise the process. Longer treatments (>10 s) were not feasible because of extensive damage caused to lettuce tissue. Significantly (p < 0.05) higher values of luminosity (L*), greenness (−a*) and sensory panel scores (fresh appearance, general acceptability and absence of browning) were obtained with samples treated for longer times with the steamer. Activity of browning-related enzymes present in photosynthetic tissue decreased in all the cases, however, longer treatment time (7.5–10 s) was needed with vascular tissues to reduce to similar activity values. These differences could be explained by the variation in tissue thickness. The longest steam treatment (10 s) reduced and maintained significantly (p < 0.05) lower mesophilic load than shorter treatments (5–8.5 s). However, significant (p < 0.05) decreases in vitamin C and carotenoids were observed in samples treated with longer treatments. Steamer treatment of 10 s could be considered the optimum time for maintaining the shelflife (mainly texture and browning) of fresh-cut lettuce for 7–10 days in optimum conditions.

Investigations were carried out for elemental composition of air particulates in the background air and near roadsides in Khartoum area. Investigations were also performed for the elemental composition of soils at the same locations. A cyclone and a dichotomous virtual impactor wereused to measure the air particulates. The cyclone was adjusted to collect particles having an aerodynamic diameter of 2.5!m. The virtual impactor, through its fine channel, was capable of collecting airborne particles with an aerodynamic diameter of 2.5 μm. Quantitating fat and lean tissue in isolated body regions may be helpful or required in obesity and health-outcomes research. However, current methods of regional body composition measurement require specialized, expensive equipment such as that used in computed tomography or dual energy x-ray absorptiometry (DEXA). Simple body size or circumference measurement relationships to body composition have been developed but are limited to whole-body applications. We investigated relationships between body size measurements and regional body composition. Beef ground under air and carbon dioxide (CO2) conditions were evaluated for their storage stability at 2 ± 1¼C starting after 2 days in the dark to simulate transportation, followed by 7 days in lighted display by measuring color (CIE L*, a*, b*, the hue and chroma), gas headspace, microbiological content, and pigment content. The effect of clay content, homogenization RPM, and pH on the mechanical and barrier properties of fish gelatin/nanoclay composite films was investigated. The addition of clay increased the tensile strength (TS) from 30.31±2.37 MPa to 40.71±3.30 MPa. The nanoclay composite film had improved oxygen and water barrier properties when compared to neat fish gelatin film. Oxygen permeability decreased from 0.0004028±0.0000007 gm/m2dayatm to 0.0001144±0.0000162 gm/m2dayatm and the water vapor permeability decreased from 0.0312±0.0016 ngm/m2sPa to 0.0081±0.0001 ngm/m2sPa. The purpose of the first part of the study was to develop a simplified near-infrared reflectance (NIR) spectroscopy method for detecting insect larvae in individual wheat kernels. Discriminant analysis, based on Mahalanobis distances calculated from log 1/R data at only four discrete wavelengths, yielded better results for classification of sound and insect infested wheat kernels than principal component analysis (PCA) using the spectral region from 1100 to 1900 nm. People use others' dress to make assumptions, including how they believe the wearer will behave. Observers then adjust their behavior in response to the anticipated behavior of the wearer. Physician or nurse dress affects the degree to which patients perceive the medical professional as confident, experienced, competent, mature, trustworthy, and professional. Dietitian dress has not been studied. In the depths of the Great Depression, with four children in public school, Mrs. Reeves walked two miles in rural Vernon, AL, to volunteer to cook hot meals for the students, who brought a canned good from home as payment for their lunch. The phenolic profile and antioxidant activities of oolong tea extract were investigated after tea was steeped in 90 or 100 oC water for 3 or 10 min. The extraction yield increased with increasing temperature and extended steeping time. However, higher temperature and longer time (100 oC water for 10 min) led to loss of phenolics. The aqueous extract of oolong tea (AEOT) at 100 oC for 3 min exhibited the strongest antioxidant activity. The major polyphenolic components of the AEOT were identified as (-)-epigallocatechin (EGC), (-)-epigallocatechin gallate (EGCG) and (-)-epicatechin-3-gallate (ECG). The title D-seco limonoid, named 1,3,7-trideacetylkhivorin (systematic name: 14,15:21,23-diepoxy-1,3,7-trihydroxy-4,4,8-trimethyl-D-homo-24-nor-17-oxochola-20,22-diene-16-one), C26H36O7, was isolated from the stem bark of African mahogany Khaya senegalensis (Meliaceae). The four fused six-membered rings adopt chair, chair, boat and half-chair conformations. The five-membered furan ring is disordered by a 180° rotation about the bond linking it to the pyran ring. The crystal structure is stabilized by strong classical O-HO hydrogen-bond interactions to form a network.

The potential benefits of their use have not been adequately investigated, especially in the developing world. Japan introduced Yakult, a probiotic fermented food drink in 1935, and in the Northern hemisphere, research and use of probiotics has gained an unprecedented momentum in the last decade [2]. Like many others who have made child nutrition into a career, Jane Jantz came to the profession in a roundabout way. She and her husband moved from California to Mississippi, where farmland is more affordable. She planned to work one year to tide them over from a bad crop – that was nineteen years ago, and Jane loves serving the children more each year as manager of the Okolona Elementary School cafeteria.

Ann started out in the Okolona Public School System as a cafeteria worker, moved up to be manager of the Okolona Elementary School cafeteria, and has been food service director since 1980. A firm believer in on-the-job training, she is an inspiration to all who work with her.

A BYU professor invented the "zing" in General Mills' new carbonated yogurt product, now available in stores all over the country. Fizzix(TM), an extension of Yoplait's Go-GURT brand that comes in a tube, adds a tangy tingle to the traditional fruity flavor of yogurt that will "fizzify" the tongues of the 8- to 12-year-olds the company is targeting.

A Wisconsin native, Ruth Jonen earned a degree in Dietetics at the University of Wisconsin – Stout, and then moved to Chicago. She has worked in school nutrition programs for almost 30 years, 27 of them in the suburban Cook County community in which she lives. Ruth served as School Nutrition Association President in 2005-2006.

Lead-contaminated candies from Latin America are beginning to gain attention in the public media1,2 and in the medical literature.3–5 These candies come from a number of sources and are manufactured outside Food and Drug Administration regulatory control. In 2005, we sampled 50 imported Latin American candies sold in Southern Nevada. A total of 20 (40%) tested positive with an average lead content of 1.46 0.27 mg/kg in the candies’ wrappers and straws, based on standard Graphite Furnace Atomic Absorption Spectrophotometry methodology. Background:Socioeconomic and racial/ethnic factors strongly influence cardiovascular disease outcomes and risk factors. C-reactive protein (CRP), a non-specific marker of inflammation, is associated with cardiovascular risk, and knowledge about its distribution in the population may help direct preventive efforts. A systematic review was undertaken to critically assess CRP levels according to socioeconomic and racial/ethnic factors.
Methods:Medline was searched through December 2006 for population-based studies examining CRP levels among adults with respect to indicators of socioeconomic position (SEP) and/or race/ethnicity. Bibliographies from located studies were scanned and 26 experts in the field were contacted for unpublished work.

Food safety can be improved by various antimicrobial applications through the effective inhibition of microorganisms for certain periods by controlled release. Antimicrobials in powders and films were studied to investigate their activities and properties. Nisin (Nisaplin®) (200, 400, 600, 800, and 1000 IU/ml) was adsorbed to silica and different corn starches and their antimicrobial activities against Listeria monocytogenes were evaluated by agar diffusion assay. Nisin-adsorbed silica (Celpure P-65) powder had the highest antimicrobial activity at 600 IU/ml and also confirmed that the highest amount of nisin was adsorbed onto silica at the same concentration. In this thesis, the potential for almond skins in their native state as a natural antioxidant in foods was explored. A literature review of general information on almonds, research done on almond skins, and general information on antioxidants is presented. The almond skins used in this study required an additional heat treatment step to improve their microbiological quality before further treatments and analysis could be performed.
