Providing additional calories in the form of an RTE bar to endurance athletes will increase performance and muscle re-synthesis, reduce muscle breakdown, and shorten recovery time. An RTE bar containing a blend of dairy proteins and carbohydrates will create a product with superior functionality, including bioactive and immunity enhancing properties from dairy derived ingredients. The protein will provide benefits in the form of easily digestible calories, essential amino acids and physical satiate.

ABSTRACT
Maya nut was investigated in term of its moisture, ash content, antioxidant activities, phenolic components by high pressure liquid chromatography-ultraviolet detector (HPLC-UV) and fatty acid composition by gas chromatography-flame ionization detector (GC-FID). The results showed that Maya nut was mainly composed of 55.06% linoleic acid (C18:2 n6), 27.2% palmitic acid (C16:0), 6.26% stearic acid (C18:0), 9.9% linolenic acid (C18:3 n3), and 3.36% Cis-11-Eicosenoic (C20:1). Maya nut possesses a higher content of polyunsaturated fatty acids (PUFAs) (linoleic and linolenic acid), but lower content of monounsaturated fatty acids (MUFAs) than canola oil and olive oil. In the United States, billions of pounds of animal by-products are generated by the food processing industry every year. Hydrogen sulfide producing bacteria (SPB) can utilize the sulfur-containing proteins and amino acids in the raw animal materials destined for the rendering process to produce harmful hydrogen sulfide (H2S) gas rapidly under the ambient conditions, resulting in hazardous working environments and inferior quality of finished products. Egg white proteins have become an important and desirable ingredient to the food industry due to their functional properties which include gelling, foaming, and emulsification. Egg white is also well recognized as an excellent source of nutrition. The goal of this work was to determine the effects of high pressure (HP) treatment on egg white proteins. Specifically, experiments were conducted using Raman spectroscopy and pepsin digestibility to investigate structural changes. Pressure treatment at 400 to 800 MPa (5 minutes at 4°C) resulted in increased pepsin digestibility of egg white proteins ovalbumin, ovotransferrin, and lysozyme compared to heat-treated (85 to 95°C) …

The goal of this research was to determine the effect of different doses of galactooligosaccharide (GOS) on the fecal microbiota of healthy adults, with a focus on bifidobacteria. The study was designed as a single-blinded study, with eighteen subjects consuming GOS-containing chocolate chews at four increasing dosage levels; 0, 2.5, 5.0, and 10.0 g. Subjects consumed each dose for 3 weeks, with a two-week baseline period preceding the study and a two-week washout period at the end. Milk fat globule membrane surrounds the fat droplets of milk. It is a biopolymer containing primarily membrane glycoproteins and polar lipids which contribute to its properties as a possible neutraceutical. The aims of the studies were to determine if dietary milk fat globule membrane: (1) confers protection against colon carcinogenesis; and (2) promotes gut mucosal integrity while decreasing inflammation compared to diets containing corn oil or anhydrous milk fat.

Shelf-stable canned butter is currently available in retail stores, and many home-preservationists promote home-canning of butter. Non-cultured butter is a low-acid canned food, which would presumably require thermal processing. The lack of a thermal process step in canned butter products raises questions of potential safety, because they are hermetically sealed and generally exhibit anaerobic growth conditions, which are optimal for Clostridium botulinum growth. Without thermal processing, low-acid canned foods (LACF) must have inhibitory factors present to prevent C. botulinum growth. Background: Systemic inflammation is linked to cardiovascular risk, but the influence of persistent pathogens, which are conventionally dichotomously categorized, on circulating levels of inflammatory markers is not clear. Antibody levels of pathogens have not been examined in relation to inflammation.
Methods: Using data from a subsample of the Multi-Ethnic Study of Atherosclerosis, we examined circulating levels of interleukin-6 (IL-6), C-reactive protein (CRP) and fibrinogen in relation to five common persistent pathogens: cytomegalovirus, herpes simplex virus-1, Hepatitis A virus, Helicobacter pylori and Chlamydia pneumoniae. Vegetable oil is an important commodity; however, the majority of commercially available vegetable oils have a fairly short shelf life, which limits their usefulness for long term food storage, disaster relief, space travel, food aid programs, and military rations. Vegetable oils with high oleic acid and reduced linolenic acid contents, especially with added antioxidant combinations, were previously found to have significantly longer oil stability index (OSI) values than traditional vegetable oils. After majoring in finance in college she worked as a bookkeeper, first at a bank, and then as the bookkeeper for her local school district, eventually becoming the bookkeeper for the child nutrition programs, where she rose through the ranks, becoming a coordinator, an assistant to the director, and finally the school nutrition director, where she currently supervises eighteen schools.

After earning bachelors and master’s degrees at the University of Southern Mississippi, Judy Mumphrey taught home economics for eleven and a half years, before moving into school food service. She started out as the School Foodservice Administrator at Pass Christian before moving to Bay-Waveland Schools, where she finished her career. Her biggest challenge over that career was dealing with the aftermath of Hurricane Katrina.

We investigated cross-sectional associations of neighborhood deprivation, problems, safety, and cohesion with circulating levels of fibrinogen, interleukin-6, and C-reactive protein (n=5370) and longitudinal associations with changes in IL-6 over a 3–4 year period (n=946). In cross-sectional analyses, higher levels of neighborhood deprivation and problems were associated with higher levels of all three inflammatory markers, whereas higher levels of safety were associated with lower levels. Fibrinogen remained associated with all neighborhood characteristics except cohesion and IL-6 remained associated with safety after adjustment for race and SES. In the Central Plateau of Burkina Faso, grain sorghum [Sorghum bicolor (L.) Moench] is the major cereal crop used to produce the traditional beer called dolo. Grain sorghum grain samples collected in 2004 and 2005 from experiments combining five water management techniques and four fertilizer treatments in a randomized complete block design with a split plot arrangement of treatments were analyzed for the physicochemical properties of raw grain, and quality of malted grain. The use of fish processing waste from an oily fish model (mackerel, Scomber
scombrus) and a white fish model (blue whiting, Micromesistius poutassou) as a source of functional and bioactive compounds was investigated.
Gelatines were extracted from fish heads and skins using pre-treatment with
different organic acids (acetic, citric, lactic, tartaric and malic acids). Gelatines from fish bones were extracted after pre-treating the bones either chemically or enzymatically. The type of pre-treatment affected the yield, colour, turbidity, amino acid profiles as well as functional properties of fish gelatines. Pistachios (Pistacia vera) are popular snacks and consumption of pistachios is notably increasing due to their usage as ingredients for confections, ice cream, and baked goods. The increased consumption of pistachios may lead to a higher frequency of allergic sensitization and an increased prevalence of allergic reactions to pistachios. Trace amounts of undeclared pistachio allergens can pose serious health risks for food-allergic consumers, including severe anaphylactic reactions. Salmonella is one of the leading causes of foodborne illness worldwide, and it is estimated that 1.4 million infections occur annually in the U.S. alone. The Premi®Test Salmonella (PTS), is a potential tool for rapid detection and identification of Salmonella serovars. The objective of this project was to evaluate the use of the PTS system as a serotyping tool to identify pork and poultry isolates obtained from vertically integrated operations and to characterize their antibiotic resistance.
