Beta-adrenergic agonists (βAA), Ractopamine HCl (RH) and Zilpaterol HCl (ZH), are FDAapproved supplements utilized in pigs and cattle to improve growth performance, carcass weight, and longissimus muscle area (Arp et al., 2014; Lean et al., 2014). Previous studies within our group have focused on understanding molecular changes in skeletal muscle due to βAA supplementation. This work has shown that βAA supplementation increases glucose oxidation in muscle from thermoneutral and heat-stressed lambs (Barnes et al., 2019) and in rat skeletal muscle stimulated with ZH (Cadaret et al., 2017). Growth and feed efficiency of cattle are improved by supplementation with the beta-adrenergic agonists (βAA), ractopamine hydrochloride (RH; β1AA) or zilpaterol hydrochloride (ZH; β2AA) (Elam et al., 2009). βAA supplementation alters adipose deposition by inhibiting fatty acid biosynthesis and promoting lipolysis of stored triacylglycerols into free fatty acids (FFAs) (Johnson et al., 2014). However, β2 adrenoceptors (βAR) desensitize with chronic activation (Re et al., 1997); supplementation is thus limited to the last 20 to 40 d of feeding.

• Inflammation caused by bovine respiratory disease (BRD) continues to be one of the greatest challenges facing beef cattle producers and feedlot managers.

• BRD results in decreased intake, daily gain, and feed efficiency in feedlot calves, decreasing growth rate and increasing required days on feed.

• Morbidity caused by BRD has been associated with decreased hot carcass weight and poor carcass characteristics.

• Acute phase protein production in the liver, initiated by proinflammatory cytokines, may shift the priority for amino acid and energy use by the host animal during periods of sickness.

The majority of microbiome studies focused on understanding mechanistic relationships between the host and the microbiota have used mice and other rodents as the model of choice. However, the domestic pig is a relevant model that is currently underutilized for human microbiome investigations. In this study, we performed a direct comparison of the engraftment of fecal bacterial communities from human donors between human microbiotaassociated (HMA) piglet and mouse models under identical dietary conditions. Heart valve disease is a common manifestation of cardiovascular disease and is a significant cause of cardiovascular morbidity and mortality worldwide. The pulmonary valve (PV) is of primary concern because of its involvement in common congenital heart defects, and the PV is usually the site for prosthetic replacement following a Ross operation. Two separate studies were conducted to evaluate the potential interaction of fat sources and vitamin E (VE) on heavy slaughter weights. In Study 1, a total of 64 individually-fed pigs (28.41 ± 0.83 kg) were randomly assigned to 8 dietary treatments in a 4×2 factorial arrangement. Fat treatments included cornstarch (CS), tallow (TW), corn oil (CO), and coconut-oil (CN). VE treatments were dietary alpha-tocopheryl-acetate (ATA) at 11 and 200 ppm. The possibility that the economics of the oyster fishery impose a self-limitation on overharvesting has been proffered on occasion. The inefficiency of harvesting by the fishery has been evaluated and estimates of the exploitation rate permissible under conditions of maximum sustainable yield have been obtained in previous studies. The question becomes to what extent does the inefficiency of harvest interact with the economics of the fishery to compromise ready detection of overfishing? Multiparous dams were assigned to be bred by artificial insemination or natural service to bulls with terminal traits. Additionally, the cow- calf pairs grazed upland range or sub- irrigated meadow from June 1 to weaning in November. Two weeks aft er weaning, calves entered the feedlot as calffeds. Natural service range calves had the lightest weaning weights, final live weights, and hot carcass weights. Additional days on feed may be required for natural service range calves to reach similar body weights and carcass characteristics as other treatments. A growing study evaluated three corn silage hybrids on growing steer performance. Th e three hybrids were: a conventional hybrid- Farm Choice (CON) commonly grown in Eastern Nebraska which served as the control, Masters Choice hybrids MCT6365 RIB (MC1) selected to improve fi ber and starch digestion and MCT6733 GT3000 (MC2) that has been selected to improve fi ber digestion in cattle. Relative to CON, feeding hybrid MC1 resulted in similar DMI, but numerically increased ADG which significantly improved F:G compared to CON. A modeling study evaluated the effects of milk production level on nutrient balance in May- calving cows grazing Sandhills upland range during the breeding season. Forage quality of upland range peaks in June and steadily declines in July until November. With timing of forage quality decline and increasing nutrient demands due to lactation, cows were in a negative energy balance in late June and early July prior to deficiency of metabolizable protein. A growing study was conducted to evaluate the effect of supplementing NexPro, a high- protein dried distillers grains plus solubles (DDGS) from the FluidQuip MSC post- fermentation separation process, in a corn- silage based diet and to determine the rumen undegradable protein (RUP) content of NexPro. Three test proteins (NexPro, SoyPass, and soybean meal) and 4 inclusion levels (4.5, 9, 13.5, and 18%) were evaluated against a common control (0% test protein). A 4 yr. study was conducted to evaluate forage yield and grazing potential of double cropped annual forages following corn silage or high- moisture corn harvest. An irrigated field in a corn- soybean rotation was split in half and harvested as either corn silage or high- moisture corn, and crops were sampled to determine any effects on subsequent yield due to cover and grazing. Over the four years, steers grazing oats aft er corn silage harvest gained an average of 2.35 lb/d, while those grazing corn residue and oats aft er high- moisture corn harvest averaged 1.28 lb/d. A finishing study was conducted to evaluate the effect of feeding dried distillers grains plus solubles (DDGS) from the MSC- fi ber stream of the FluidQuip post- fermentation fiber separation process compared to conventional DDGS at two inclusion levels (20% and 40% of diet dry matter). Inclusion of DDGS from MSC or conventional processing methods resulted in increased dry matter intake and daily gain. Despite increased gain, feed conversion tended to be worse for MSC DDGS. The objective of this study was to determine the impacts of myoglobin oxygenation level and frozen storage duration on frozen beef color. Strip loins were wet- aged for 4 or 20 days and were fabricated into steaks that were assigned a myoglobin oxygenation level (highly oxygenated, lowly oxygenated, or deoxymyoglobin) and packaging film (impermeable or permeable). Steaks were then frozen for 0, 2, 4, or 6 months of storage and analyzed for various beef color measurements. Th e two hybrids included a conventional commercial corn and Syngenta’s Enogen Feed Corn which contains an alpha amylase enzyme trait. Condensed algal residue solubles (CARS) were evaluated in finishing cattle diets. Six treatments were evaluated (2 × 3 factorial arrangement), CARS inclusion in the diet at 0, 5, or 10% of diet dry matter with 0 or 20% wet distillers grains. Th e remainder of the diets consisted of 57.5– 87.5% dry rolled corn, 7.5% sorghum silage and 5% supplement. Increasing wet distillers grains in the diet had no effect on dry matter and organic matter intake but decreased dry matter and organic matter digestibility. Rapid prediction of beef quality remains a challenge for meat processors. This study evaluated the potential of Raman spectroscopy followed by chemometrics for prediction of Warner-Bratzler shear force (WBSF), intramuscular fat (IMF), ultimate pH, drip-loss and cook-loss. PLS regression models were developed based on spectra recorded on frozen-thawed day 2 longissimus thoracis et lumborum muscle and validated using test sets randomly selected 3 times. In experiment 1, 80 steers (197.0 kg initial body weight; BW for fall, 116.9 kg for spring), were stocked at 2.45 and 4.1 calves/ha in fall and spring, respectively in 16 tall fescue pastures [fall ergovaline (EV) = 1,475 ppb and spring EV = 1,173 ppb] under 2 treatments, mineral (MIN) (n = 8) and cumulative management (CM) (n = 8). Forage allowance did not differ (P = 0.76) between CM and MIN during fall but differed during spring (P ≤ 0.05, 2.55 vs. 3.22 kg DM/kg BW, for MIN and CM, respectively). Internal parasites represent a significant obstacle to a profitable and sustainable US goat industry. In some states, internal parasites are a year-round problem, while in others, they are a more seasonal challenge. Traditionally, parasite control methods relied heavily on antiparasitic drugs called anthelmintics or dewormers. Continued use and misuse of these drugs have resulted in increasingly resistant worm populations, necessitating more holistic or integrated methods of parasite control. One lawful method to dispose of animal carcasses is composting. Mortality composting is a “green” method that provides the producer with valuable soil amendments. Composting sites should be away from water sources and public areas. Some states require a facility and/or permit for carcass composting so producers should contact their State Veterinarian. Animal composting generates little to no odor and generates temperatures high enough to kill pathogens. Mortality composting is an aerobic process and requires a proper C:N ratio achieved by using a high carbon source to envelop the carcass, moisture content of roughly 50%, and available oxygen. Effects Of Poor Sanitation Procedures On Cross-Contamination Of Animal Species In Ground Meat Products, Sunjung Chung, Rosalee S. Hellberg

The presence of <1% of an undeclared species in ground meat is generally thought to be indicative of cross-contamination as opposed to intentional mislabeling; however, this has not been experimentally tested. The objective of this study was to quantify the effects of poor sanitation on the cross-contamination of animal species in ground meat products, with the example of undeclared pork in ground beef. Cross-contamination was quantified using real-time polymerase chain reaction (PCR). Three different sanitation treatments were tested with a commercial grinder (“no cleaning”, “partial cleaning”, or “complete cleaning”) in between grinding of pork and beef samples (13.6 kg each). A 100-g sample was collected for each 0.91 kg (2 lb) of beef processed with the grinder and each sanitation treatment was tested twice. For the “no cleaning” treatment, the first 100-g sample of ground beef run through the grinder contained 24.42 ± 10.41% pork, while subsequent samples (n = 14) contained <0.2% pork. With “partial cleaning,” the first sample of ground beef contained 4.60 ± 0.3% pork and subsequent samples contained <0.2% pork. Pork was not detected in ground beef following “complete cleaning.” These results indicate that incomplete cleaning of grinding equipment leads to species cross-contamination at levels of <1% in most cases. Proper sanitation procedures must be followed when grinding multiple species in order to prevent cross-contamination and product mislabeling.

Many elasmobranch (shark and ray) species are considered threatened and their identification in processed products is important for conservation and authentication purposes. However, identification of elasmobranch species in shark cartilage pills has proven difficult using existing methodologies. The objective of this study was to develop a DNA mini-barcoding protocol using a ~130 bp region of the cytochrome c oxidase subunit I (COI) gene for species identification in shark cartilage pills.
