In two experiments, dark-cutting (DC) beef strip loins were used to test the effects of citric acid-enhancement pH on visual and instrumental color of fresh and cooked steaks. Dark cutting and normal pH strip loin were injected to 111% of raw product weight with pH 3.5, 4.0, 4.5, or 5.0 solutions by mixing citric acid in either 0.05% phosphate solution or tap water (Exp 1), or with pH 2.0, 2.5, 3.0, and 3.5 solutions made by mixing citric acid in either a 0.5% orthophosphate solution (PO4) or a 0.5% tripolyphosphate solution (STP) (Exp2). Barrows and gilts (215/gender) were used to test the effects of synthetic AA supplementation of reduced CP diets on the growth performance and quality characteristics of the LM and the fatty acid composition of the LM and s.c. jowl fat from growing-finishing swine. An increase in the consumption of poultry has generated an increase in demand for higher yielding broilers. This has led to an increase in atypical meat and issues with appearance. Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. The general objectives of this research were to evaluate the interaction effects of sixteen different antimicrobial treatments throughout seven days of display on physical, chemical and sensory characteristics of ground beef patties, when compared to an un-treated control. Antimicrobial treatments included: fumaric acid, malic acid, octanoic acid, decanoic acid, sodium propionate, propionic acid solution, potassium lactate/diacetate blend, sodium benzoate, hexanoic acid, pyruvic acid, levulinic acid, lactic acid/ citric acid blend, sodium diacetate, lemon juice and acetic acid. Two experiments were conducted to compare the color and cooked attributes of steaks and ground beef produced from mature bulls. Beef from mature bulls was used to test the effects of lactic acid (LA) enhancement solution pH (2.5, 3.0, or 3.5; B25, B30, B35, respectively) on fresh (5 d of display) and cooked color and tenderness of strip loin steaks (Exp. 1) and the effect of high pH trim on precooked ground beef patties (Exp. 2). Forty-eight Gelbvieh x Angus steers (265 ¡À 40 kg) were utilized to determine the relationships among molecular breeding values (MBV), steer performance, and carcass traits. Body weight (BW), hip height (HH), hip width (HW), exit velocity (EV; rate at which steers exited the squeeze chute and traversed 1.8 m) and body ultrasound measurements of steers were recorded at d 0, 93 and 154 of grazing mixed stockpiled endophyte-infected and -free tall fescue. Lactate dehydrogenase (LDH) catalyzes the conversion of the pyruvate to lactate (forward) or lactate to pyruvate (reverse) in the last step of glycolysis. Objectives were to document the effects of LDH haplotypes and its SNPs, found in the promoter and coding sequence site, and body condition on beef cow production. Four single nucleotide polymorphisms (SNP) of LDH-B and Five single nucleotide polymorphisms of LDH-A were detected.
