Small Meat Processor Needs Are Similar Across Region, Jordan C. Wicks, Alexis Wivell, Thomas Archibald, David Gerrard

This needs-based assessment provides insight into the challenges of small meat processors in two regions of the US. On-line surveys were provided to processors and despite regional differences, data show approximately 70% of processors in each state find retention of skilled labor the greatest challenge in maintaining current levels of operation and impede future growth. These findings suggest educational and certification programing may help improve small processor viability and mitigate local food security concerns. Given the disparity in animal production and livestock availability between these diverse states but similarity in responses, we posit this information is translatable across the US.

The purpose of this study was to investigate different environments of retail cases and LED lighting temperatures to observe how these conditions affect oxidation of previously frozen ground beef patties. Coarse ground beef (85% lean) was purchased from a commercial beef processor, fine ground through a 10 mm grinder plate, and then formed into 1/3-pound patties with an automatic patty forming machine. This study was developed to assess whether microencapsulation of amino acids (AA) improves their absorption to increase broiler growth performance and reduce nitrogen excretion compared to standard feed-grade AA. Five hundred and sixty Ross 708 male broilers were randomly distributed to 70 battery cages and reared for 21 days. Reported data is grouped into periods: 0-7 days, 0-14 days, and 0-21 days. A total of 5 treatment diets were fed: an industry-based control and 4 diets with decreased levels of methionine, lysine, and threonine in either encapsulated or free forms, with or without a botanical feed additive. The objective of this study was to explore different type of retail cases and case environments, primarily lighting, to quantify the impact on shelf life. Coarse ground 80:20 beef from a local retail establishment was acquired between 7 and 10 d from the box date and fine ground through a 9.5 mm grinder plate, and then formed into 150.25 g patties with an automatic patty forming machine. USDA “Certified Organic” is a form of production that has received considerable public attention in the last 10 years, particularly among small, beginning and/or minority farmers. Spiking retail prices for red meat and poultry have seemingly accelerated consumer’s interest in organic locally produced products. Consumers demonstrate their desire for these products by paying premiums when purchasing meat products. Producers receive premiums by either directly marketing live animals to consumers that are custom harvested or marketing animals to meat wholesalers. Bacillus spp. are ubiquitous, Gram-positive, spore forming bacteria that are commonly recovered from the environment and gastrointestinal tract (GIT) of poultry. These spores are capable of withstanding harsh condition such as feed pelletization, which facilitates inclusion in poultry feeds. Once ingested by the bird, spores germinate into metabolically active vegetative cells which can produce extracellular enzymes which can hydrolyze otherwise indigestible components of the feed. Soybean meal (SBM) is the gold standard vegetable protein source for non-ruminant animals worldwide and is included in practically all poultry diets in the United States at levels ranging from 10 to more than 30%. …

To secure animal welfare and maximum production, feed additives are often added to nursery pig diets to increase nutrition digestibility, enhance intestinal health, and prevent or mitigate disease, with the ultimate goal of improving growth performance. This thesis performed a longitudinal analysis using next-generation sequencing to investigate the dynamic changes of gut microbiota in weaned pigs fed commercial feed additives. Chapter II was used to evaluate the effects of organic acid mixture on growth performance and gut microbiota of weaning pigs. About one of the only things certain about forecasts this year has been the great deal of uncertainty. Numerous “novel” situations have confronted the industry making it difficult to estimate price magnitudes rather than just price direction. Clustered plant closures, government quarantine restrictions, and increasing at home phone consumption are just a few of the major issues the beef industry has had to tackle in the last six to eight months. Some things have returned to “normal” such as packing plant capacity and food service demand. Others are still in ongoing recovery.

The purpose of this study was to evaluate the efficacy of extended-release eprinomectin against horn flies, face flies, and fecal egg counts of parasitic nematodes in crossbreed replacement beef heifers. Fifty-four heifers were randomly placed into three treatment groups (N=18 heifers/treatment). Group 1 was administered the labeled dosage of extended-release eprinomectin on day 0. Group 2 acted as the negative control. Group 3 received the anthelmintic injection once a quarter of the heifers in the group reached the threshold treatment level for horn flies (N=200 flies/animal; day 41). In experiment 1, 80 steers (197.0 kg initial body weight; BW for fall, 116.9 kg for spring), were stocked at 2.45 and 4.1 calves/ha in fall and spring, respectively in 16 tall fescue pastures [fall ergovaline (EV) = 1,475 ppb and spring EV = 1,173 ppb] under 2 treatments, mineral (MIN) (n = 8) and cumulative management (CM) (n = 8). Forage allowance did not differ (P = 0.76) between CM and MIN during fall but differed during spring (P ≤ 0.05, 2.55 vs. 3.22 kg DM/kg BW, for MIN and CM, respectively). This thesis analyzes the international discourse of greenhouse gas emissions in relation to livestock production. Specific government ministries, research institutes, and multilateral organizations are framing a new strategy to mitigate emissions by using emissions intensity metrics. Emissions intensity is a ratio comparing emissions produced per unit of animal product as oppose to measuring absolute emissions. This research is acknowledged as a win-win scenario which allows for a reduction of greenhouse gas emissions while continuing production more efficiently. Crossbred heifers (n = 286, 255 ± 4.5 kg initial BW, 295 ± 16.5 d of age) were used over a 2-yr period to determine the effects of mineral source on beef heifer development at 2 locations (n = 71 and n = 72, Fayetteville, blocks 1 and 4; n = 72 in each of 2 breeding groups, Batesville, blocks 2 and 3). Heifers were stratified based on initial BW, age, health, prior research projects, and sire, and then assigned to 6 groups of 12 heifers, that were assigned randomly to 1 of 2 trace mineral treatments. Little is understood about how the diversity of genes, specifically the glucocorticoid receptor (GR) and interleukin-8 receptor (CXCR2), are related to reproductive health and how this affects physical traits in cattle. Glucocorticoid receptors have been positively associated with higher milk yields, lactose content, feed intake, and feed conversion rates. Interleukin-8 genes are part of the innate immune response and help with many aspects of female reproductive health, such as protecting the embryo from the maternal immune system during pregnancy. An intricate history of human dispersal and geographic colonization has strongly affected the distribution of human pathogens. The pig tapeworm Taenia solium occurs throughout the world as the causative agent of cysticercosis, one of the most serious neglected tropical diseases. Discrete genetic lineages of T. solium in Asia and Africa/Latin America are geographically disjunct; only in Madagascar are they sympatric. Linguistic, archaeological and genetic evidence has indicated that the people in Madagascar have mixed ancestry from Island Southeast Asia and East Africa. Global beef, pig and chicken production and per capita consumption increased between 2000 and 2010, with growth in broiler production and consumption outpacing both beef and swine. Forty-eight Gelbvieh x Angus steers (265 ¡À 40 kg) were utilized to determine the relationships among molecular breeding values (MBV), steer performance, and carcass traits. Body weight (BW), hip height (HH), hip width (HW), exit velocity (EV; rate at which steers exited the squeeze chute and traversed 1.8 m) and body ultrasound measurements of steers were recorded at d 0, 93 and 154 of grazing mixed stockpiled endophyte-infected and -free tall fescue. Beef calves (n = 88) were purchased from regional auction barns and delivered as a single group. Upon arrival, cattle were assigned to eight pens. Pens were assigned randomly to one of three treatments; two pens received 3 mL of a nasal spray solution (10.8 mg Zn/mL) into each nostril using a single-use nasal atomizer; three pens received 40 mL of an oral drench (16.25 mg Zn/mL), and three pens received no Zn at processing (negative control).
