The goal of this study was to analyze land use in the production of US pork using Life Cycle Assessment (LCA). LCA is a comprehensive methodology for quantitatively analyzing potential environmental impacts associated with complex systems. Identification of processes contributing to high environmental impacts often highlights opportunities for gains in efficiency, which can increase the profitability and sustainability of US pork. The environmental impact category analyzed in this assessment was land use. After reviewing existing information regarding land use in agriculture and livestock production, analysis for US pork production was performed at two scales: cradle-to-grave and cradle-to-farm gate. Cattle behavior, including measures of docility, is important to beef cattle producers not only from a human safety perspective but also due to potential correlations to economically relevant traits. Field data from the American Hereford Association was used to estimate genetic parameters for chute score (CS; n = 25,037), weaning weight (WW; n = 24,908), yearling weight (YW; n = 23,978), and intramuscular fat percentage (IMF; n = 12,566). Single-trait and bivariate animal models were used to estimate heritabilities and genetic correlations. The objective of four experiments conducted was to evaluate production and economic efficiencies of intensified cow-calf production management systems. The first experiment tested the effect of calf age at weaning on cow and calf performance and feed utilization at 2 locations. Body weight change from early to conventional weaning time was greater for early-weaned cows. Cow BCS and conception rates were not impacted by weaning. Calf BW at conventional weaning time was greater for conventionally-weaned calves than early-weaned calves at ARDC, but greater for early-weaned than conventionally-weaned calves at PHREC. Calf ADG per unit of total feed energy intake was …

Spotted fever group (SFG) rickettsial species are obligate intracellular tick-borne pathogens that are responsible for important human diseases. Previous reports have demonstrated the feasibility of using recombinant surface cell antigen Sca5/OmpB to elicit protective immunity against homologous challenges using murine models of Mediterranean spotted fever and Rocky Mountain spotted fever. In addition, the feasibility of generating cross-protective immunity against related rickettsial species has also been established, but the molecular basis for these phenomena was not explored. Here, we demonstrate that vaccination of C3H/HeN mice with a recombinant OmpB domain derived from Rickettsia conorii induced high titer humoral immune responses that …

Trial one was conducted at the United States Meat Animal Research Center (MARC) near clay center, NE during the summer of 2014. The objective of this trial was to measure the effects of supplementing zilpaterol hydrochloride (ZH) for the final 21 days of the finishing period, and shade, on performance, body temperature, respiration rate, and mobility of finishing beef steers. Feeding ZH increased hot carcass weight, dressing percent, longissimus muscle area, and reduce USDA yield grade. Shade did not affect steer performance and did not reduce body temperature. Zilpaterol hydrochloride increased respiration rate when compared to control cattle and had …

Reproductive traits, such as litter size and reproductive longevity, are economically important. However, selection for these traits is difficult due to low heritability, polygenic nature, sex-limited expression, and expression late in life. Marker-assisted selection may provide an alternative to increase genetic progress.
Nebraska Index Line (NIL) has been selected for litter size related traits since 1981. It is one of the main contributing lines to the UNL reproductive longevity resource population (n > 1,500), which was genotyped for 60,000 SNPs, phenotyped for age at puberty (AP), lifetime number of parities (LTNP), litter size traits, and other reproductive traits, and fed …

Dietary Lecithin Supplementation Can Improve The Quality Of The M. Longissimus Thoracis, Darryl N. D'Souza, Bronwyn L. Blake, Ian H. Williams, Bruce P. Mullan, Dave Pethick, Frank R. Dunshea

Forty crossbred (Large White × Landrace × Duroc) female pigs (16.4 kg ± 0.94 kg) were used to investigate the effect of dietary lecithin supplementation on growth performance and pork quality. Pigs were randomly allocated to a commercial diet containing either 0, 3, 15 or 75 g lecithin/kg of feed during the grower and finisher growth phase. Pork from pigs consuming the diets containing 15 g and 75 g lecithin/kg had lower hardness (P < 0.001) and chewiness (P < 0.01) values compared to the controls. Dietary lecithin supplementation at 75 g/kg significantly increased (P < 0.05) the linoleic acid and reduced (P < 0.05) the myristic acid levels of pork compared to the control and the 3 g/kg and 15 g/kg lecithin supplemented treatments. Pigs fed the 75 g/kg lecithin supplemented diet had lower plasma cholesterol (P < 0.05) at slaughter compared to pigs fed the control diet and the 3 g/kg and 15 g/kg lecithin supplemented treatments. These data indicate that dietary lecithin supplementation has the potential to improve the quality attributes of pork from female pigs.

Steers (n = 480; 22% with black hides and 78% with red hides) were used to study the effects of shade and feeding zilpaterol hydrochloride (ZH) on performance, carcass quality, heat stress, mobility, and body temperature (BT). A randomized block design with a 2 × 2 factorial treatment arrangement was used with 4 replicates per treatment. Sixty-two percent of calves are sold within 30 days of weaning (47% at weaning; McBride and Mathews, 2011). In the last decade, marketing of finished animals has shifted to selling on value-based systems. In 2012, nearly three times more cattle were sold in a value-based system compared to a traditional cash method. However, those two marketing methods accounted for nearly equal percentages of cattle sold as recently as 2006 (Mike Kasten, RBCS 2013). Olsen Ranches is a family-owned diversified operation located in western Nebraska near Harrisburg. The Olsens have a commercial and registered cow herd that markets harvest ready animals as well as replacement females and bulls. Custom services include custom individual feed intake data collection with a GrowSafe system, custom feeding, and custom AI work. The farm enterprise crops include wheat, corn, barley, peas, annual forages, and alfalfa on both dry land and irrigated farm ground. Beef cow efficiency is a critically important topic for range cow producers. Feed efficiency, or the ability to convert grazed forages into production, is obviously an important aspect of overall cow efficiency. The late Bob Taylor from CSU made the statement “profitable cattle are usually productive, but productive cattle are not always profitable” (Taylor, 1994). That is an inherently important concept in the efficiency discussion, as it leads us to question the important metrics in determining feed efficiency in the cow.

Many things can cause calves to be weak at birth, but dystocia is the single most common cause of compromised calves. Calves born without assistance experience hypoxia (low arterial blood oxygen), acidosis, and frequently hypothermia. Dystocia calves experience the same changes but to a greater degree. Dystocia has an immediate and prolonged effect on the health and productivity of calves. Perinatal mortality due to weakness and dystocia accounts for about half of all calf deaths through weaning and is not due to infectious disease. Right-heart failure (RHF) due to pulmonary hypertension, more commonly known as brisket disease or high altitude disease, is a complex disease that is becomingly increasing problematic for the cattle industry–regardless of altitude. The disease became known as high altitude disease because until the mid-1960s RHF was only reported at altitudes over 7,000 ft. Today, RHF is still problematic in high altitude cow-calf operations and is occurring with increasing incidence in feedlot cattle. The clinical signs are commonly mistaken for chronic pneumonia, which complicates disease diagnosis and reporting. Moreover, cattle treated for pneumonia have 2 to 3 times greater risk of …

Genomic predictions for commercial cattle can be used to select replacement heifers, design mating strategies, and market calves. Presently, two companies (Igenity and Zoetis) offer genomic tests for commercial cattle. Like expected progeny differences (EPDs) on young bulls, these genomic tests do not perfectly predict genetic merit. However, these tests will be useful for identifying genetically superior and inferior animals for the traits tested. Some tests are useful only for predominantly Black Angus (≥ 75%) cattle, while other tests can be used on all Bos taurus beef breeds and crossbreds. A hallmark of testis differentiation is sex-specific vascularization which occurs as endothelial cells migrate from the adjacent mesonephros into the testis to surround Sertoli-germ cell aggregates and induce seminiferous cord formation. Many in vitro experiments have demonstrated that Vascular Endothelial Growth Factor A (VEGFA) is a critical regulator of this process. Both inhibitors to VEGFA signal transduction and excess VEGFA isoforms in testis organ cultures impaired vascular development and seminiferous cord formation. The objectives of this study were to evaluate heat stress feed intake models for growing swine using a data set assembled from the literature and to develop a series of new equations modeling the influence of the thermal environment and interactions between the thermal environmental and other factors on feed intake. A literature survey was conducted to identify studies assessing intake responses to temperature. The resulting data set comprised 35 studies containing 120 comparisons to thermoneutral intake. The ability of light and dark roasted coffee (1 g/kg) in varying application forms (spent ground [SCG], whole ground [WGC], or lyophilized brew [LBC]) to inhibit lipid and protein oxidation in cooked pork patties stored at −18 °C was monitored over 3 months. Malondialdehyde (MDA) for the negative control (NC) increased from 0.31 to 1.11 mg MDA/kg pork over 3 months, while pork with coffee or rosemary oleoresin had lower values at month 3 (0.054–0.40 mg MDA/kg pork). The NC had the highest values for hexanal, octanal, and nonanal (2.59, 0.10, and 0.13 mg/kg pork, respectively), while light and dark …
