Small Meat Processor Needs Are Similar Across Region, Jordan C. Wicks, Alexis Wivell, Thomas Archibald, David Gerrard

This needs-based assessment provides insight into the challenges of small meat processors in two regions of the US. On-line surveys were provided to processors and despite regional differences, data show approximately 70% of processors in each state find retention of skilled labor the greatest challenge in maintaining current levels of operation and impede future growth. These findings suggest educational and certification programing may help improve small processor viability and mitigate local food security concerns. Given the disparity in animal production and livestock availability between these diverse states but similarity in responses, we posit this information is translatable across the US.

Despite potentially elevated grain prices, strong prices for meat and wool mean that Western Australian sheep farmers can confidently supplementary feed their underweight ewes in summer/autumn.
Analysis in 2019, based on then-current prices, showed it was a profitable investment to feed all ewes to maintain condition during pregnancy, and to feed low condition score single bearing ewes and low and medium condition score twin bearing ewes to gain condition.

As humankind grows in population, so will our need to compete against bacterial populations which spoil foodstuffs before we are able to consume them. This dissertation aims to identify the bacterial communities responsible for meat spoilage, and the mechanisms that govern the behaviors of these organisms. The literature review summarizes the state of knowledge regarding factors that influence meat microbiome composition, and how analytical methods can influence research outcomes. Study 1 aimed to identify the impact of additional ingredients and processing steps on the microbial ecology of processed turkey products. Various serogroups of Shiga toxin-producing Escherichia coli have been epidemiologically associated with foodborne disease episodes in the United States and around the globe, with E. coli O157: H7 as the dominant serogroup of public health concern. Serogroups other than O157 are currently associated with about 60% of Shiga toxin-producing E. coli related foodborne illness episodes. Current study evaluated sensitivity of the O157 and epidemiologically important non-O157 serogroups of the pathogen to elevated hydrostatic pressure and 1% lactic acid. The global poultry industry has been faced with emerging broiler breast meat quality issues known as white striping and woody breast. Two experiments were conducted to evaluate effects of white striping and woody breast hardness on meat quality traits in broiler breast fillets. Birds were processed at 8 wk (Exp.1) and at 6 and 9 wk of age (Exp.2), whereas deboning was carried out at 4 and 2 h postmortem in Exp.1 and 2, respectively. hardly a week passes without some reference to Japan's Livestock Industry Promotion Corperation (L.I.P.C.), and its effect on Australian meat exporters.
This article describes some of the functions of the L.I.P.C., and attempts to provide some insights into the Japanese meat market. The author, Gil George, recently returned from Japan after completing a Master's degree in Economics.
