We extend the existing literature on food taxes targeting obesity. We systematically incorporate the implicit substitution between added sugars and solid fats into a comprehensive food demand system and evaluate the effect of taxes on sugars and fats. The approach conditions how food and obesity taxes affect total calorie intake. The proposed methodology accounts for the ability of consumers to substitute leaner low-fat and low-sugar items for rich food items within the same food group. This substitution is integrated into a calibrated demand system in addition to the substitution among food groups, using recent food intake data and existing demand …

Most rural Nebraskans currently have health insurance. Only nine percent of rural Nebraskans do not have health insurance while the majority of residents have health insurance through job benefits. These responses are nearly identical to 2004 when this question was last asked.

Persons living in the North Central region, persons with lower household incomes, persons who have never married, persons with lower education levels and persons with food service or personal care occupations are the groups most likely to be uninsured.

Commercial fresh vegetable production is one of the most rewarding and risky farming activities. The price and yield variations throughout the production year, the special characteristics of fresh vegetable produce (i.e. perishability), and the changing consumer demands are some of the factors contributing to the increased uncertainty faced by vegetable producers. This BRAE 462 senior project entails a mock feasibility and engineering report on implementing solar power to Cal Poly’s poultry unit. The report is to see whether or not solar power would excel and save electrical costs for one of Cal Poly’s agricultural centers. The report must include research into what type of solar system to be installed, economic costs, and engineering calculations to determine whether or not the system will be feasible. The system must be realistic and able to be built onto the poultry unit with accurate space requirements and up to building codes.

The importance of cultural resource preservation cannot be overstated; however local economies are at least as important. Due to conservative archaeological site protection practices in Region 5 of the United States Forest Service, the economy of Northeastern California is being adversely affected. This study sought to evaluate perceptions of agricultural issues and organizations based on how information is presented visually in websites. Researchers intended the results to be used to help the agricultural industry more effectively communicate information through better website design and increased persuasiveness. The study was conducted through the use of three focus group sessions as mapped out by Krueger (1998a, 1998b, 1998c) and Morgan (1998a, 1998b). The Economics Of Health And Vitamin Consumption, Christiane Schroeter, Sven Anders, Andrea Carlson

We estimate the impact of vitamin supplement intake, lifestyle, health indicators, food culture, and demographics on diet quality outcomes as measured by the Healthy Eating Index–2005 (HEI). Our data consists of U.S. adults who participated in the 2003–2004 National Health and Nutrition Examination Survey. Alternative instrumental variable estimators explicitly address issues of endogeneity and complex sample design. Our empirical analysis demonstrates that diet quality is strongly interrelated with food culture. We suggest that vitamin consumption serves as another marker for healthy eating. This finding emphasizes the need to employ economic modeling when developing public policy to reduce obesity.

Screw cap wine closures provide many benefits in maintenance of wine quality over time, however acceptance of their use by purchasers has varied. This work first investigates how factors like age, gender, income and education affect the decision to purchase screw cap wines and to what extent these factors impact consumer decisions to bring screw cap wine to various social settings. The results of a questionnaire pooling attitudes and behaviors of wine purchasers (n=319) indicate that factors such as age, wine knowledge, income and gender influence a consumer’s decision to purchase screw cap wine. Previous analyses of fat taxes have generally worked within an empirical framework in which it is difficult to determine whether consumers benefit from the policy. This note outlines on simple means to determine whether consumers benefit from a fat tax by comparing the ratio of expenditures on the taxed good to the weight effect of the tax against the individual's willingness to pay for a one-pound weight reduction. Our empirical calculations suggest that an individual would have to be willing to pay about $1500 to reduce weight by one pound for a tax on sugary beverages to be welfare enhancing. …
