Carbon nanotubes (CNTs) has emerged as a promising nanomaterial with a wide range of potential applications due to their unique structural, mechanical, electrical, and thermal properties. However, numerous obstacles must be overcome for CNTs to be used successfully, including low solubility, aggregation, and a lack of specialized functions. Diverse techniques have been developed for the manufacture, purification, and functionalization of CNTs in order to overcome these issues. Pharmaceutical nanosuspensions, also called nanocrystals, are heterogeneous mainly aqueous dispersions of insoluble drug particles stabilised by surfactants and/or polymers. Nanosuspensions as liquid formulations suffer from instability. Solidification of nanosuspensions to solid dosage forms is a way to combine the advantages of nanocrystals with the advantages of the solid state. In this review, advances regarding stabilisation and production of nanosuspensions are briefly covered. Updates on the methods used to convert nanosuspensions to solid oral dosage forms (e.g., powder, granules, pellets, tablets, and films) are presented in depth. Nowadays, food preservation, quality maintenance, and safety are major emerging concerns in the food industry. Methods for removing pathogens from the outside surfaces of food products would be an effective way to prevent bacterial contamination. Nanotopographies found on natural surfaces have been shown to mechanically damage the membranes of foodborne bacteria. Understanding the bacterial profile of chicken during processing is essential to identify spoilage-related bacteria. Using advanced methods like Oxford Nanopore sequencing, specific bacterial species on chicken meat can be identified. This study aimed to characterize bacterial composition and diversity on chicken breast during processing. Results showed a reduction in aerobic bacteria, E. coli, coliform, and lactic acid bacteria counts. However, three thermophilic bacteria, Anoxybacillus contaminants, Neobacillus thermocopriae, and Anoxybacillus flavithermus, dominated across processing steps. Notably, Pseudomonas species were undetected by conventional plating but identified via Nanopore sequencing, highlighting the need for molecular detection methods. Hummus consumption has risen but multiple foodborne outbreaks due to Salmonella contamination have been reported. Essential oils (EOs) eugenol and carvacrol have been found to inhibit the growth and survival of Salmonella in food products. The objective was to evaluate antibacterial properties of various concentrations of eugenol (EU) and carvacrol (CA), alone or in combination (EUCA) against Salmonella in vitro and in hummus. Eugenol demonstrated a MIC of 0.125 mg/mL and an MBC of 0.25 mg/mL, while carvacrol showed a MIC of 0.0625 mg/mL and an MBC of 0.125 mg/mL. In the hummus study, 2% EUCA was the most effective …

Sweet potatoes are a worldwide staple crop and granola bars are popular with consumers. This study aims to create a granola bar utilizing sweet potatoes and to assess its changes over time. Initial formulations tested minimum and maximum concentration of sweet potato (SP) puree, formulations, cooking type and time/temperature, humectants and preservatives. Bars containing 30 and 45% SP butter were chosen. Changes over time and descriptive sensory evaluation were conducted every 14d for 70d, with four treatments: a control bar and a bar with a preservative, each held at 25°C and 47°C. Dry-cured hams may become infested with Tyrophagus putrescentiae (ham mites) during the aging process. Traditionally, methyl bromide (MB) fumigation has been used to control these infestations, but its phase-out due to environmental concerns has prompted the need for alternative methods. This study evaluated the effectiveness of acetic acid-coated ham nets and carboxymethyl cellulose (CMC)-based edible films with propylene glycol (PG) in mitigating mite infestations. Laboratory trials assessed the impact of these treatments on mite orientation, reproduction, infestation rates, and sensory quality. Chickpea (Cicer arietinum L.) is the second most widely grown legume crop after soybean. Here, we measured the macronutrients and performed proteome profiling of eight chickpea cultivars using two complementary protein extraction solvents. The total protein, starch, and soluble sugar contents significantly differ between cultivars, and we quantified 2434 and 1809 proteins, respectively, from urea- and water-based extraction solvents using a data-independent acquisition approach. The proteome-level differences can vary from 9-25% for the urea-extracted proteins, and the storage protein abundances significantly differed between the cultivars, where legumin content was detected as the highest, followed by vicilin and albumin. Polycystic ovarian syndrome (PCOS) is a metabolic endocrine disorder affecting 8–11% of women worldwide, with 70% remaining undiagnosed (WHO, 2023). It presents with symptoms such as irregular menstrual cycles, insulin resistance, high testosterone levels, anxiety, depression, and infertility, significantly impacting quality of life and health (OASH, 2021). The symptoms of PCOS can severely impact women’s quality of life, mental health, and long-term well-being. Fresh produce is traditionally labeled with plastic Price LookUp (PLU) stickers that are environmental contaminants and can easily detach during handling and disrupt traceability. The CO2 laser-labeling technology (LLT), an alternate method of produce labeling, has been gaining attention. However, the performance of this technology varies by produce, and consumer perception and acceptability remain understudied. This study evaluated the efficacy of five commercially available sanitizers to reduce Salmonella (sessile and biofilm forms) count on experimentally inoculated materials representative of harvesting bins and picking bags in the fresh produce industry. Sessile Salmonella cells were grown onto tryptic soy agar to create a bacterial lawn, while multistrain Salmonella biofilms were grown in a Centers for Disease Control and Prevention (CDC) reactor at 22 ± 2 °C for 96 h. Atherosclerosis is the process of cholesterol buildup within arterial cells, which is considered a leading factor that causes certain cardiovascular diseases. Cholesterol accumulation within pro-inflammatory endothelial cells is thought to induce atherogenesis and accelerate atherosclerosis progression. Evidence suggests inhibiting the microRNA miR-33a in arterial cells may promote atheroprotection via increasing ABCA1 protein expression. MiR-33a is processed into two functional strands, miR-33a-5p and miR-33a-3p. The aim was to determine the effect of packaging on the acceptance of natural peanut butter, especially concerning the acceptance of the undesirable oil layer. The jars of peanut butter differed by color, label size, and inclusion of qualifying statements. 119 participants across two groups completed this study. Both groups completed an eye-tracking study in a mock grocery setting. The first group rated all five jars in appearance, expected quality, and overall rating. They were given one sample cup of peanut butter and gave hedonic liking values for color, oiliness, peanut flavor, smoothness, sweetness, and overall liking. The second group …

In this study, both untreated and pre-treated green pea grain samples dried at different microwave output powers (90, 180, and 360 W) were rehydrated at three different temperatures (30ºC, 50ºC, and 70ºC). The rehydration kinetics of dried peas were analyzed using both the Peleg and the first-order kinetic models. Observations revealed that the Peleg model exhibited better agreement with the experimental data. As both microwave power and rehydration temperature increased, the rehydration capacity also increased in both pre-treated and untreated peas. Population control of golden apple snails (GAS, Pomacea canaliculata) is beneficial in rice farming; however, the associated control measures can be expensive and time-consuming. Currently, farmers use synthetic molluscicides such as niclosamide to control GAS infestation, but this has some drawbacks. For example, niclosamide has broad toxicity to non-target organisms and negatively affects the growth of rice seedlings. This study comprehensively evaluates the effects of environmental conditions, transportation, and storage practices on the quality of milled rice using three cultivars: CLL16 (long grain pureline), XP753 (long grain hybrid), and Titan (medium grain pureline). Three distinct objectives guided the research: (1) assessing the impact of relative humidity (RH), temperature, and exposure duration on rice quality post-milling and post-storage; (2) analyzing seasonal and locational influences on rice quality during transportation and storage; and (3) investigating the effects of subfreezing storage on key quality attributes.

Rice blending or mixing of different rice cultivars, a common practice in the industry, significantly impacts processing efficiency and end-product quality, yet its effects on end products remain understudied. This research investigated the implications of blending contemporary Arkansas rice cultivars through two comprehensive studies focusing on milling yields and physicochemical properties, instantization, and parboiling processes. Five long-grain cultivars, including hybrids (RT 7521 FP, RT 7321 FP, XP 753) and purelines (Ozark, CLL 16), were blended in various combinations and different drying.

Soybeans are rich in protein but have limited food applications due to their undesirable volatile compounds, negatively affecting their flavor and consumer acceptance. This study aimed to extract lipids and volatile compounds from soybean flour using supercritical carbon dioxide (SC-CO2) and investigate the impact of extraction conditions on the properties of soybean flour, including particle size distribution, composition, color, and rheological and textural qualities. Similar lipid extraction yields (∼20 %) were obtained with SC-CO2 and conventional hexane extractions. The pet food industry is a growing business launching a variety of new products in the market. The acceptability or preference of pet food samples has traditionally been measured using either one-bowl or two-bowl tests. Academic researchers and professionals in the pet food industry have explored other methods, including the cognitive palatability assessment protocols and the ranking test, to evaluate more than two samples. Post-processing contamination of Listeria monocytogenes has remained a major concern for the safety of ready-to-eat (RTE) meat products that are not reheated before consumption. Mathematical models are rapid and cost-effective tools to predict pathogen behavior, product shelf life, and safety. The objective of this study was to develop and validate a comprehensive model to predict the Listeria growth rate in RTE meat products as a function of temperature, pH, water activity, nitrite, acetic, lactic, and propionic acids. This research investigates the potential of supercritical carbon dioxide (SC-CO2) technology as a green and sustainable approach to improve anthocyanin extraction from purple sweet potatoes (PSP). The study explored different extraction parameters (i.e., temperatures of 35–55 °C, cosolvent concentrations of 10–30 % (w/w), ethanol ratios of 30–70 % (v/v), pressures of 30–40 MPa, extraction times of 120–180 min, and solvent: sample ratios of 25:1–45:1(v/w)), to optimize the total phenolic content (TPC), anthocyanin content (ANC), and antioxidant activity (AA). Efficient anthocyanin extraction from emerging food matrices is essential in food technology and requires a precise, consistent, and clear extraction method. This study aimed to develop a decision-tree tool for selecting the optimal anthocyanin extraction technique. A comprehensive data synthesis covering the years 2018 to 2023 was conducted using leading academic databases, including Web of Science, Scopus, Medline, and SciELO. A combination of systematic and non-systematic approaches was employed to guide the decision-making process. The FIT Game Healthy Eating Program is an interactive, story-board type narrative that has increased fruit and vegetable consumption in elementary school children. While The FIT Game intervention has shown progress in the past, the schools studied had minimal diversity and the intervention was time intensive and costly.

In the quest for healthier and more natural food products, using beneficial lactic acid bacteria to preserve food, known as biopreservation, is becoming increasingly important. This research focused on a strain of beneficial bacteria called Latilactobacillus curvatus and its ability to inhibit fungal growth both in lab settings and in a yogurt system. This has the potential to enhance the safety and quality of dairy products.
We studied a specific strain of this bacteria, named WSU-1, found in dairy. Through detailed analysis, we discovered that this strain could produce substances that may help protect food from harmful microbes. In laboratory …
