Specific Bacteria In Commercial Cheddar Cheese Can Cause Rubbery Texture And Poor Taste, Jordan Bond

Unexpected pH changes often lead to a rubbery texture, off flavor and poor taste in commercially produced Cheddar, negatively affecting the quality of the cheese. Use of fast-acid producing (thermophilic) starter cultures in cheese manufacture is becoming common. 

Our goal was to discover the cause(s) for this pH variation. Knowing what causes pH changes will save Utah cheese manufacturers’ money, allowing them to pass the savings on to consumers and reduce waste. We posit that excessive use of fast acid producing thermophilic bacteria (S. thermophilus) can be the cause for pH variation.

The research aims to assess consumer preferences and attitudes toward CRISPR applications in the food sector and estimate consumer willingness to pay for a food product developed using CRISPR technology to enhance food safety and confer health benefits. Additionally, the research assesses the impact of information provision on perceptions, attitudes and willingness to pay. Multispecies swards have been recognized as more sustainable than traditional ryegrass systems, in addition to providing a range of phytochemicals to the ruminant diet. In this regard, polyphenols may be linked to higher levels of bioactive fatty acids in milk and enhanced nutraceutical properties in dairy products. Although the impact of postharvest melatonin (MLT) application in extending the storage life of horticultural produce has been widely studied, its effect in jackfruit remains unknown. This investigation evaluates the influence of MLT dip application (0, 0.05, 0.1, and 0.2 mM) on browning, softening and oxidative stress in cold-stored jackfruit bulbs over a period of 20d. All MLT treatments reduced browning index and oxidative stress, while activities of browning-related enzymes were comparatively lower in the 0.1 mM MLT treatment. The aim of the work is to create a technology for producing protein-rich compound feed that improves digestion processes and enriches the composition of balanced fish feed. The prospects for enriching a balanced fish diet are achieved by using proteins and enzymes of Aspergillus Oryzae fungi. The fungi produced an enzyme preparation containing protease, α-amylase. The preparation was tested for converting locally produced fish feed with an increased carbohydrate content of up to 77%, respectively, with a reduced protein content of 14.5-16.5%, while creating, for example, a favorable pH value. Background

With the global expansion of aquaculture and the increasing demand for fish meal, identifying appropriate and sustainable alternative protein sources for aquafeeds has become essential. Single-cell protein (SCP), derived from methanotrophic bacteria, presents a promising alternative by converting methane into protein, potentially addressing both the need for alternative protein sources and reducing industrial greenhouse gas emissions. This study aimed to evaluate the effects of different levels of SCP inclusion (0%, 25%, 50%, and 75% fish meal replacement) on the health, gene expression, and gut microbiome of yellowtail kingfish (YTK, Seriola lalandi) following a 35-day growth trial.

Currently no data exists on S-methyl-L-cysteine sulfoxide (SMCSO) levels in Australian-sourced vegetables and limited data exists for glucosinolates. The effect of various cooking methods on the retention of SMCSO and glucosinolates in Australian-sourced vegetables is also limited. This study measured SMCSO and ten glucosinolates in a selection of Australian-sourced Brassica vegetables, both raw and after steaming. We additionally measured SMCSO and glucosinolate levels in broccoli after microwaving, stir-frying and boiling. SMCSO contributed greater dry weight (0.6–1.9 %) than total glucosinolates combined (0.3–1.2 %) in these raw cruciferous vegetables. This study evaluated the ethanol-water modified (50%, v/v) supercritical carbon dioxide (SC-CO2) for the extraction of polyphenols from muscadine grape (Vitis rotundifolia Michgx.) pomace and compared with conventional solvent extractions (ethanol-water and HCl-methanol). The process was optimized with a central composite response surface design consisting of three levels of three independent variables: pressure (20-40 MPa), temperature (40-60 degrees C), and cosolvent concentration (5-15%) to maximize three responses: total phenolic content (TPC), total flavonoid content (TFC), and resveratrol yields. The transmission and infection of enteric viruses can be influenced by co-existing bacteria within the environment and host. However, the viral binding ligands on bacteria and the underlying interaction mechanisms remain unclear. This study characterized the association of norovirus surrogate Tulane virus (TuV) and murine norovirus (MNV) as well as the human enteric virus Aichi virus (AiV) with six bacteria strains (Pantoea agglomerans, Pantoea ananatis, Bacillus cereus, Enterobacter cloacae, Exiguobacterium sibiricum, Pseudomonas spp.). The goal of this research was to use supercritical carbon dioxide (SC-CO2) drying as a novel approach to generate sorghum protein concentrates with enhanced functional characteristics. Sorghum protein concentrates were extracted from white whole-grain sorghum flour and dried in two ways: freeze-drying and SC-CO2 drying. The dried proteins were characterized for their volatile compound content, in vitro digestibility, and amino acid composition. A more porous structure was observed for the SC-CO2-dried sorghum proteins compared with their freeze-dried counterparts. Wild rice (mannoomin; Zizania palustris) is an aquatic grain that grows in slow-moving rivers and shallow bays throughout northern Minnesota. In Headquarters Bay on Leech Lake, wild rice has served as a cultural staple for Indigenous communities for centuries. However, its population has declined in recent years due to multiple environmental issues. One potential contributor is Eurasian watermilfoil (Myriophyllum spicatum; EWM), an invasive species that forms dense mats capable of outcompeting native aquatic vegetation, including wild rice. The highly perishable nature of Rubus berries, particularly their susceptibility to water loss and earlier senescence, significantly limits their shelf life. In this study, we investigated the mechanistic role of modified atmosphere packaging (MAP) on the physiochemical quality, phenolic metabolism, and antioxidant potential of blackberries and raspberries during cold storage (2 ± 1 °C) for 12 and 10 days, respectively. Modified atmosphere (MA)-packed Rubus berries exhibited higher total phenolics accompanied by higher activities of shikimate dehydrogenase, and phenylalanine ammonia-lyase. The increased interest in black soldier fly larvae (BSFL) oil is driven by its beneficial fatty acid composition, leading to the development of effective extraction methods. This study evaluated the impact of solvent extraction (SE) and enzyme-assisted extraction (EAE) on the yield and quality of BSFL oil. SE using hexane, petroleum ether, isopropanol, and ethanol after 6 hr of extraction resulted in higher yields compared to EAE using alcalase, papain, and trypsin after 24 hr, with the highest yield recorded for petroleum ether (33%), followed by isopropanol (30%). Chilling injury (CI) hinders prolonged cold storage of mangoes (Mangifera indica L.). Hence, the influence of postharvest aqueous ozonation (PAO) (1 mg ozone s− 1) of mature green ‘Kensington Pride’ mangoes for 10, 20 and 30 min preceding storage at 5 °C for 21 and 28 d on modulating CI, cell membrane integrity, ascorbate-glutathione (AsA-GSH) cycle, antioxidant enzymes and fruit quality were investigated. The effects of preharvest methyl jasmonate (MeJA) spray application on the physicochemical quality, metabolism of phenolics, and cell wall components in raspberries were investigated during a 10-day cold storage period. MeJA spray reduced firmness loss, decay incidence, and weight loss, while maintained higher levels of soluble solids content, ascorbic acid, anthocyanins and flavonoids in raspberries. Furthermore, MeJA application resulted in increased total pectin and protopectin levels, as well as lowered water-soluble pectin, and activities of pectin methyl esterase, polygalacturonase and cellulase enzymes. Methyl jasmonate (MeJA) is widely studied for maintaining fruit quality during storage, but its effects on jackfruit remain unexplored. The efficacy of postharvest MeJA dip application (0, 0.25, 0.5, and 1.0 mM) in maintaining postharvest quality of cold stored jackfruit bulbs was evaluated over 20 d cold storage duration at 6 °C and 85–90% relative humidity. Bulbs treated with 1.0 mM MeJA did not exhibit any disease symptoms over the entire cold storage duration. Low-lying deltas worldwide are extremely vulnerable to sea-level rise. As the risks of climate-induced flooding become increasingly clear, the thirst for infrastructure-driven adaptation increases. This highlights a patent need to understand the impacts of engineering adaptation solutions, especially those targeting built structures such as dykes and sluices, on farmers from a bottom-up, farmer-centred perspective. The study addresses this call by examining cases where dyke policies, while successful in some dimensions, have undermined small-scale farmer livelihoods in Ca Mau ― Vietnam’s southernmost rural province.
