This paper utilizes survey responses from local coordinators of LCF, an international micronutrient supplementation humanitarian organization, to provide insight into the challenges and personal rewards of providing nutrition education to parents of malnourished children. LCF is based in Utah and operates in 19 countries throughout the world. LCF recently introduced a series of health lessons geared toward parents of malnourished children. A survey was sent to LCF workers in 12 countries in order to gather feedback about the health lessons. Qualitative survey responses are explored, and potential suggestions for future changes to the health lessons are proposed. Additionally, data gathered …

Toll-like receptors (TLRs) play a crucial role in innate immunity and provide a first line of host defense against invading pathogens. Of the identified human TLRs, TLR10 remains an orphan receptor whose ligands and functions are poorly understood. In the present study, we sought to evaluate the level of TLR10 expression in breastmilk (BM) and explore its potential function in the context of HIV-1 infection. Shirli Self is an Idaho native who has worked in school nutrition both in Idaho and Oregon, in a unique position. The area where she currently works in Oregon is so rural and remote that Oregon pays for her students to finish high school in Idaho after they complete eighth grade in Oregon, because the nearest Idaho high school is much closer than the nearest Oregon high school. She has twenty-one years of school nutrition experience and is a one-woman show, having no employees and being responsible for feeding ninety-three K – 8 students every day.

The chemical profile and antioxidant capacity of Juniperus virginiana, J. excelsa, and J. sabina essential oil (EO) fractions as a function of time was the subject of this study. The hypothesis was that, capturing EO in sequential timeframes during hydrodistillation would generate fractions containing unique compositions and antioxidant capacity. In J. virginiana, the highest limonene (43%) was found in the 0–5 min oil fraction, with safrole (37%) being highest in the 10–20 and 20–40 min fractions, and elemol (34%) being highest in the 160–240 min fraction. Amidst the backdrop of attention to populism in general, it is instructive to understand populism through social movements focused on food and agriculture. Agrarian populism is particularly salient in agrifood movements. Agroecology has been widely identified as a domain of populist claims on environmental and social governance surrounding agricultural–ecological and political–economic systems. As authoritarian populist leaders gain power throughout the world at a time of expanding economic globalization and contingent socioecological crises, contests over populism in agrifood regimes can highlight current dynamics relevant for formative evaluation of alternative political agroecology strategies and of populist environmental governance more broadly. Dramatic growth in herbicide-resistant (HR) weeds in the United States threatens farm profitability and may undercut environmentally beneficial farming practices. When HR weeds move across farm boundaries due to ecological processes or human action, a common pool resource challenge emerges, requiring farmer cooperation to manage such weeds effectively. We investigate the scope for cooperative management using responses to a national survey on HR weed issues to test a recursive model of three preconditions for collective action: (1) concern about HR weeds migrating from nearby lands; (2) communication with neighbors about HR weeds; and (3) belief that cooperation is necessary for …

Two of the most popular beer styles within the craft brewing industry are India Pale Ales (IPA’s) and those with high alcohol by volume (ABV). Production of these styles requires high gravity fermentation and high amounts of bittering hops in order to reach the required values for ABV and International Bitterness units (IBU) respectively. The aim of this study was to determine the impact of high gravity fermentation and high IBU levels on yeast viability and repitching cycles.

To examine the contribution of child, maternal and household factors in stunting, wasting and underweight among children under 5 years in Ethiopia. Design
Quantitative cross-sectional design based on nationally representative data. Setting

Younger (0–24 months; n 4199) and older age groups (25–59 months; n 5497), giving a total of 9696 children. Results
Among the younger age group, 29 % were stunted, 14 % were wasted and 19 % were underweight; and among the older age group, the prevalence of stunting, wasting and underweight was 47, 8 and 28 %, respectively. Being female, …

Objective: The objective of this study is to describe the process for developing and implementing a training of health personnel for the delivery of the Integrated Strategy for Attention to Nutrition (EsIAN), an evidence-based strategy for promoting infant and young child feeding through primary health care in Mexico. Bifidobacterium is a genus of anaerobic bacteria that are commonly found to inhabit the gastrointestinal tract of many members of the animal kingdom. These microorganisms are adapted to obtain their carbon from the breakdown of complex carbohydrates. Marmosets, a mammal whose gut microbiome is inhabited by high levels of Bifidobacteria, consume gum Arabic as a major part of their diet. The purpose of this experiment is to determine whether Bifidobacterium strains isolated from the guts of marmosets are able to degrade and ferment this complex carbohydrate or one of its main constituents, arabinose. In view of the formation of harmful products of Maillard reaction in baked foods, different recipes of steamed cakes (sugar type, oil type, cake acidity regulator and the ratio between egg white and yolk) were selected to analyze the changes of glyoxal (GO), methylglyoxal (MGO) and advanced glycation end products (AGEs) in cakes, and the inhibitory effects of natural flavonoids (geneistein and luteolin) were investigated. In order to explore the effects of pomegranate peel polyphenols (PPPs) on SR-B1 protein expression and cholesterol efflux, in this study, Raw264.7 macrophages derived from foam cells were used as the model to illuminate the effects of PPPs on cholesterol efflux mediated by HDL. Western blot method was used to analyze the expression of scavenger receptor B1 (SR-B1), acyl-coenzyme A1: cholesterol acyltransferase (ACAT1) and cholesteryl ester hydrolase (nCEH). Further, the activity changes of ACAT1 and nCEH were revealed. The results showed that PPPs promoted the HDL-mediated cholesterol efflux and up-regulated the expression of SR-B1 significantly (P<0.05). In addition, the PPPs …

The apparent and functional properties of the mixed gel prepared with the thermal and ultrahigh-pressure were compared by rheological, texture, scanning electron microscopy and other analytical methods. The results showed that the β-glucan typical gels formed by ultra-high pressure and thermally induced at the total concentration of 7% and 8%, respectively, and the properties in water hold capacity, gel hardness, elasticity, chewiness and internality of β-glucan mixed gel formed by ultra-high pressure showed the more superior, in which the hardness of gel formed by ultrahigh pressure was significantly stronger than gel formed by thermal-induced gel (P<0.05), while the oil hold …

In order to explore the effects of salt ions on gel texture properties and moisture characteristic of duck eggs,low field nuclear magnetic resonance (Low-field NMR) was integrated to analyze the changes of the moisture status. Water relaxation time(T2), proton density and relaxation area (A2) were explored by magnetic resonance spectroscopy (MRS), and water distribution was visualized by MRI. In this study, three strains of Clostridium butyrate were isolated from human feces, pit mud and animal intestinal contents. Which were named as Clostridium butyricum NK, SY and RX respectively. The fermentation characteristics of C. butyricum NK, SY and RX and C. tyroburicum ATCC25755 grown in synthetic medium were compared. The results showed that the growth ability of C. butyricum NK and SY were strong. C. tyroburicum had higher butyric acid, but lower lactic acid-production than C. butyricum. Microwave irradiation was used to treat three kinds of luzhou-flavor liquors with different ages and qualities at different temperatures, and the contents of acetic acid and ethyl acetate in the liquor were measured every 20 min. The results showed that microwave irradiation could accelerate the reduction of acetic acid content in liquor, while ethyl acetate content increase with the extension of irradiation time. When the microwave irradiation time was between 20 and 100 min, the increasing trend showed an S-shaped curve. Metal-organic-frameworks is a new type of porous crystal material which is assembled by metal ions and organic ligands. Gd-MOF was prepared by GdCl3·6H2O and H3BTC, and its adsorption performance for phoxim pesticides was inves-tigated. The results showed that Gd-MOF could effectively adsorb phoxim pesticides from water, and the saturated adsorption amount of phoxim was 33.5 mg/g. When Gd-MOF was 40~80 mg, the adsorption rate of phoxim could reached 90%; and in all pH range 3~7, there was a certain adsorption force on the phoxim table. In order to analyze the correlation between characteristic flavor components and sensory flavor of fermented coconut milk. Solid-phase micro extraction (SPME) combined with gas chromatography-mass spectrometry (GC-MS) was employed to analyze the volatile flavor compounds of fermented coconut, natural coconut milk and yogurt, respectively. The sensory properties of flavor were assessed, and the characteristic flavor of the fermented coconut milk was analyzed from the sensory and flavor substances in combination with the omics technology. The effect and mechanism of decolorization were studied with magnesium sulfate and amphoteric 2% polysilicate zinc on the brown granulated syrup under high pH conditions. The factors and levels of response surface analysis were determined on the basis of single factor tests. The effects of the polarities of the simulated liquids were investigated on the migration of four antioxidants BHA, BHT, Irganox1076, and Irgafos168 migrated from polypropylene plastics to six different polar simulating solutions. Results, the solubility of antioxidant with polypropylene plastics was worse, the intermiscibility of antioxidant with simulated liquid was better, and the migration equilibrium distribution coefficient was higher. In order to identify the inferior oat samples, and the samples from different local and imported brands, a nondestructive identification method based on near infrared spectroscopy and chemometrics methods was proposed. Spectra of five different brands of oat samples and inferior samples were obtained. Continuous wavelet transform was used for the baseline elimination. Wavenumber selection based on the standard deviation and relative standard deviation was discussed for improving the accuracy of the method, and 15 informative wavenumbers were obtained. Escherichia coli O26 was isolated and identified form a slaughter plant in order to investigate its contamination of E. coli O26. According to USDA detection method, samples were enriched with immunomagnetic separation (IMS) after selective enrichment, and then isolated and purified with selective chromogenic mRainbow agar. Subsequently, the suspected colonies were screened and chose to test the O antigen by PCR and followed by the serum agglutination test. The reconstituted tobacco paper base with different ratios was determined by X-ray grammage instrument.
