Enhancing The Biopreservative Effect Of Non-Starter Lactic Acid Bacteria Using Soluble Fiber During Cheese Ripening, Rakesh Kaushik, Sanjeev Anand

Cheddar cheese ripening creates favorable conditions for desired microbial changes but also allows survival and outgrowth of spores like Clostridium tyrobutyricum and Bacillus licheniformis, leading to late-blowing defects. In the first phase of the study, NSLAB dynamics were evaluated in the presence of spores, where pilot-scale cheeses (110 L) were produced in four treatments: control, T1 (BL), T2 (CT), and T3 (BL+CT), each inoculated at 2.0 Log10 CFU/mL with spores. Results showed that SLAB declined from 8.0 to 0.2 Log10 CFU/g, while NSLAB increased from 2.0 to 8.5 Log10 CFU/g by the third month and remained stable thereafter. Spore counts …

Fungal proteases catalyse site-specific peptide bond cleavage in complex protein matrices, enabling bioactive peptide (BP) release. Accurate monitoring is vital for optimising hydrolysis efficiency, minimising nonspecific proteolysis, ensuring consistent yields, and preserving peptide biofunctionality. While analytical and computational tools are well-established for non-fungal systems, their adaptation to fungal proteases remains exploratory, with no comprehensive evaluation addressing the unique challenges in this field. This review synthesises current knowledge, identifies methodological gaps, and outlines future directions for developing fungi-specific analytical pipelines and computational frameworks for BP discovery. The goal of this study was to introduce the simultaneous use of hydrophobic-hydrophilic proteins bioinks for 3D food printing. Sorghum protein gel (SPG) at 25 % w/w and soy protein isolate gel (SPIG) at 11 % w/w were loaded into separate extruders. The effects of the first printed layer (SPG or SPIG), printing speed (10, 20 mm/s), and nozzle size (0.52, 0.64, 0.72 mm) on printability were evaluated. The textural properties, rheological characteristics, microstructure, crystallinities, and functional groups of the proteins were analyzed. The nutritional benefits of Extra Virgin Olive Oils (EVOOs) depend on their chemical composition. Currently, there is no simple way to compare the health benefits of different EVOOs based on their fat profiles. Samples from Australia and four Mediterranean countries (N = 423) were analyzed using proton nuclear magnetic resonance spectroscopy to screen for six quality parameters (free acidity, peroxides, K270, K232, Delta K, wax) and to measure fat compositions. These fat compositions were compared against healthy eating guidelines to produce five binary descriptors, which were weighted by evidence to create an accessible Fatty Acid based Nutrition Index (FNI). Coffee shops in the United States typically offer several options of dairy milk and plant-based milk alternatives (PBMA) for espresso-based beverages. Although previous studies have explored consumer preferences for dairy or PBMA in general, none have examined what drives their milk or PBMA choices specifically in the context of coffee shops. This study aimed to identify key decision drivers for the choice of milks in coffee, assess the role of lactose-free preferences, and explore whether offering lactose-free cow milk would increase coffee shop visits. Background
The tomato leafminer, Tuta absoluta (Meyrick) (Lepidoptera: Gelechiidae) is a highly invasive pest that causes significant damages to tomato crops globally. Its resistance to commonly used chemical insecticides has made management increasingly difficult, prompting the need for sustainable, effective alternatives. This study investigated the efficacy of a Lebanese isolate of Beauveria pseudobassiana as a biological control agent against T. absoluta, compared its performance to Bacillus thuringiensis and conventional pesticide mixtures under both controlled, commercial production conditions

Lactation support from health professionals is a crucial social determinant of health. Registered dietitians (RDs) and registered nurses (RNs) can play an important role in supporting breastfeeding, yet most have minimal formal lactation education and training. This study seeks to explore the correlates of professional breastfeeding perceived role, perceived influence, and confidence in providing lactation support among RDs and RNs. Using a cross-sectional design, a convenience sample of 111 credentialed providers completed an online survey assessing their breastfeeding-related training, experiences, knowledge, attitudes, and practices. This study aimed to develop a comprehensive process flow for establishing a small food business, using traditional drinks made from millet, roselle, and corn as a case study. [Objective ] The basic characteristics of L-malic acid and the application of L-malic acid in orange juice were studied.[Method ] The basic characteristic differences of L-malic acid,citric acid,and DL-malic acid were compared in terms of thermal stability,pH stability,and taste quality changes of electronic tongue.Subsequently,the three sour agent were added into orange juice.The effects of L-malic acid on the stability and volatile flavor of orange juice were analyzed based on the differences in centrifugal sedimentation rate,pH,electrical conductivity,particle size,Zeta potential,and volatile components.[Result ] L-Malic acid had good stability in the ranges of 40~121 ℃ and pH 2.0~7.0.L-Malic acid differed markedly from citric …

Conventional grain storage methods have a variety of drawbacks.Electron beam irradiation,as an emerging non-thermal processing technology,has attracted attention due to its high efficiency,environmental friendliness,and minimal impact on grain quality.The author elaborates on the principles of electron beam irradiation and its applications in the food industry,reviews its effects on harmful organisms,physicochemical properties,and sensory quality of grains during storage,and makes an outlook on its future application prospects,with the expectation of promoting the application and popularization of electron beam irradiation in food storage.

[Objective ] This study aims to achieve site-directed immobilization of β-agarase at targeted residues,thereby enhancing its thermal stability and operational performance.[Method ] Computer-aided design was employed to selectively immobilize the mutant β-agarase Aga 50D via sulfhydryl groups introduced at specific cysteine residues,enabling binding to the carrier.[Result ] The immobilization conditions were optimized as follows:reaction duration of 12 h,an enzyme loading level (enzyme-to-carrier mass ratio ) of 1∶50,and a crosslinker-to-carrier mass ratio of 10∶50.The immobilization efficiency ranged from 40% to 75%,with most mutants retaining the relative enzyme activity > 80%.Compared with the wild-type free enzyme,the site-directed immobilized mutant β-agarase Aga 50D exhibited …

[Objective ] To explore the application prospects of Citri Reticulatae Pericarpium in the food industry and efficiently extract the active component hesperidin,while developing an effective purification process to enhance the purity and functional value of the active ingredients.[Method ] Ultrasonic-microwave assisted extraction (U-MAE ) was employed to extract the hesperidin from Citri Reticulatae Pericarpium,followed by a three-stage purification system guided by dissolution characteristics involving alcohol removal by concentration,gradient ethanol washing,and pH adjustment to purify hesperidin.Single factor experiments and response surface methodology were used to optimize the extraction parameters.The antioxidant activity and α-glucosidase inhibitory activity of the final product were also …
