Human zoonotic infection with Campylobacter is a major cause of gastroenteritis in the United States and worldwide. Listeria monocytogenes causes a potentially fatal infection in humans and is often attributed to contaminated food. Genetic typing has demonstrated that Campylobacter infection is often associated with the consumption of contaminated poultry products, with Campylobacter often colonizing the poultry gastrointestinal tract, while listeriosis is commonly associated with the consumption of contaminated ready-to-eat (RTE) foods. In this study, a strain of endospore-forming bacterium (strain NH) that is bactericidal towards the human food pathogens Campylobacter jejuni and Listeria monocytogenes was identified and characterized. Transwell experiments …

Summaries Of Arkansas Cotton Research 2022, Fred Bourland
Arkansas Agricultural Experiment Station Research Series
The current economic environment continues to drive the need to produce record or near-record yields to be profitable. Price volatility in 2022 added another level of difficulty in the quest for being profitable. The cotton market saw significant movement after reaching a $1.5802 per pound high in May 2022, cotton prices corrected and more than halved in value at the October 2022 low, and then consolidated around the 80 cents per pound level in December 2022 (Cotton is Consolidating). Great uncertainties still exist for the upcoming season, most of which are outside of our control. These include, but are not …

Journal of Food and Drug Analysis
The study combined UHPLC-Q-Orbitrap-MS analysis with authentic standards, to create a novel strategy for isomers recognition and putative identification. Through the strategy, anti-Covid-19 Jinhua Qinggan Granule was found to comprise 28 isomers and 45 potential anti-Covid-19 constituents. The detection of three constituents (Danshensu, cryptotanshin, and tanshinone IIA) suggests Danshen as confidential additive. Based on this, 6 constituents are recommended as quality-marker candidates, including chlorogenic acid, acteoside, peimisine, baicalein, licoricesaponin H2, and tanshinone IIA. Obviously, the study can not only help the public to really understand the Granule's formula and chemistry, but also facilitate its Pharmacopoeia collection in future.

Statins induce nitric oxide (NO) bioavailability by activating endothelial nitric oxide synthase via kinase- and calciumdependent pathways in endothelial cells (ECs). However, their effect on the metabolism of L-arginine, the precursor for NO biosynthesis, and regulatory mechanism have not yet been investigated. In this study, we investigated the role of the autophagy–urea cycle-L-arginine pathway in simvastatin-mediated NO bioavailability in ECs. Griess's assay was used to determine the NO bioavailability. Protein expression was assessed using Western blot analysis. Further, immunocytochemistry was performed to observe autophagosome formation, while conventional assay kits were used to quantify the levels of different intermediate substrates of …

Induction of antioxidant proteins and phase 2 detoxifying enzymes that neutralize reactive electrophiles are important mechanisms for protection against carcinogenesis. Normal cells provide multifaceted pathways to tightly control NF-E2- related factor 2 (NRF2)-mediated gene expression in response to an assault by a range of endogenous and exogenous oncogenic molecules. Transient activation of NRF2 by its activators is able to induce ARE-mediated cytoprotective proteins which are essential for protection against various toxic and oxidative damages, and NRF2 activators thereby have efficacy in cancer chemoprevention. Because NRF2 has a cytoprotective function, it can protect normal cells from carcinogens like an angel, but …

Safe Food Through Better Labelling: A Robust Method For The Rapid Determination Of Caprine And Bovine Milk Allergens, Joost L. D. Nelis, Amanda L. Dawson, Utpal Bose, Alisha Anderson, Michelle L. Colgrave, James A. Broadbent
Research outputs 2022 to 2026
Accidental milk cross-contamination is one of the most common causes for costly food recalls. Yet, quantifying trace-levels of allergen is time-consuming and current methods are not adapted for routine analyses making quality control for trace-level allergen content impractical. This perpetuates voluntary “may-contain” statements that are unhelpful for people suffering from food allergies. Here, we developed a rapid LC-MS method enabling milk allergen quantification by comparing all tryptic-peptides of major milk allergens. The bovine-specific αS-2 casein peptide and allergen-epitope NAVPITPTLNR provided excellent performance in sensitivity (LOD 1 mg.kg − 1; LOQ 2 mg.kg − 1) across various dairy products, …

“Money For Food”: A Deeper Look At Food Insecurity And Class Privilege In Higher Education, April Lopez
Theses - ALL
Assumptions around the class privilege of college students are misconstrued. Food insecurity rates among college students (between 20-50%) far outweigh the rate of food insecurity nationally (12%) (Dubick et al., 2016). With the rising cost of tuition, insufficient financial aid, and the growth of first-generation and lower income students entering higher education, an increasing number of college students are struggling to balance paying for tuition and basic needs such as food. This paper looks at how factors such as race, undergraduate year, first-generation status, and employment status impact a student’s likelihood of being food insecure. While most studies focus on …

Rice is typically harvested at high moisture content (MC) levels which necessitates drying to low MC levels for safe storage. However, drying at inappropriate temperatures and durations can lead to deterioration of kernel quality such as fissure formation. Kernels with these fissures are typically associated with reduced head rice yields and significant economic losses. Material state diagrams for rice have been created by the University of Arkansas Rice Processing Program (UARPP) as a tool to aid in predicting the ideal temperatures to use during drying and tempering (a process of holding rice at the drying temperature for some duration). The …

Improper drying, which causes fissuring of rice kernels, may influence the overall seed health. This study evaluated the impacts of various drying conditions on rice fissures, seed germination and vigor. A long – grain rice cultivar with a moisture content (MC) of 15.5% w.b. (wet basis) was used during the experiments. Samples were dried as thin layers at temperatures of 30 ℃, 40 ℃ and 50 ℃ with a constant relative humidity (RH) of 50% and air velocities (AV) of 0.66 m/s and 1.65 m/s. X – ray imaging was used for fissure detection before and after drying the samples …
