Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Consumers consider the surface color of fresh lamb as the indicator of freshness and wholesomeness, which affects their purchase decisions. The redox chemistry of myoglobin (Mb) determines the color of fresh lamb. Artificial raising on milk replacer (a pre-weaning strategy) as well as red clover supplementation are management strategies used in lamb production. High pressure processing (HPP) have the potential to be used as an alternative to commercial thermal processing of honey. Its impact on the antioxidant and antibacterial properties of honey have yet to be understood properly. This study focuses on the effects of HPP on the antioxidant and antibacterial properties of honey. Six different honey samples were subjected to HPP at 400 and 600 MPa for 10 and 15 min. Ophiocordyceps sinensis is a genus of ascomycete fungi that has been widely used as a valuable tonic or medicine. However, due to over-exploitation and the destruction of natural ecosystems, the shortage of wild O. sinensis resources has led to an increase in artificially cultivated O. sinensis. To rapidly and accurately identify the molecular differences between cultivated and wild O. sinensis, this study employs surface-enhanced Raman spectroscopy (SERS) combined with machine learning algorithms to distinguish the two O. sinensis categories. The conversion of raw barley (Hordeum vulgare L.) to malt requires a process of controlled germination, where the grain is submerged in water to raise the moisture content to > 40%. Jackfruit (Artocarpus heterophyllus Lam.), also known as ‘vegetarian’s meat’, is an excellent source of carbohydrates, protein, fiber, vitamins, minerals, and several phytochemicals. It is a climacteric fruit that exhibits an increase in ethylene biosynthesis and respiration rate during fruit ripening. The market value of jackfruit is reduced due to the deterioration of fruit quality during storage and transportation. Raspberries are highly perishable and have a short storage life. To extend its storage life, we evaluated the impact of preharvest melatonin (MEL) application (0, 50, 100, 200 mol L−1), three days before harvest, on the activities of oxidative and antioxidative enzymes and quality attributes in ‘Esperanza’ raspberries up to 10 d cold storage. The 200 mol L−1 MEL-treated raspberries exhibited a significant reduction in disease incidence while maintaining higher marketable fruit and activities of superoxide dismutase, glutathione reductase, dehydroascorbate reductase, monodehydroascorbate reductase, ascorbate peroxidase and catalase as compared to control. Apple fruit can be stored for long periods of time, especially with the use of controlled atmosphere storage, but like many fruits and vegetables are susceptible to water loss. Water loss can result in compromised appearance such as skin shriveling, as well as loss of firmness, and reduced saleable weight, which in turn affect the income of growers and other industry stakeholders. Scope: Edible insect proteins are increasingly introduced as an alternative sustainable food source to address the world's need to feed the growing population. Tropomyosin is the main insect allergen; however, additional potential allergens are not well characterized and the impact of extraction procedures on immunological reactivity is unknown. Methods and results: Proteins from different commercial food products derived from cricket (Acheta domesticus) and black soldier fly (BSF) (Hermetia illucens) are extracted using five different extraction buffers. ackground Gut microbiome metabolites are important modulators of host health and disease. However, the overall metabolic potential of the gut microbiome and interactions with the host organs have been underexplored. Results Using stable isotope resolved metabolomics (SIRM) in mice orally gavaged with 13 C-inulin (a tracer), we first observed dynamic enrichment of 13 C-metabolites in cecum contents in the amino acids and short-chain fatty acid metabolism pathways. 13 C labeled metabolites were subsequently profiled comparatively in plasma, liver, brain, and skeletal muscle collected at 6, 12, and 24 h after the tracer administration. Objective: A study involving 7 experiment stations evaluated the effects of a second iron injection administered before weaning on growth and hematological measures of pigs.

Materials and Methods: Pigs (n = 514) were given an iron injection (100–200 mg) on the first day of life. Piglets were then allotted to pairs of similar-weight, samesex siblings 3 to 5 d before weaning (on d 18–24) with one piglet from each pair receiving a second iron injection. This study aimed to develop rice starch nanoparticles with enhanced heat resistance through a sequential combination of acid hydrolysis, ball milling, and cross-linking modification using sodium trimetaphosphate (STMP), while investigating the effects of these modifications on the physicochemical properties of rice starch. Native rice starch (25.2% amylose) was hydrolyzed using 3.16 M sulfuric acid at 40°C for up to 24 hours. A significant yield reduction occurred within the first 16 hours, followed by a slower decline; therefore, starch hydrolyzed within 16 hours was selected to minimize crystalline structure damage. This thesis contains 5 chapters: an introduction, three study sections, and a conclusion. Chapter 1 highlights the rationale and significance of studying dysphagic drinks through rheology. It introduces new high-protein, plant-based formulations and literature review of hydrocolloid studies for dysphagia management, utilizing both shear and extensional rheology to explore fluid behavior during swallowing. Chapter 2 presents the first study, which developed six high-protein soy-based supplement formulations for dysphagia management with varying caloric densities. Formulations with higher caloric densities than 1.5 kcal/mL showed increased viscosity and visual cohesiveness, making them suitable for extensional flow analysis. During the feedlot receiving period, newly weaned beef cattle face various stressors, including weaning, transportation, vaccination, and exposure to pathogens. Additionally, changes in diet and low dry matter intake contribute to nutrient deficiencies, heightening susceptibility to disease and performance declines. Therefore, we examined the effects of dietary supplementation with a multicomponent blend of prebiotics and probiotics on the health, immune status, metabolism, and performance of newly weaned beef steers during a 35-day receiving period. An average of 0.21 kg spent gin botanicals (SGB) is generated for every 1 L of gin, making it the major by-product of gin distillation. The present circular economy dynamics and increased awareness on resource use presents an opportunity for valorisation of SGB. SGB was optimised for polyphenol extraction using a three-factor Box-Behnken Design in response surface methodology (RSM). This was used to both optimise and study how the extraction variables affected yields and values of polyphenol and antioxidant activity of SGB. Hydrogel scaffolds are an important component to cellular agriculture. There is a need for a sustainable alternative to the commonly used gelatin-sodium-alginate hydrogels. This project explores the pathways by which agriculture affects the environment and determines which foods have the greatest climate, water, and land impacts. Agricultural effects on the environment are extensive, from loss of habitat and declines in regional biodiversity to disruption of global nutrient cycles and climate change. Global food production accounts for 26-34% of annual anthropogenic greenhouse gas emissions, makes up 38-46% of habitable land, and is responsible for 70% of freshwater extraction.
