Excessive plate waste is generated in elementary school cafeterias. Adapting nutrition promotion strategies to target waste reduction and encouraging mindful and sustainable eating (MSE) are possible strategies to encourage students to reduce waste during school lunch. Farm to Tray, Tray to Farm is a 16-week intervention that aims to encourage elementary school students to develop mindful and sustainable eating behaviors. An educational curriculum was delivered to eight 5th-grade students, who served as peer leaders and disseminated messages throughout the school. Suboptimal diets contribute significantly to poor health and chronic diseases, with excessive sodium intake and low consumption of whole grains, fruits, and vegetables being major risk factors. To address this global nutrition burden, various countries have implemented front-of-package labeling (FOPL) systems such as the Nutri-Score, Warning Signs, and Facts Up Front.
This paper aims to analyze the effectiveness of these systems – which vary in development, design, content, and implementation – in both theory and practice. A recent study conducted by PhD candidate Jacob Michels and Agricultural economist John Beghin delves into the question of whether global estimates of food insecure populations need a reevaluation of their methodology to account for increasing sedentarism. This reevaluation is prompted by the increasing prevalence of sedentary lifestyles worldwide, which calls for a redefinition of caloric thresholds indicating the onset of food insecurity. In this short article, we provide a nontechnical summary of their investigation recently published in Michels and Beghin (2024).

This report focuses only on dietary results from the Aztec Ruins and Salmon Ruins coprolites. The parasitological analysis was completed in 2018 and was the focus of several papers that were summarized by Camacho and Reinhard (2020). This did not include DNA analysis. The coprolites from these sites are not appropriate sources of DNA testing.
The main conclusion of the analysis are:
1) Two very distinct plant spectra are represented in Aztec Ruins West (ARW) room 219 and room 225.
2) The three contexts of ARW room 219 show interesting variation in food selection, however these are small samples.

The Nourish to Flourish study aimed to decrease the prevalence of obesity among food insecure children in Jacksonville, FL. Specifically, the program focused on nutrition education and access to healthy foods. The study consisted of a 4-week nutrition education series emphasizing the major determinants of healthy weight known as 5-2-1-0! This includes expanding knowledge of fruit and vegetable intake to achieve a target intake of five servings a day, screen time reduction to no more than two hours a day, achieving a physical activity goal of one hour a day outside of school hours, and limiting sugar sweetened beverage consumption …

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

Previous studies have examined the relationship between dietary fibre intake and mood and bowel function separately, however, no cross-sectional study has yet explored the relationship between all three variables. Muslims do Ramadan fasting for around 12 hours (between dawn and sunset). Apart from changing meal times, Ramadan fasting also has the potential to change sleep duration due to sahoor (before the dawn) activities that must be done. The ideal amount and frequency of vegetables and fruit consumption in the national guideline were illustrated by the three main meals a day. Coffee drinks are sugar-sweetened beverages made from coffee powder, sugar, and water through heating. High consumption of coffee drinks is associated with sugar content, which can increase the risk of obesity. The aim of this study was to determine the differences in coffee drink consumption levels based on individual characteristics and environmental factors among non-health undergraduate students at the University of Indonesia in 2023. Ergogenic supplements can enhance exercise performance. However, many gym members use them without consulting professionals such as nutritionists/dietitians, increasing the risk of adverse effects. This study investigates the consumption of ergogenic supplements and factors associated with them among members of selected fitness centers in Jakarta. This cross-sectional study was conducted on 116 participants from 3 fitness centers in Jakarta. The independent variables studied were Muscle Dysmorphia, Exercise Addiction, self-esteem, body image, age, gender, exercise duration, exercise experience, exercise intensity, and social media exposure. America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Background: Most adolescents have an excessive sodium intake associated with hypertension and cardiovascular disease (CVD). Parents have an important role in controlling adolescents’ nutritional intake, including sodium, through healthy eating. The architectural design of spaces offering food assistance has received little to no attention since food pantries emerged in the 1970s. Non-profit food initiatives are often sited quickly with limited resources, producing inadequate spaces unable to fully support a food insecure community, prioritize the experience of users, and create a sense of belonging. The current spaces limit services to merely food distribution. This research paper aims to assess the challenges associated with human trafficking within the lived experience of refugees, specifically focusing on food security, and the resulting system shaped by existing United States policies and programs. By examining this complex relationship, the study seeks to shed light on the influence of power dynamics on fulfilling basic human needs and to propose more effective strategies for improving food security among marginalized populations.

The Expanded Food and Nutrition Education Program (EFNEP) uses a group 24-hour dietary recall (Gr24HDR) to measure changes in diet quality. Participant perceptions of the tool can guide implementation practices used by EFNEP Extension staff. Focus group (FG) sessions were conducted in five states and transcripts analyzed following a framework analysis approach. According to FG participants, a range of factors, condensed into six themes with potential interactions, influence Gr24HDR including implementation processes and community settings. Findings inform overarching considerations EFNEP staff may take when collecting Gr24HDR data in the field to improve the evaluation process for participants.

Stunting and underweight are public health problems, especially in under-five children. This study aims to explore the dietary determinants of stunting and underweight. Participants were 52 under-five children who visited Posyandu in Pengasinan and Bedahan, Depok. Body weight for age z-score (WAZ) and height for age z-score (HAZ) were measured with standardized measurement tools by trained operators. Questionnaires were administered to determine sociodemographic, maternal, and child health history, sanitation, disease history, and exclusive breastfeeding history. Data on food intake was obtained through the semi-quantitative Food Frequency Questionnaire and 24-hour recall. There was a significant correlation between the mother’s income with …
