Urban agriculture (UA) in the United States (U.S.) is increasingly positioned as a multi-domain strategy for addressing social determinants of health (SDOH), yet evidence is fragmented and often focused on participant outcomes rather than the organizational and environmental conditions that determine whether those benefits can be sustained, expanded, or maintained over time. This dissertation uses an exploratory sequential mixed-methods design to clarify (1) what SDOH outcomes are associated with UA in the peer-reviewed literature, (2) which internal and external factors leaders perceive as driving UA organizational success or failure, and (3) which factors predict comparative organizational functioning across a national …

It draws on a growing body of literature identifying a role for expanded epistemological and subject discipline perspectives. Since the early 2010s, the seaweed aquaculture industry has steadily expanded in the United States, with states like Alaska, Maine, Hawaii, and Connecticut leading the way in the development of this emerging sector. However, information gaps remain concerning certain aspects of the domestic seaweed aquaculture industry. The purpose of this study was to examine the status of the seaweed aquaculture industry along the West Coast of the United States; specifically in the states of California, Oregon, and Washington. A recent study conducted by PhD candidate Jacob Michels and Agricultural economist John Beghin delves into the question of whether global estimates of food insecure populations need a reevaluation of their methodology to account for increasing sedentarism. This reevaluation is prompted by the increasing prevalence of sedentary lifestyles worldwide, which calls for a redefinition of caloric thresholds indicating the onset of food insecurity. In this short article, we provide a nontechnical summary of their investigation recently published in Michels and Beghin (2024).

Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. Moreover, there is an increasing prevalence of overweight and obesity among children and adolescent. Globally, about half of all children under five do not receive essential nutrients, often unnoticed until too late. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. “How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

The objective of this research was to evaluate how perceived stressful conditions (PSC) and perceived non-stressful conditions (PNSC) influence eating and dressing behaviors of Chinese females. Chinese female university students (18–30 years) residing in the United States, completed a validated and reliable 45-itemized Chinese Stress Eating and Dressing Survey (CSEDS). The CSEDS included: (i) effort to control making healthy eating choices and dressing, (ii) foods eaten and dress items selected during PSC, (iii) foods eaten and dress items selected during PNSC, and (iv) demographics. This paper presents the design and commissioning of a solar powered water purification system at the Ryan Epps Home for Children (REHC) in Michaud, Haiti. This system supplies clean drinking water to the 200 children who live and go to school at REHC and also to the community in the form of a micro-business. This micro-business is the mechanism for income generation for sustainable system operation. The purifier uses a three stage filtration system with a disc-type sediment filter, a 0.1 micron ultrafiltration membrane, and an ultraviolet light for disinfection. We used data from the Child Development Supplement (CDS) of the Panel Study of Income Dynamics in 2002 and 2007 to examine the relationship between the specific sport time spent during weekdays or weekends and American children’s body mass index (BMI). Time spent on out-of-school sports was recorded on a randomly selected weekday and a weekend day. Sports were further categorized as formal (organized sports such as sports games or lessons) or casual (any unorganized sports such as sports time in the neighborhood). The marketing of unhealthy food to children is often cited as a cause of the obesity epidemic.¹ However, most studies that examine this issue evaluated the marketing of food through print or television advertising. This project investigates the marketing of food products to children through incentive based programs, specifically General Mill’s Box Tops 4 Education. This study undertakes a preliminary systematic analysis of Box Tops food items to determine their healthfulness.
