Arkansas has the highest food insecurity rate in the U.S., and college students are disproportionately food insecure. Food insecure populations tend to have worse nutrition and face poorer health outcomes, exacerbating the economic disparities they already face. The purpose of this study was to analyze specific food pantry usage trends, healthy diet access barriers, and processed food consumption drivers of Full Circle Food Pantry clients at the University of Arkansas as they related to food insecurity and nutrition disparities, as well as design a targeted project to improve nutation in an underserved client demographic. Carbohydrates are the primary source of energy for the brain and play an important role in processes related to memory performance. The purpose of this study is to examine the impact of a low-carbohydrate diet compared to a high-carbohydrate diet on memory performance in college students aged 18–22 years. For the purposes of this study, a low-carbohydrate diet is defined as a diet providing fewer than 130 grams of carbohydrates per day, while a high-carbohydrate diet provides approximately 325 grams of carbohydrates. America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Stunting and underweight are public health problems, especially in under-five children. This study aims to explore the dietary determinants of stunting and underweight. Participants were 52 under-five children who visited Posyandu in Pengasinan and Bedahan, Depok. Body weight for age z-score (WAZ) and height for age z-score (HAZ) were measured with standardized measurement tools by trained operators. Questionnaires were administered to determine sociodemographic, maternal, and child health history, sanitation, disease history, and exclusive breastfeeding history. Background: The Washington State COVID-19 lockdown and subsequent school closures brought increased dependency on parents to provide nutritious meals and opportunities for physical activity for their children.
Purpose: The aim of this study was to describe the impacts of the Washington State COVID-19 lockdown on the dietary, physical activity, and screen time habits of children ages 5-10-years-old residing in Kittitas County.
Methods: A researcher-developed Qualtrics survey was created and validated via the Index of Item Objective Congruence. The survey was administered to parents via Facebook, using local Kittitas County Facebook groups.

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). Introduction: Nationally, rural residents have high consumption of added sugars, yet the top sources have not been explored. Characterizing added-sugar intake in high sugar-sweetened beverage (SSB) consumers in rural areas is an important step to help inform interventions and policies.
Purpose: The objective of this study was to explore the top food and beverage sources of added sugar and to examine variations by sociodemographic characteristics.

Belmont Elementary School serves many children from low-income households (classified as a Title I school with 82.6% of students receiving free or reduced-price lunch) and, thus, was a perfect setting for the birth of an original nutrition curriculum.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.
Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Nearly 12.3% of American households are food insecure. In Cache County, Utah, specifically, the rates of food insecurity are even higher (15%). Addressing the issue of food insecurity improves physical/mental health outcomes, childhood cognitive/physical development, family environments, and decreases healthcare costs. Evidence-based strategies to improve food security include increasing one’s access to fresh fruits and vegetables and improving self-efficacy. The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). Purpose:The purpose of this pilot intervention study was to provide farmers market (FM) education coupled with FM voucher to assess FM awareness, attendance, and voucher use. Methods:Kindergarten through 3rdgrade students attending a summer school program participated in this three-week FM pilot intervention study. A pre/post intervention questionnaire was distributed to students to assess FM awareness and attendance. In addition, an $8 FM voucher was provided to children for purchases of fruit and vegetables at the local FM. Santa Clara County conducts a Senior Nutrition Program (SNP) in conjunction with the City of San Jose, the Outreach Paratransit Program and local community-based organizations (CBOs) like Sourcewise (Lam, 2015). These programs combined represent a significant investment of public funds, with more than 45% of the SNP program’s funding coming from the county General Fund (Lam, 2015). Such a large financial commitment needs to demonstrate some benefit to the participants, and some positive outcomes from the current program design. Supporting local food has been a goal of dining services for some time now. Buying local means you know exactly where your food is coming from. Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. Introduction: Lifelong dietary habits are shaped during young adulthood; hence, preventing poor food choice practices during this period is vital. Stress and sleep deprivation are two important lifestyle elements that affect eating habits. The purpose of this study was to evaluate stress and sleep deprivation as factors contributing to poor dietary choices of college-aged students. Methodology: During finals week, a survey inquiring about sleep duration, perceived stress, and dietary patterns throughout the semester (typical week vs. finals week), was administered to university students (n=83).
