The Effect Of Low And High-Carbohydrate Diets On Memory Performance In College Students, Samia Baugh, Zoe Zajko, Jamie Analuisa, Ivanna Jacome
The Effect Of Low And High-Carbohydrate Diets On Memory Performance In College Students, Samia Baugh, Zoe Zajko, Jamie Analuisa, Ivanna Jacome
Department of Nutrition Student Projects
Carbohydrates are the primary source of energy for the brain and play an important role in processes related to memory performance. The purpose of this study is to examine the impact of a low-carbohydrate diet compared to a high-carbohydrate diet on memory performance in college students aged 18–22 years. For the purposes of this study, a low-carbohydrate diet is defined as a diet providing fewer than 130 grams of carbohydrates per day, while a high-carbohydrate diet provides approximately 325 grams of carbohydrates. This population is particularly important to study because college students experience high academic demands that require strong memory …

Cardiorespiratory fitness (VO₂max) among university students is worryingly low, with more than 50% of students categorized as unfit (<41.7 mL/kg/min). This study was conducted to determine the effect of calisthenic training on estimated VO₂max values using a quasi-experimental study design on 21 male students of the Faculty of Public Health, University of Indonesia from August to October 2024. Subjects were divided into 2 groups: the intervention group (n=10) and the control group (n=11). The intervention group performed treatment in the form of calisthenics exercise for 40 minutes, and the control group received running exercise treatment for 20 minutes, with both exercises done twice a week for 4 consecutive weeks. Body weight, height, body mass index, estimated VO₂max values, body fat percentage, muscle mass, academic stress levels, sleep quality and macronutrient intake data were measured pre-and-post training and were analyzed using independent and dependent t-tests. The results showed a significant (p<0.05) difference in change on the average estimated VO₂max values between the intervention group (3.5 mL/kg/min) and the control group (11.4 mL/kg/min). It can be concluded that the changes in estimated VO₂max values were likely more effective in the running group compared to the calisthenics group.

Coffee drinks are sugar-sweetened beverages made from coffee powder, sugar, and water through heating. High consumption of coffee drinks is associated with sugar content, which can increase the risk of obesity. The aim of this study was to determine the differences in coffee drink consumption levels based on individual characteristics and environmental factors among non-health undergraduate students at the University of Indonesia in 2023. This quantitative study used a cross-sectional design with a sample of 181 active undergraduate non-health students in 2023. Data were collected in June 2023 through a self-administered questionnaire. The results showed that 52.5% of the respondents …

Ultra-processed food/UPF is a product that undergoes a series of industrial techniques and processes, also has low nutritional value. Overconsumption of UPF can increase the risk of overweight and obesity. The purpose of this study is to determine the differences in the proportion of UPF consumption based on individual characteristics, environmental factors, and lifestyle factors among non-health undergraduate students in Universitas Indonesia in 2023. A cross sectional study design conducted on 149 samples. The data was collected using a self-administered online questionnaire. The data was analyzed using univariate and bivariate (chi-square) analyses. The results showed that 50.3% of the students …
A Qualitative Study Of Food Behaviors In University Of Mississippi Students As They Relate To Nutrition Security, Bethany Selby
A Qualitative Study Of Food Behaviors In University Of Mississippi Students As They Relate To Nutrition Security, Bethany Selby
Honors Theses
Recent literature has demonstrated high rates of food insecurity in college students, with most estimates ranging from 30 to 40 percent. Additionally, the college diet is notoriously lacking in nutrition, and a large majority of college students do not meet the recommendations made by the Dietary Guidelines for Americans. Nutrition security, defined as an individual having consistent access, availability, and affordability of foods that promote wellbeing and prevent disease, addresses both of these issues.
This study, conducted in Spring 2022, used focus groups to examine food behaviors in a sample of majority undergraduate students at the University of Mississippi (n …

Eat Well, Be Well: Basic Needs Initiative's Online Hub For Nutrition Education, Misha Moseley
Capstone Projects and Master's Theses
Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …
