Iron deficiency (ID) affects over 2 billion individuals globally. Children under 5 are at increased risk of ID due to rapid growth and are especially vulnerable to its negative consequences because of iron’s essential role in cognitive development and immune maturation. ID is the leading cause of iron deficiency anemia (IDA), with IDA affecting approximately 40% of children in this age group. Antibiotic (abx) exposure is also prevalent during early life and may disrupt growth and through gut dysbiosis, with increasing use posing additional risk in younger populations. Nutrition literacy refers to having the knowledge and skills needed to obtain, understand, and apply nutrition information to make informed dietary decisions. Arkansas has the highest food insecurity rate in the U.S., and college students are disproportionately food insecure. Food insecure populations tend to have worse nutrition and face poorer health outcomes, exacerbating the economic disparities they already face. Carbohydrates are the primary source of energy for the brain and play an important role in processes related to memory performance. The purpose of this study is to examine the impact of a low-carbohydrate diet compared to a high-carbohydrate diet on memory performance in college students aged 18–22 years. For the purposes of this study, a low-carbohydrate diet is defined as a diet providing fewer than 130 grams of carbohydrates per day, while a high-carbohydrate diet provides approximately 325 grams of carbohydrates. Food insecurity is a growing public health concern consistently associated with elevated rates of nutrition-related chronic disease (NRCD) across the general population. Despite young adulthood being a critical window for dietary pattern formation, this relationship remains minimally explored among college students. This thesis examined associations between food insecurity and NRCD diagnosis, including hypertension, diabetes, hyperlipidemia, and cardiovascular disease, among undergraduate students across the California State University (CSU) system. Cross-sectional data were drawn from the Spring 2021 CSU National College Health Assessment, administered across all 23 campuses. After exclusions, the analytical sample comprised 13,762 students. Objective: Evaluate self-efficacy changes among Extension paraprofessional nutrition educators after receiving an adolescent curriculum (Rev It Up!) training. Methods: Paired t-tests on three adapted scales measured changes at pre- (T1), post- (T2), and 1 yr post-intervention (T3): the Teacher Interpersonal Self-Efficacy Scale (TISS), Nutrition Teaching Self-Efficacy Scale (NTSES), and Self-Efficacy and Nutrition Teaching Methods scale (SNTMS). Results: Six educators completed the TISS and NTSES; 5 completed the SNTMS. The TISS showed significant improvement from T1 to T2 only (p= 0.03); the NTSES showed improvement between T1 and T2 (p= 0.01) and T1 and T3 (0.01); and there were no significant …

The Quality Improvement Team proposed an intervention to increase enrollment in the Food Security Program, a six-month initiative that provides vouchers redeemable for fruits and vegetables. Long-term impacts of this Program include an improved food economy and enhanced patient disease management autonomy. The Impact Of Index Based Livestock Insurance (Ibli) On Child Nutrition In Marsabit County, Kenya, Jackson Kadyampakeni

The study uses six rounds of Index-Based Livestock Insurance (IBLI) panel surveys (2009 – 2015) for Northern Kenya’s Marsabit county to investigate the impact of IBLI on child nutrition and household food security. We employ Ordinary Least Squares (OLS) and Instrumental Variable (IV) regressions to account for potential endogeneity in IBLI uptake. The results indicate that while IBLI uptake significantly improves the intake of key nutrients such as Vitamin A, protein, iron, and fruits and vegetables, it does not translate into significant improvements in child nutrition status, as measured by Mid-Upper Arm Circumference (MUAC) z-scores. Background: The Washington State COVID-19 lockdown and subsequent school closures brought increased dependency on parents to provide nutritious meals and opportunities for physical activity for their children.

Purpose: The aim of this study was to describe the impacts of the Washington State COVID-19 lockdown on the dietary, physical activity, and screen time habits of children ages 5-10-years-old residing in Kittitas County.

Methods: A researcher-developed Qualtrics survey was created and validated via the Index of Item Objective Congruence. The survey was administered to parents via Facebook, using local Kittitas County Facebook groups.
