Leveraging Community Partnerships And Resources To Address Food Insecurity In A Rural County During The Covid-19 Pandemic, Kristen Johnson, Amy Elizer, Karen L. Franck, Soghra Jarvandi

Extension professionals are skilled at connecting with community partners and community members to identify needs and address challenges. This paper outlines how Extension professionals quickly responded to address rising rates of food insecurity in a rural Tennessee County during the COVID-19 pandemic. Through an extensive network of state, regional, and local partners, Extension professionals and partners planned and implemented mobile food distributions through the United States Department of Agriculture’s Farmers to Families program. These Extension-led efforts resulted in sustainable, community-driven initiatives to improve food insecurity. Lessons learned can help Extension professionals respond to emerging needs.

The Quality Improvement Team proposed an intervention to increase enrollment in the Food Security Program, a six-month initiative that provides vouchers redeemable for fruits and vegetables. Long-term impacts of this Program include an improved food economy and enhanced patient disease management autonomy. This project aimed to increase the percentage of eligible adult medicine clinic patients enrolled in the Food Security Program by 25%, or 11 patients per month, based on the mean enrollment for the first four months of the Program (May to August) of nine patients. Belize is a food insecure, developing country. Although Belize has plenty of nutritious food in-country, the exportation of that food to generate income contributed to a distribution issue of that nutritious food. More impoverished areas of Belize do not have access to nutritious food because of the lack of affordability and high export rates. Diets with a lack of food, or lack of balanced, nutritious food can negatively impact growth and cognitive development, especially in children. The Nourish to Flourish study aimed to decrease the prevalence of obesity among food insecure children in Jacksonville, FL. Specifically, the program focused on nutrition education and access to healthy foods. The study consisted of a 4-week nutrition education series emphasizing the major determinants of healthy weight known as 5-2-1-0! This research examines student food insecurity at Bowling Green State University (BGSU) and available resources in Bowling Green, Ohio. Seven classes from BGSU’s main campus were randomly chosen to complete a survey regarding participant background information, details concerning food attainment, food security level, and use of community resources to allow for food acquisition. These classes included undergraduate classes and ranged from 15 to 272 students per class. Less than one quarter of student participants had food insecurity (19%), and food insecurity was significantly associated with financial dependence (P=0.04). The primary goals of the school breakfast program are to reduce food-insecurity among low-income students and to decrease the growing habit of breakfast skipping. Consumption of school breakfast has been associated with improved health and academic performance. The purpose of this review was to investigate these alleged beneficial outcomes and to evaluate the program’s success in promoting accessibility and participation for all students. Results showed that children who ate a school breakfast were more likely to have a healthier BMI and a broader daily nutrient intake. Participation also helped students achieve higher math and reading grades. Their teachers reported improvements …
