Arkansas has the highest food insecurity rate in the U.S., and college students are disproportionately food insecure. Food insecure populations tend to have worse nutrition and face poorer health outcomes, exacerbating the economic disparities they already face. The purpose of this study was to analyze specific food pantry usage trends, healthy diet access barriers, and processed food consumption drivers of Full Circle Food Pantry clients at the University of Arkansas as they related to food insecurity and nutrition disparities, as well as design a targeted project to improve nutation in an underserved client demographic. It advocates for fair access to culturally relevant food, combating food deserts, and promoting food sovereignty. Recognizing intersectionality, it emphasizes collaboration to dismantle systemic barriers. This study aims to understand BIPOC communities' challenges and effective strategies, stressing the importance of collaborative efforts for lasting systemic change. Since the early 2010s, the seaweed aquaculture industry has steadily expanded in the United States, with states like Alaska, Maine, Hawaii, and Connecticut leading the way in the development of this emerging sector. However, information gaps remain concerning certain aspects of the domestic seaweed aquaculture industry. The purpose of this study was to examine the status of the seaweed aquaculture industry along the West Coast of the United States; specifically in the states of California, Oregon, and Washington. The Impact Of Index Based Livestock Insurance (Ibli) On Child Nutrition In Marsabit County, Kenya, Jackson Kadyampakeni

The study uses six rounds of Index-Based Livestock Insurance (IBLI) panel surveys (2009 – 2015) for Northern Kenya’s Marsabit county to investigate the impact of IBLI on child nutrition and household food security. We employ Ordinary Least Squares (OLS) and Instrumental Variable (IV) regressions to account for potential endogeneity in IBLI uptake. The results indicate that while IBLI uptake significantly improves the intake of key nutrients such as Vitamin A, protein, iron, and fruits and vegetables, it does not translate into significant improvements in child nutrition status, as measured by Mid-Upper Arm Circumference (MUAC) z-scores. The international development community is off-track from meeting targets for alleviating global malnutrition. Meanwhile, there is growing consensus across scientific disciplines that fish plays a crucial role in food and nutrition security. However, this ‘fish as food’ perspective has yet to translate into policy and development funding priorities. We argue that the traditional framing of fish as a natural resource emphasizes economic development and biodiversity conservation objectives, whereas situating fish within a food systems perspective can lead to innovative policies and investments that promote nutrition-sensitive and socially equitable capture fisheries and aquaculture. Introduction

Obesity disproportionately affects rural communities, and Appalachia has some of the highest obesity rates in the nation. Successful policy, systems, and environmental (PSE) interventions to reduce obesity must reflect the circumstances of the population. We used a health equity lens to identify barriers and facilitators for healthy food access in Martin County, Kentucky, to design interventions responsive to social, cultural, and historical contexts.

Methods
