Purpose:To determine the incidence of exercise-associated hyponatremia (EAH), the associated biochemical measurements and risk factors for EAH, and whether there is an association between postrace blood sodium concentration ([Na+]) and changes in body mass among participants in the 2009 Western States Endurance Run, a 161-km mountain trail run.
Methods: Change in body mass, postrace [Na+], and blood creatine phosphokinase (CPK) concentration, and selected runner characteristics were evaluated among consenting competitors.

Obesity, diabetes, cardiovascular disease, and poor dietary habits are major healthcare problems in the United States. These issues are especially prevalent in the state of Kentucky and among at-risk populations such as Women, Infants, and Children (WIC) participants. Studies have found that whole grains play a role in weight maintenance, protection against type 2 diabetes, and lowering cholesterol. Interventions aimed at improving WIC participant dietary behavior and intake has been successful as well. Childhood obesity has increased significantly in the past decade. The same factors putting adults at risk for obesity apply to children as well. For children, the family environment may be one of the largest factors. Obesity affects both adults and children of low socioeconomic status. With globalization and Samoa’s entrance into the global economy imported and processed foods, which are high in fat, sugar, and sodium, are increasingly available for consumption. Diet transition, the change in diet from one high in local and traditional foods to one high in imported processed foods, began in Samoa post-World War II, however, the rate of diet change has increased rapidly in the past three decades. The change in diet has led to increased prevalence of obesity, other risk factors, and non-communicable diseases. This article describes a campus-community collaborative, SEED Wayne, which was developed to build sustainable food systems on Wayne State University’s campus and in Detroit neighborhoods. The discussion traces the nature of SEED Wayne’s partnerships and reflects on the program’s past three years of existence, including experiences within the university, practical challenges associated with defining sustainability uniformly across diverse campus and community activities, gaining consistent student involvement, and the mutual benefits of the university-community partnership.

The nutritional status of children is declining as evidenced by the steady rise in childhood obesity rates over the last three decades. Consuming five servings of fruit and vegetables (FV) daily has shown to help with weight maintenance, but children are consuming far less than the recommended servings. This study was designed to test the efficacy of a sensory-focused multi-component school-based program at increasing vegetable intake among fifth-graders. Classroom, family, and community components allowed children to explore thirteen target vegetables with their senses including taste. Folate is important in the prevention of birth defects and in the maintenance of general health. Even after mandatory fortification, many people are still not consuming the RDA of 400 mcg/day. Consuming a diet rich in naturally high-folate foods, as opposed to supplementation, may offer additional health benefits and promote an overall healthy diet.

SNAP is a federally-funded, free community nutrition program administered through the RI Supplemental Nutrition Assistance Program—Education (SNAP-Ed), housed in the URI Department of Nutrition and Food Sciences. SNAP targets low-income older adults throughout Rhode Island, educating about 250 individuals each month. A monthly topic of current interest is addressed using an appropriate newsletter, recipe, and interactive component that are delivered at various senior centers and other venues.

The purpose of this study was to assess the demographics and spending behavior of attendees at San Luis Obispo’s downtown Farmers’ Market. With the current 2011 economic recession in America, this study evaluated its affect on the Farmers’ Market attendee demographics and purchasing motivations. Using a questionnaire distributed to 200 participants at Farmers’ Market, this study concluded that most people are motivated by price when shopping for produce and the majority of Farmers’ Market attendees’ spending behaviors have been affected by the economic recession. This paper investigates the impact that Western development has had on eating habits among women living in the greater Dehradun area of India over the last century. Research was undertaken while working at Bija Vidyapeeth, an organic farm and educational center operated by the Indian-based Non-Governmental Organization, Navdanya. Primary data was collected by interviewing twelve women from four families, spanning three generations and ranging in age from 106 to 20. Two of the four families live in the urban center of Dehradun, while the other two families practice farming outside the city limits. Interviews revealed a generational change in eating …

The purpose of this study was to develop an understanding of how adult participants describe quality of life during or after participation in the Expanded Food and Nutrition Education Program (EFNEP) at sites across the United States. The study analyzed success stories submitted by EFNEP staff and participants from sites in nine states from the years 2004 to 2010. A total of 1,057 success stories were analyzed.
The success stories were descriptions of the participants’ experiences with EFNEP. The stories were analyzed by highlighting words, phrases, and/or sentences, and creating a short one to three word codes that would best …
