In the process of vegetable fermentation, the variety and quantity of microorganisms are complex and changeable. Lactic acid bacteria (LAB), as the main power in the process of vegetable fermentation, participate in the regulation of various metabolic pathways and affect the formation of flavor. In this review, the changes of major flavor metabolites during vegetable fermentation and their internal relationship with the community structure and abundance of LAB were summarized, then the potential mechanism of LAB fermentation to produce flavor substances was discussed. Moreover, the application of LAB in vegetable fermentation was prospected.

Separation membranes have a wide application in the food industry, for instance, in the clarification/fractionation of milk, the concentration/separation of selected components, and wastewater treatment. They provide a large area for bacteria to attach and colonize. When a product comes into contact with a membrane, it initiates bacterial attachment/colonization and eventually forms biofilms. Several cleaning and sanitation protocols are currently utilized in the industry; however, the heavy fouling of the membrane over a prolonged duration affects the overall cleaning efficiency. The in silico enzyme digestion and peptide function annotation of pili nut (Canarium ovatum Engl.) 11S globulin protein sequence revealed the presence of bioactive peptides with antihypertensive and antioxidative activities. Molecular docking simulations showed that the proline-histidine (PH) ligand can better inhibit angiotensin I-converting enzyme (ACE) activity than captopril. This result was verified through biochemical assays. Pili kernel protein was extracted with 0.5 M NaCl buffer using the modified Osborne fractionation method, which yielded 100 mg of protein per gram of defatted pili kernel determined via Bradford assay. Soil nutrient management is of the utmost importance to ensure crop yields are maximized to feed the world’s growing population. Micro and macronutrient deficiencies can be detrimental to plant growth and cause a drastic reduction in yield. Optimization of nutrient management needs extensive research. Nutrients such as nitrogen increase crop yield, even in legumes capable of using a large amount of nitrogen (N) via biological N fixation. Objective: Rapid determination of organochlorine and pyrethroid pesticide residues in tea beverages. Methods: Selecting the non-ionic surfactant PEG-4000 as cloud point extraction, pesticides were extracted with isooctane by ultrasonic back extraction. The upper layer of isoctane solution was analyzed by Gas Chromatography/Mass. The isooctane solution was separated by HP-5 ms UI capillary column and analyzed qualitatively and quantitatively by GC/MS. Results: The eight pesticides showed a good linear relationship between 0.01~2.0 and 0.02~4.0 mg/L, respectively, with the correlation coefficients (R) of over 0.995. The detection limit and quantification limit of this method were 0.003~0.008 mg/L and 0.01~0.02 mg/L, respectively. The …

Methods: A method for determining the residues of 9 kinds of antiviral drugs in animal-derived sports nutrition was established, by using hydrophilic interaction chromatography tandem mass spectrometry. The samples were extracted by 1% acetic acid-acetonitrile and purified by PRiME HLB column. Objective: To determine the key points of pear quality formation and deterioration of different Pyrus pyrifolia pears during cold storage. Methods: Zaoshengxinshui, Hujingli18, Hujingli67 were used as materials, the fruit of three varieties with the same ripeness were stored in cold storage at (1.0±0.5) ℃ and relative humidity of 85%~90% for 60 days, fruit texture, total soluble solids, titratable acid, sugar and acid contents and 10 sensor values were determined every 10 days. The fundamental extraction principle, production process, and instrument of the subcritical fluid (including water) technology in terms of the aquatic products materials were introduced in this review, and the academic progress of SFE technology in extracting and separating nutritional components from the aquatic products within the recent 10 years were summarized, in terms of proteins/peptides, lipids and polysaccharides from aquatic products. The advantages of different processing factors for the extraction of specific components were summarized, and the future development direction of SFE equipment and technology in the deep processing of aquatic products was prospected.

Objective: This paper puts forward one cylinder driving five-row longan core-removing mechanism for the low production efficiency of the pneumatic longan core-removing mechanism. Methods: The mechanism adopts one cylinder driving five rows handspikes in the direction, which transport longan to core-removing hole, after the longan is cut under the triangular blade, and another cylinder drives five handspikes in the vertical direction in order to remove longan core. Objective: Reducing the degradation of anthocyanins in blueberry during drying. Methods: The far infrared drying was applied to the drying of blueberries, and compared with traditional hot air drying to explore the degradation characteristics of major anthocyanins and the changes of PPO enzyme activity and antioxidant capacity of blueberries under different drying methods. Results: High retention of two major anthocyanins (D3G and C3G) in blueberries under far-infrared drying, and the second-order mathematical model could better simulate their degradation process. Objective: In view of the improvement of the national standard method of distillation pretreatment, combined with the advantages of ion chromatography, a rapid determination of sulfite by microextract-ion chromatography in red wine was established. Methods: Sulfur dioxide was released by microextraction device, which was absorbed by sodium hydroxide solution to form sulfite, and then oxidized to sulfate. The samples were then filtered by 0.45 μm filter and determined by ion chromatograph. Objective: To evaluate the uncertainty of the determination of thiocyanate in cheese by inhibition conductance ion chromatography. Methods: The content of thiocyanate in cheese was determined by inhibition conductance ion chromatography and a mathematical model was established. The source of uncertainty introduced in the process of the experiment was described, and the synthetic uncertainty was calculated for each uncertainty component. Results: The determination of thiocyanate was (10.2±0.56) mg/kg, k=2, p=95%. Conclusion: The uncertainty in the measurement process mainly comes from the concentration of thiocyanate in the test solution, followed by sample recovery and repeatability experiments.

Objective: This study aimed to explore the feasibility of low-frequency electric field assisted controlled freezing-point storage (CFPS) technology improving the quality of shrimp. Methods: Low-frequency electric field was applied on the basis of controlled freezing-point storage (LFEF+CFPS) to preserve prawns, and the contents of malondialdehyde and salt soluble protein, as well as the changes of Ca2+-ATPase activity, pH value, shear force, color difference and protein molecular weight of prawns were monitored. Objective: This study aimed to investigate the technological conditions for the preparation of antioxidant hydrolysate of Agaricus blazei Murill and analyze the nutritional components of the hydrolysate. Methods: Papain, cellulase and pectinase were prepared in mpapain∶mcellulase∶mpectinase ratio of 3∶4∶4 to dissolve the fruiting bodies of A. blazei. Response surface test was used to optimize the enzymatic hydrolysis process of A. blazei. Objective: This study aimed to explore the differences in the aroma of watermelon seeds under different thermal processes. Methods: The analysis technics such as Headspace-Solid Phase Micro Extraction-Gas Chromatography-Olfactory-Mass Spectrometry (HS-SPME-GC-O-MS) and Electronic Nose (E-nose) were applied. Results: Thermal processing changed the flavor of watermelon seeds from light fragrance to strong roasted flavor; A total of 18 categories including 115 volatile compounds were detected with the help of HS-SPME-GC-O-MS, among which pyrazines, alcohols and aldehydes accounted for 34.25%, 21.07% and 10.99% of the total volatile compounds, respectively; In addition, 63 volatile compounds were discovered in watermelon seeds after microwave treatment, …

Objective: Building a perfect bioreactor scale-up model provides convenience for enterprise production, and a guidance for reactor manufacturers. Methods: Through the test of 1.5, 5, 20, 200 L scale reactor, the correlation and parameters of the volume dissolved oxygen coefficient kLa and mixing time tm were optimized and explored, the simulation amplification model of bioreactor was established, and the Scaleuper amplification system was built by MATLAB. Objective: A solid phase extraction-gas chromatography/mass spectrometry (GC-MS) method was developed for the simultaneous determination of 24 pesticide residues in coffee peel. Methods: The sample was wetted with water, extracted with acetonitrile, the extract solution is concentrated and then purified with ProElut TPC solid phase extraction column, eluted with acetonitrile and toluene=3∶1, after concentration, the sample was determinated by GC-MS and the peak area was measured by internal standard method. Objective: To improve the availability of cherry seed, cherry seed oil was extracted by the aqueous enzymatic method. Methods: the ratio of mixed enzymes was optimized by mixture design on the basis of single factor experiment. The basic indexes of oil such as fatty acid composition and physical and chemical properties were detected.
