Nanomaterials have been widely used in the detection of heavy metal ions in food due to their large specific surface area, good stability, special structure, easy modification, and good biocompatibility. This review focuses on the research and application status of nanomaterials such as carbon nanotubes, graphene, carbon quantum dots, metal-organic frameworks and nanoenzymes in the detection of heavy metal ions in food. The challenges and application prospects of nanomaterials in the detection of heavy metal ions in food are also discussed.

Chloramphenicol is a widely used bactericide and highly effective antibiotic in aquaculture and livestock breeding. To protect human health, detecting chloramphenicol residues in animal-derived food products has become increasingly important. This review introduces the properties of chloramphenicol, the limit standards, and the hazards of residual chloramphenicol in animal-derived food products. Furthermore, it describes commonly used chloramphenicol detection methods. In addition, the review thoroughly analyzes and summarizes the advantages and disadvantages of different detection methods, outlining methods to improve the efficiency and precision of chloramphenicol detection to ensure the quality and safety of animal-derived food products. Objective: In order to improve the accuracy and operating efficiency of the egg crack detection method based on computer vision. Methods: Used poultry egg simulation impact equipment to obtain cracked eggs, and collected images of cracked eggs and intact eggs from different angles through egg dynamic image acquisition equipment. Then, the YOLO-v5, ResNet and SuffleNet models for cracked egg image recognition were established for the original and the preprocessed egg images, respectively. Objective: This study aimed to developed a novel fluorescent enzyme-linked immunosorbent assay method for the sensitive detection of E. coli O157:H7 in milk samples. Methods: The pyrophosphate-Cu2+ coordination complex was hydrolyzed by alkaline phosphatase, and Cu2+ was released from copper nanoclusters as signal reporting probes. Key factors such as Cu2+ concentration, pyrophosphate concentration, and DNA template concentration and length were optimized. Results: Under the control of the optimized conditions, the method exhibited a good linear relationship (R2=0.980 8) with the target E. coli O157:H7 in the range of 5×104~1×108 CFU/mL. The …

Methods: The salting-out-assisted liquid-liquid extraction pre-treatment method was adopted, and the detection was performed in the mode of negative ion source multiple reaction monitoring (MRM) by triple quadrupole mass spectrometry, and quantitative analysis was performed by matrix external standard method. Allergen control plans are increasingly used by the food industry to prevent allergen cross-contact and validation of these plans involves methods to detect allergen protein residues. A commonly used rapid allergen detection method is lateral flow devices, although research about their validation is lacking. The objective of this research was to investigate lateral flow devices, their specificity and sensitivity to milk proteins and milk-derived ingredients, swabbing conditions, and applications in cleaning validation.
