[Objective] To prepare cellulose nanocrystals from the shells of Camellia oleifera Abel (SCOA–CNCs) for stabilizing camellia oil Pickering emulsions, and to investigate the storage stability and environmental stability of the resulting emulsions. [Methods] Cellulose is extracted from SCOA through bleaching and alkali treatment, and SCOA–CNCs are prepared by sulfuric acid hydrolysis and characterized by scanning electron microscopy (SEM), Fourier transform infrared spectroscopy (FT-IR), and X-ray diffraction (XRD). [Objective] To construct theaflavins (TFs)-bovine serum albumin (BSA ) complex-based Pickering emulsions to enhance the multiple stability of Pickering emulsions.[Methods] TFs at different mass concentrations (0~20 mg/mL ) were used to prepare complexes with BSA, which were then employed to prepare Pickering emulsions with rapeseed oil. The microstructure, particle size, Zeta potential, and rheological properties of the emulsions were characterized. The widespread abuse of traditional antibiotics has led to the emergence and development of antimicrobial peptides due to the resultant bacterial resistance.Antimicrobial peptides demonstrate high efficacy in combating infectious pathogens and possess unique antimicrobial mechanisms and biocompatibility,effectively reducing the bacterial resistance rate.The high structural adaptability endows antimicrobial peptides with multiple biological activities,enabling targeted action against diverse types of pathogens and abnormal cells.Accordingly,antimicrobial peptides exhibit a promising development prospect.Enhanced stability contributes to prolonging the in vivo half-life and improving the bioavailability of antimicrobial peptides,which holds crucial importance for improving the clinical translation value of antimicrobial peptides.The author summarizes the research progress …

Objective: Clarifying the effects of lipid co-passengers on the stability of rapeseed oil emulsions and prepare high-stability nano-emulsions. Methods: The endogenous lipidassociated compounds of rapeseed oil were subjected to column chromatography filtration, followed by various concentration gradient re-addition. High-pressure microfluidization was utilized to prepare nanoemulsions, which were subsequently characterized. The influence of lipid associated compound content on the stability of rapeseed oil emulsions was also investigated. Objective: This study aimed to develop novel soybean protein isolate (SPI)-based emulsifiers. Methods: The structure of SPI was modified by limited enzymolysis combined with glycosylation and the effects of this synergistic modification on the emulsification characteristics of SPI was studied. Results: Among the different components obtained from the SPI hydrolysate (SPIH), the high molecular mass component (F30) exhibited the best emulsifying property. The emulsifying stability of F30-dextran conjugates obtained for 4 h was the best. Objective: This study aimed to improve the stability Wickerhamomyces anomalus aldehyde dehydrogenase in cold storage and gastrointestinal environment, so as to develop products that reduce active aldehydes in gastrointestinal tract. Methods: ALDH was extracted from 6 Wickerhamomyces anomalus strains with the highest activity of aldehyde dehydrogenase (ALDH), and encapsulated by sodium alginate and calcium chloride method. The stability of ALDH by embedding was studied in cold storage and simulated gastrointestinal environment. Fish bone gelatin and fucoidan was used as the wall materials and multilayer fish oil emulsion was prepared by layer by layer self-assembly technology. Multilayer fish oil microcapsules were prepared by spray drying method and the storage stability was studied. According to the changes of Zeta potential, the optimum concentration of wall materials for multilayer emulsion was determined. An orthogonal test was utilized to optimize the ultrasonic-assisted extraction process of polysaccharides from Lilium davidii var waste bulb, and the stability of the polysaccharides was studied. The results showed that the optimum extraction conditions for ultrasonic-assisted extraction process were as followed: the ratio solid to liquid of 1:20 (g/mL), ultrasonic time of 60 min, ultrasonic power 250 W, and ultrasonic temperature 60 ℃. In order to investigate the effect of cross-linked starch on the stability of starchy turbid juice beverage, cross-linked starch which prepared by using different concentrations of cross-linking agent (6%, 8%, 10%, 12%, 14%) were applied to sweet potato juice beverages, and the turbidity, rheological properties, stability, zeta potential and centrifugal precipitation rate of the sweet potato juice beverage were determined.
