[Objective] To investigate the effect of ball milling treatment on the structure,physicochemical properties,and digestibility of high -amylose corn starch (HACS ).[Methods] In this paper,the effect of different ball milling durations on the particle size distribution,microstructure,crystalline structure,short -range ordered structure,thermodynamic properties,and digestibility of HACS were analyzed.[Results] After ball milling treatment,starch granules were disrupted,the surface became rough,and agglomeration occurred,resulting in an increase in particle size.With prolonged milling time,the crystallinity of starch decreased from 21.02% to 0.03%,and the "Maltese cross" pattern gradually weakened and eventually disappeared.The amylose content increased from 71.435% to 79.285%,and the short -range order was enhanced.In terms of thermodynamic properties,the …

[Objective] To investigate the effect of various processing aids on the quality of locust honey dried by microwave -assisted foam drying technology.[Methods] Six processing aids,including egg white powder,soy protein isolate,maltodextrin,β-cyclodextrin,soluble starch,and sodium carboxymethyl cellulose,were selected to study their effects on foaming properties,moisture content,hygroscopicity,color,solubility,and sensory scores of honey.A regression model for honey quality control was established through response surface optimization experiments.[Results] The foam expansion and foam stability of egg white powder were better than those of soy protein isolate.The hygroscopicity of maltodextrin and egg white powder was better than that of other processing aids,and hygroscopicity decreased with increasing aid concentration.When maltodextrin …

[Objective] To improve the color and flavor of enzymatically prepared sardine fish head protein peptide (SFHP ).[Methods] The optimal absorption wavelength of the SFHP solution was determined using a spectrophotometer.The effects of three decolorizing agents,including their dosage,decolorization time,and temperature,on the decolorization efficiency of SFHP were investigated.A plate -and-frame filtration pilot -scale test was conducted to validate the decolorizing and filtration -enhancing effects of the decolorizing agents.Flavor profiles before and after decolorization were analyzed using an electronic nose (E-nose ) and electronic tongue (E-tongue ).[Results] The optimal absorption wavelength of the SFHP solution was 220 nm.The optimal decolorization conditions were determined …

[Objective] To reduce the phosphorus content in Korean pine seed oil and develop an efficient degumming method.[Methods] An ultrasound -assisted method was used,and the degumming process of Korean pine seed oil was optimized through orthogonal experiments.The fatty acid composition,content,and antioxidant capacity of the degummed oil were analyzed.[Results] The optimal degumming conditions for Korean pine seed oil were ultrasonic power of 420 W,degumming temperature of 50 ℃,degumming time of 3.5 h,enzyme dosage of 40 mg/kg,and pH 4.8.Under these conditions,the phosphorus content of the degummed oil was (5.18 ± 0.24) mg/kg,and the proportion of pinolenic acid in total fatty acids was 15.46%.When …

Cereal polyphenols mainly exist in free or bound states,including two major categories:phenolic acids and flavonoids.Their contents are affected by factors including cereal varieties,germination conditions,processing methods,and storage conditions.The extraction methods of cereal polyphenols are mainly acid,alkali,enzymatic hydrolysis,and supercritical fluid extraction methods.This paper reviews factors affecting the cereal polyphenol types,extraction methods,contents,and titers.Additionally,this paper looks forward to their application in aquatic product preservation.

Polysaccharides in edible mushrooms possess biological activities such as immunomodulation,antioxidant effects,anticancer properties,and regulation of intestinal microbiota.Deep eutectic solvent (DES ) extraction has gained attention as a novel method for polysaccharide extraction.This article outlines the composition,synthesis methods,and important properties of DES,summarizes and discusses research on polysaccharide extraction from edible mushrooms using DES in China and abroad,and further explores the limitations of the DES extraction method.

Corn silk,the dried style and stigma of corn,is a traditional Chinese herbal medicine and functional food ingredient.Polysaccharides,one of the main bioactive components of corn silk,exhibit hypoglycemic,hypolipidemic,antibacterial,and anti -inflammatory effects.This article reviews the extraction methods and biological activities of corn silk polysaccharides,summarizing the process parameters,advantages,and disadvantages of different extraction methods,as well as the biological activities and mechanisms of action of corn silk polysaccharides,which are current research hotspots.

Owing to the low allergenicity and high digestibility,rice bread has become an important alternative product to traditional wheat bread.However,the molecular characteristics of rice make it challenging for rice to form a continuous viscoelastic network akin to gluten.Consequently,the gas retention efficiency of rice dough is substantially diminished,resulting in quality degradation problems in rice bread,such as inadequate flavor,textural hardening,crumbling,and easy staling.To this end,both domestic and international scholars have examined the variations in the moisture content,texture,color,and flavor of rice bread.Meanwhile,various strategies for quality enhancement are summarized,including the selection and pretreatment of raw materials,exogenous improvement,sourdough fermentation technology,frozen dough techniques,and innovative baking technology.Finally,an experimental reference …

Liver injury is caused by one or more factors acting on the liver,damaging liver cells and resulting in pathological changes in the liver,as well as elevated serum transaminases.In severe cases,it may lead to liver failure and hepatic encephalopathy.Inulin is a common dietary fiber with various biological activities,including anti -inflammatory,antioxidant,anti -cancer properties,and the regulation of gut microbiota.These biological activities are closely related to the protection of liver health.This article reviews the protective effects of inulin against various types of liver injury,summarizes the mechanisms underlying its protective effects on the liver,and looks forward to future research directions.

This paper theorizes the contrast between dark tourism and what is referred to as ‘partial religiosity’ in the context of travel to selected tourist destinations on Camiguin Island, Philippines. Also called ‘thanatourism’, dark tourism is about visiting places that challenge the value derived from the association with death either from tragedies of naturally occurring catastrophes (such as earthquakes, volcanic eruptions, or typhoons) or disasters produced by humans (such as genocides and violations of human rights). This case study examines the development and implementation of a self-guided, museum style site visit project for built environment students, created in response to the logistical and pedagogical limitations exacerbated by the Covid-19 pandemic. Drawing on principles of Universal Design for Learning (UDL), the project Museum of the City integrates narrative-based microlectures, multimodal media, and optional reflective activities to support student engagement and accessibility. This honors project examines the factors which led to the emergence of the Seattle chapter of the Black Panther Party (BPP) in 1968, with a focus on one of the BPP’s signature issues — police reform. Negative perceptions of the Seattle PD, especially among the city’s rapidly growing population of Black residents, led Mayor Allan Pomeroy to form a citizen’s committee titled “the Mayor’s Advisory Committee on Police Practices” (MACPP) in 1955. Successful goal-directed behavior requires balancing task-relevant information stored in working memory and the continuous processing of incoming sensory input, yet the neural mechanisms underlying this coordination remain unclear. This study examines how neural oscillations support concurrent visual perception and visual working memory. Using electroencephalography (EEG), we recorded brain activity while participants performed a dual task paradigm requiring them to simultaneously maintain one orientation in their memory while monitoring another orientation on the screen. After variable time intervals (50 different SOAs between 500-1500ms), participants compared a probe against either the memorized or visually monitored orientation. This honors project addresses the lack of inclusive skincare formulations by developing a scientifically grounded skincare line with an antioxidant-rich serum, moisturizer, and cleanser tailored to support diverse skin types, particularly melanin-rich skin. The serum combines strawberry extract powder, Manuka honey, niacinamide, green tea extract, and humectants to promote hydration, antioxidant protection, and skin barrier reinforcement. Formulated with a stable pH of 5.0–5.5 and an effective preservative system, the product was tested through non-animal, biologically relevant models.

Through this project, computational tools were refined to be more rigorous and robust for the primarily synthetic SazLab at Lawrence University. The primary research of the SazLab involves synthesizing and characterizing luminescent radicals based on two stable radical systems: TTM and BDPA. The BDPA system is of particular interest because the effects on luminescence of its nonalternant symmetry are less understood compared to the alternant symmetry of TTM. Quantum mechanical calculations, particularly Density Functional Theory, were utilized to help target syntheses and gain insight into the photophysics of luminescence. This thesis explores the resilience strategies narrated by women and girls displaced by climate change and subjected to child marriage in Bangladesh. Centering their voices and lived experiences, it highlights the intricate, often invisible methods through which these women navigate the intersectional precarity of environmental displacement, gender norms, and socio-economic marginalization. Through qualitative fieldwork conducted in riverine islands (chars), urban informal settlements, and government resettlement sites, the study foregrounds community practices like adda (social storytelling), mutual caregiving, informal healthcare, bodily negotiations, and strategic silence. Perineuronal nets (PNNs) are specialized extracellular matrix structures that regulate synaptic plasticity and stabilize neural circuits, particularly during the closure of critical periods, a time when the brain is highly plastic and susceptible to environmental influence. Emerging evidence suggests that PNNs may be sensitive to hormonal fluctuations associated with critical periods such as puberty and pregnancy, yet their role in the female brain, particularly in relation to other well-characterized hormonally-mediated events, remains underexplored. This fact sheet presents data on the link between social and demographic metrics of principal cities in four Mountain West metropolitan statistical areas (MSAs): Phoenix, AZ; Tucson, AZ; Denver, CO; and Las Vegas, NV. This fact sheet also reports the number of people affected by mass shooting events (MSEs) as originally reported in “Association Between Markers of Structural Racism and Mass Shooting Events in Major US Cities,” published by The Journal of the American Medical Association (JAMA) Surgery. The original article derives data from 865 MSEs across 51 MSAs in the United States.

This thesis explores themes of Black female agency in selected short stories by Angelina Weld Grimké and Zora Neale Hurston. Pushing back against the belief that the Harlem Renaissaince was a movement solely for male artists, Grimké and Hurston write short stories that center Black women and their experiences. Through the avenues of bodily autonomy, the using or silencing of voice, the opportunity and ability to make choices, issues of justice, retribution, and vengeance, the holding of authority, and being empowered or disempowered, I examine the female characters’ exercising of their agency to varying degrees. While the population of emergent bilingual students continues to increase in U.S. schools, the teaching force remains predominantly White and monolingual, with many educators underprepared in how to support emergent bilingual students’ literacy development or sustain their diverse linguistic practices. This is reflected in longstanding gaps in performance between monolingual and multilingual students on standardized assessments of reading. This thesis investigates the Colorado State Industrial School as a ritualistic institution that influenced boys aged 7 to 19 through Americanization practices between 1881 and 1930. By employing primary documentation, drone imagery, and LiDAR technology, the study examines how cultural and physical activities, along with personal statements, described and maintained the ritualized nature among these incarcerated youth. The findings reveal how institutional routines and activities reinforced narratives of American identity, particularly in relation to themes of personal identity, conformity, and agency. Using the arts-based methodology of Educational Criticism and Connoisseurship (Uhrmacher, Moroye, & Flinders, 2017) to examine the curriculum and pedagogy of a Colorado-based dance studio, this qualitative dissertation explores how transformative learning (TL) unfolds within the context of adult dance education. Grounded in Mezirow’s (1991) theory of transformative learning, the study investigates how dance becomes a medium for personal transformation, identity reconstruction, and emotional healing. Data collection included six hours of interviews with instructors and students and twelve hours of class observations, focusing on how adult learners experience curriculum not just as technical instruction, but as an embodied, relational journey …
