Food waste makes up nearly half of all municipal solid waste produced in the United States. EPA estimates that 40% of all food produced for human consumption is wasted. Question is how much post-consumer food is sent to the landfill from Winthrop University? The Office of Sustainability has completed five Weigh the Waste events in Thomson Cafeteria where we weigh post-consumer food waste for a single day. This poster will report the findings of each of those events, illustrate the environmental impacts of food waste, and will offer methods for reducing our food waste.

As the Baby Boomer population continues to age, so will the number of older adults that are food insecure. This paper examines the definition of food insecurity, the three main factors of food insecurity in relation to older adults, and preventive services for food insecurity. I will also use my experiences as geriatric Social Worker to better explain the causes of food insecurity with this population.

Oleogelation is a novel technique that represents the forming of liquid oils into a gel-like structure by entrapping the liquid phase into a thermo-reversible and three-dimensional gel network. There has been a great interest in Oleogelation in many areas like pharmaceutics, food, and cosmetics. Oleogels are used to reduce the saturated and trans fatty acids in foods, making them healthier. The consumption of saturated and trans fatty acids increases the risk of cardiovascular diseases (Pehlivanoglu, Demirci, Toker, 2017). Increases in blood sugar following meals impair vascular health and increase cardiovascular disease (CVD) risk. Co-ingesting dairy milk with meals helps limit increases in blood sugar to improve vascular health. Thus, dairy milk may have a positive effect on long-term vascular health.
