In-vitro evidence suggests that the lipid component of foods alters vitamin D absorption. This single-blinded, cross-over postprandial study examined the effect of changing the lipid component of a 20 µg vitamin D3 fortified dairy drink on postprandial 25(OH)D concentrations. Participants consumed one dairy drink per visit: a non-lipid, a pre-formed oleic acid micelle, an olive oil and a fish oil dairy drink. There was a significant time*drink*baseline status effect on 25(OH)D concentrations (p = 0.039). There were no time*drink, time or drink effects on 25(OH)D in vitamin D sufficient participants (>50nmol/L). However, there was an effect of time …

Modeling The Flow And Creep Compliance Properties Of Ice-Cream Mixes, Hiran Ranaweera

Electronic Theses and Dissertations

This work documented the influence of the protein source (MPC80 and WPC80), protein content (4-12%), and temperature (5-35ºC) on the rheological behavior (flow curve, frequency sweep, and creep-recovery) of ice-cream mixes (ICM). For each protein source, the viscosity of the ICM was satisfactorily modeled (𝑅2>0.98, 𝑅2 𝑎𝑑𝑗>0.98, and E0.99), while the recovery phase was represented by an empirical model. The percentage of recovery (%R) of the ICM significantly decreased with the protein content.

The Penn State Extension Animal Systems Team developed a toll-free hotline phone number to convey short educational messages to maintain contact and outreach to Pennsylvania’s animal producing Amish, Mennonite, and other plain Anabaptist populations. During the COVID-19 pandemic, Penn State Extension’s programming went largely online via webinars, online courses, and emails. This change in programming excluded a large sector of Pennsylvania farmers who do not use or have access to the internet and, as such, were liable to miss important best management practice reviews and timely updates in animal agriculture. The Animal Systems Hotline offered callers the choice to listen …

True Grit (1969) And Feminism: How It Succeeds And Why We Should Expect Better, Courtney Isom 2021 Utah State University

True Grit (1969) And Feminism: How It Succeeds And Why We Should Expect Better, Courtney Isom

Fall Student Research Symposium 2021

Hollywood Westerns are certainly not renowned for their contribution to feminist plots or characters, but True Grit (1969) is one of the more forward thinking movies with respect to women’s roles. However, the movie still portrays traditional power structures of patriarchy that undermine the female character’s autonomy. Looking at this film through the lens of both Critical Rhetoric and a Gender Diversity Perspective allows us to see the nuances of Mattie Ross' stand against oppressive traditional roles, while also examining the ways in which she is still dominated by discursive patriarchal practices. Celeste Condit’s gender diversity perspective encourages ditching traditional …

The Effect Of Bovine Endometrial Cell Conditioned Media On In Vitro Produced Bovine Embryo Development And Gene Expression, Mary A. Oliver 2021 University of Tennessee, Knoxville

The Effect Of Bovine Endometrial Cell Conditioned Media On In Vitro Produced Bovine Embryo Development And Gene Expression, Mary A. Oliver

Masters Theses

In vitro produced (IVP) bovine embryos provide enhanced genetic value and a means for studying early embryonic development. However, IVP embryos are developmentally compromised and are lower quality compared to in vivo derived (IVD) embryos. Consequently, after transfer pregnancy rates from IVP embryos are consistently lower, as they exhibit the highest amounts of pregnancy failure during the early embryonic phase (prior to day 28). Progesterone (P4) has been shown to influence bovine endometrial epithelial (EPI) and stromal fibroblast (SF) cells to secrete developmentally important molecules that promote early embryo development and conceptus elongation. However, IVP embryos are not exposed to …

Dairy Science and Food Science Faculty Publications: 2022 to Present

Drinking water quality requirements focus mainly on removing hazardous substances from the water supply, making it safe to drink and appropriate for livestock use. However, there is a concern that high mineral content in water may affect the drinking behavior of heifer calves, which may affect health and performance. In South Dakota, the primary water sources for agricultural use are surface or groundwater. Water quality varies between different regions of the state; in the eastern part of the state, the water is classified as “hard water” and calcium is the primary mineral found in the water. Our objective was to …

Understanding Milk Consumption Habits Among College Students In Order To Redesign Outreach, Stacey F. Stearns, Adam N. Rabinowitz

The Journal of Extension

College students consume less dairy milk than in the past. Increased competition in the beverage aisle influences their choices. However, much of the population is not meeting the recommended intake guidelines for calcium. A survey of undergraduate college students with university dining plans focused on milk consumption habits, beverage choices, and student attitudes toward healthful foods and nutrition. Results are guiding Extension program educational outreach campaigns to college students. By focusing on the healthful and nutritional benefits of milk, Extension educators could increase consumption among college age consumers, and their long-term healthful outcomes.
