Objective:To use external bioelectrical impedance analysis to assess postmortem chemical changes in normal- and high-pH beef longissimus lumborum steaks during simulated retail display.

Study Description:Beef strip loins (n = 20; postmortem age = 14 d) obtained from a commercial processor were sorted into two treatments, normal-pH (5.61–5.64; n = 11) and high-pH (6.2–7.0; n = 9). Loins were fabricated into five 1-inch thick steaks (n = 100), and randomly assigned to one of five display days: 1, 3, 5, 7, and 9. Morbidity and mortality associated with the bovine respiratory disease (BRD) complex continue to be a significant challenge to the United States beef industry. Stress associ­ated with maternal separation, environment change, transportation, diet changes, and commingling are common to beef industry marketing channels and have been linked to depressed growth and health of recently weaned calves. Cattle originating from the Southeastern U.S. tend to exhibit high rates of BRD after transportation to Great Plains feedlots.

Effects Of Interseeding Ladino Clover Into Tall Fescue Pastures Of Varying Endophyte Status On Grazing And Subsequent Finishing Performance Of Stocker Steers, L. W. Lomas, J. L. Moyer

Two hundred fifty-six yearling steers grazing tall fescue pastures were used to evaluate the effects of fescue cultivar and interseeding ladino clover on available forage, grazing gains and subsequent finishing performance in 2016, 2017, 2018, and 2019. Fescue cultivars evaluated were high-endophyte ‘Kentucky 31,’ low-endophyte Kentucky 31 ‘HM4,’ and ‘MaxQ.’ In 2016, 2018, and 2019, steers that grazed pastures of low-endophyte Kentucky 31, HM4, or MaxQ gained significantly more (P<0.05) and produced more (P<0.05) gain/a than those that grazed high-endophyte Kentucky 31 pastures. Gains of cattle that grazed low-endophyte Kentucky 31, HM4, or MaxQ were similar (P>0.05). In 2017, steer gains were similar (P>0.05) among all cultivars. High-endophyte Kentucky 31 pastures had more (P<0.05) available forage than low-endophyte Kentucky 31, HM4, or MaxQ pastures during both 2016 and 2017. Bermudagrass is a productive forage species when intensively managed. However, it has periods of dormancy and requires proper management to maintain forage quality. Legumes in a bermudagrass sward could improve forage quality and reduce fertilizer usage; however, legumes are difficult to establish and maintain with the competitive grass. Clovers can maintain survival once established in bermudagrass sod, and may be productive enough to substitute for some N fertilization. Ultrasound technology provides cattle breeders a relatively quick, non-invasive, and economical way to gather carcass data on live animals. Ultrasound provides the means to accurately predict body composition and develop estimated breeding values; however, national cattle genetic evaluations assume homogenous additive genetic and residual variances. These assumptions may be violated when estimating genetic merit for carcass traits by ultrasound because of differences in variance due to scanning technician and image interpretation laboratory. The overall objective of this dissertation was to determine the impact of selected post weaning management strategies on beef carcass characteristics and meat quality. The specific objectives were 1) determine the effect of a rumen-protected long chain fatty acids fed during finishing on live performance, serum fatty acid profile, carcass traits, and predicted carcass composition, and 2) determine effects of feeding brassica-based cover crops to cattle during backgrounding on live animal performance, carcass characteristics, tenderness, juiciness, and flavor of strip steaks, and case life of ground beef and strip steaks. Objective:The objective of this study was to evaluate the efficacy of using surface and internal bioelectrical impedance to assess beef longissimus lumborum shelf-life during 15 days of simulated retail display.

Study Description:Beef strip loins, obtained from three commercial processors (postmortem age = 27, 34, or 37 days), were fabricated into 12 1-inch thick steaks. Steaks were subdivided into six consecutively cut pairs, packaged on Styrofoam trays, overwrapped with polyvinyl chloride film, and displayed under fluorescent lighting at 32–40°F in coffin-style retail cases for 15 days. A total of 216 steers grazing smooth bromegrass pastures were used to evaluate the effects of supplemental energy source on available forage, grazing gains, subsequent finishing gains, and carcass characteristics in 2014, 2015, 2016, 2017, 2018, and 2019. Supplementation treatments evaluated were: no supplement, a supplement with starch as the primary source of energy, and a supplement with fat as the primary energy source. Supplements were formulated to provide the same quantity of protein and energy per head, daily. Supplementation with the starch-based or fat-based supplement during the grazing phase resulted in higher (P<0.05) grazing gains than feeding no supplement during all six years. In 2014, 2016, 2017, 2018, and 2019, grazing gains of steers supplemented with the starch-based or fat-based supplement were similar (P>0.05). In 2015, steers …

Foot soundness and udder conformation are essential for longevity in beef cattle. The objective of this study was to investigate the effects of foot angle (FA), claw set (CS), teat size (TS) and udder suspension (US) scores on cowherd performance. Data were analyzed for 1,685 observations on Angus-based cows over a four-year period. At weaning FA, CS, TS, and US were evaluated. Scores are based on nine-point scales. A score of one indicates straight pasterns, divergent toes, enlarged bottle shaped teats, and absence of a median suspensory ligament; nine indicates weak pasterns, curled toes, small symmetrical teats, and a tight …

In experiment 1, 80 steers (197.0 kg initial body weight; BW for fall, 116.9 kg for spring), were stocked at 2.45 and 4.1 calves/ha in fall and spring, respectively in 16 tall fescue pastures [fall ergovaline (EV) = 1,475 ppb and spring EV = 1,173 ppb] under 2 treatments, mineral (MIN) (n = 8) and cumulative management (CM) (n = 8). Forage allowance did not differ (P = 0.76) between CM and MIN during fall but differed during spring (P ≤ 0.05, 2.55 vs. 3.22 kg DM/kg BW, for MIN and CM, respectively). The economic impact of infectious bovine keratoconjunctivitis (IBK) has been documented in many parts of the world. Many researchers have observed that prevention of this disease is very difficult given current methodologies. This is primarily due to the multifactorial nature of this disease. Variation in internal cooked color of ground beef is an economic concern for the ground beef market. Persistent pink color in hamburger patties can lead consumers to the perception of an undercooked product. In June 2010 the Cattle Industry Funding Scheme (IFS) was introduced to address biosecurity threats relevant to the Western Australian (WA) cattle industry. The Scheme was established under the Biosecurity and Agriculture Management Act 2007 to enable cattle producers to identify the pest and disease priorities at a whole-of-industry level and to raise funds for activities to address these priorities.

There are currently three Industry Funding Schemes in operation. In addition to the Cattle IFS, there is a Sheep and Goat IFS and a Grains, Seeds and Hay IFS. The three IFSs operate in a similar manner.

Nutrient inputs from cattle dung are crucial drivers of nutrient cycling processes in grazed ecosystems. These inputs are important both spatially and temporally and are affected by variables such as grazing strategy, water location, and the nutritional profile of forage being grazed. Some definitions of feed efficiency such as residual energy intake (REI) and residual gain (RG) may not truly reflect production efficiency. The energy sinks used in the derivation of the traits include metabolic live-weight; producers finishing cattle for slaughter are, however, paid on the basis of carcass weight, as opposed to live-weight. The objective of the present study was to explore alternative definitions of REI and RG which are more reflective of production efficiency, and quantify their relationship with performance, ultrasound, and carcass traits across multiple breeds and sexes of cattle.
