Cattle DMI is an essential component of calculating cattle stocking rates, determining nutrient requirements, and evaluating feed efficiency. Cattle DMI and digestion of forages impact enteric greenhouse gas (GHG) emissions; a major public and environmental concern. Increased GHG levels indicate energy loss during the rumen fermentation process. Obtaining data for rangeland cattle DMI and GHG emissions is needed to understand and enhance individual animal performance and reduce negative environmental impacts. We will develop enteric emissions and DMI relationships by conducting three feeding trials using the GreenFeed and SmartFeed Pro (C-Lock Inc. Rapid City, SD). The GreenFeed will measure …

Data were collected from Wind Cave National Park and 6 satellite bison herds across the upper Midwest ranging across South Dakota, Indiana, and Kansas with a MAP gradient ranging from 34 to 82 mm and a MAT gradient ranging from 9 to 13°C. Fecal samples were collected non-invasively from 50 freshly voided bison dung patties at each herd. Helminth eggs were recovered and identified using sugar floatation; Trichostrongyle-type eggs were hatched by coproculture to identify to species. Preliminary findings indicate that general abundance of trichostrongyle-type helminths increases by 2.3 EPG per 1°C and by 0.2 EPG per mm, …

Study Description:

Twelve head of fed beef cattle were harvested at the SDSU Meat Laboratory over two days. Carcasses were allotted into two weight groups based on hot carcass weight (HCW): Heavyweight (HW) and Lightweight (LW). Data logging thermometers were placed in the left side of each carcass within the round, loin, rib, and chuck primals to track temperature decline. Carcass measurements including 12th rib fat thickness, ribeye area and marbling score were collected approximately 48 hours postmortem. Steaks from each primal were collected to measure Warner-Bratzler shear force (WBSF), objective and subjective color.

Drought is a recurring event faced by many cow/calf producers across the nation. As drought events increase in their severity, it is important for cattle producers to have a management plan to mitigate the economic effects of drought. Two of the most common strategies for mitigating the effects of drought include buying additional feed and depopulating a portion of the herd. This fact sheet reviews strategies that will guide the decision-making process to cull cattle during drought.

Bovine respiratory disease (BRD), as one of the most common and costly diseases in the beef cattle industry, has significant adverse impacts on global food security and the economic stability of the industry. The bovine respiratory microbiome is strongly associated with health and disease and may provide insights for alternative therapy when treating BRD. The niche-specific microbiome communities that colonize the inter-surface of the upper and the lower respiratory tract consist of a dynamic and complex ecological system. Objective: The objectives of this study were to survey characteristics including hot carcass weight (HCW), 12th rib fat thickness (RFT), body-wall thickness (BWT), longissimus muscle area (LMA), USDA yield grade (USDA YG), percentage closely trimmed retail cuts (RC), and calculated yield grade (Calc YG) of lamb carcasses in the Intermountain West to determine the effects of season of slaughter and interrelationships among carcass characteristics.

Despite the importance of feed intake and efficiency in beef production, there are still gaps in our knowledge on optimal production efficiency traits and breeding strategies for improved feed, production and economic efficiency. The objectives of this thesis were to redefine production efficiency in growing cattle by exploiting carcass information and to validate current beef breeding goals for improving efficiency, and to investigate the relationships of feeding behaviour with performance, feed efficiency, and carcass merit. The objectives of this thesis project were to 1) evaluate the influence of grain- and grass-finishing systems on carcass characteristics, proximate composition, nutritional profile, and fatty acid composition of bison bull meat, and 2) evaluate the influence of animal age on carcass characteristics of bison bulls. Unmanned aerial vehicles (UAVs) are increasingly becoming common in animal agriculture. However, research regarding the impact of UAV disturbance on animal wellbeing is lacking or limited. The goal of this study was to investigate the effect of UAV flights on beef cattle by measuring cattle heart and movement rate when introduced to single or multiple UAV flights. A total of 16 -18 crossbred beef heifers were introduced to different flights patterns at between 5 and 9 m above ground level (AGL) at approximately 1 to 2 m/s horizontal velocity for 4 weeks with flights repeated 3 days per week. Failure of beef carcasses to achieve desirable carcass specifications represent inefficiencies within the supply chain, namely greater carcass processing costs and the inability of the resulting primal cuts to conform to high-value market specifications. Analysis of a representative sample of prime Irish beef cattle conducted in this thesis determined that 59% of cattle fail to achieve the desired carcass specifications of the supply chain at slaughter. The objective of this thesis was to use readily available information to define strategies that could help to reduce this statistic. Programmed Nutrition Beef Program (Alltech Inc.) is a dietary supplement that contains Aspergillus oryzae fermentation extract with α-amylase activity that could reduce the use of feed additives such as monensin and tylosin in conventional feedlot diets. This study examines the changes in rumen fermentation resulting from feeding monensin/tylosin and Programmed Nutrition Beef Finisher. Adaptive management of large herbivores requires an understanding of how spatial-temporal fluctuations in forage biomass and quality influence animal performance. Advances in remote sensing have yielded information about the spatial-temporal dynamics of forage biomass, which in turn have informed rangeland management decisions such as stocking rate and paddock selection for free-ranging cattle. However, less is known about the spatial-temporal patterns of diet quality and their influence on large herbivore performance. Direct or indirect contact between domestic populations of animals and wildlife carries an inherent risk for transmission of pathogens that cause infectious disease. In Humboldt and Del Norte counties of northern California, ongoing conflict between ranchers and Roosevelt elk groups results from elk use of ranching pastures and pastures on private land. Meat contamination by Salmonella enterica is a serious public health concern. Available data have suggested that biofilm formation at processing plants and contaminated contact surfaces might contribute to meat contamination. Because transfer from contact surfaces to food products via direct contact has been deemed the most common bacteria transmission route that can lead to contamination, we evaluated the effect of Salmonella biofilm forming ability, contact surface material, and beef surface tissue type on Salmonella biofilm transfer from hard surfaces to beef products.
