Selenium (Se) deficient soils and thus forages are widespread throughout the United States, necessitating supplementation of this trace mineral in the diet of grass-fed cattle to negate detrimental effects of a deficiency on immune function, growth, and fertility. Conventionally, Se is supplemented to cattle in a vitamin-mineral mix as an inorganic form (ISe) although the organic forms (OSe) are available when cattle consumer forage, and OSe has been shown to increase the bioavailability of Se in cattle. Previous research has demonstrated supplementation with 1:1 mixture (MIX) of ISe and OSe compared to ISe alone increases systemic concentrations of progesterone (P4) …

To continue to meet the demands of increasing food production and environmental sustainability, new strategies are needed to enhance the efficiency of finishing cattle production. A review of the literature identified several nutritional and physiological constraints that limit the ability for cattle to digest starch and absorb glucose from the small intestine. Comparative sequencing analyses revealed a missing region of the sucrase-isomaltase protein which could affect the capacity for starch digestion in cattle. Post-flaking sampling and handling recommendations were generated based on a series of experiments to improve estimates of starch availability and flaking consistency for commercial feedlots and laboratories. …

Hemp (Cannabis sativa L.) is used in the United States as a source of CBD oil, fiber, and grain. While hempseeds are consumed whole or as dehulled hemp hearts, hempseed oil is also a desirable seed oil in human nutrition. The process of collecting hempseed oil leaves behind hempseed cakes that are abundant in protein and fiber. Feeding of hempseed cakes to animals, including ruminants, has only initially been explored. Efficient feed utilization is critical for both economic sustainability and environmental responsibility in modern livestock production. While there has been extensive research, the multifaceted nature of feed efficiency remains complex, with many biological factors still unexplored. This dissertation examines the physiological foundations of feed efficiency by elucidating some of the complex biological mechanisms associated with residual feed intake (RFI) phenotype in beef cattle, using a range of Omics approaches. We hypothesized that metabolites related to amino acids, carbohydrates, and fatty acids could act as potential biomarkers for RFI. Regenerative agriculture is a pressing matter for the dairy industry to address cropland sustainability and carbon sequestration. One regenerative management practice that has been identified to help with row crop sustainability for key metrics like soil organic carbon (SOC) is complex covers. Terminal implant administration in beef steers often leads to decreased feed intake, leading to less growth. Our objective was to identify diet and management changes that can mitigate this decrease in feed intake. Single-sourced Angus x Simmental steers (n=27, initial BW= 385.1 ± 30.8 kg) were utilized in a completely randomized trial to assess the effects of animal movement and increased forage inclusion on rumination and feed intake after re-implanting. Water is an essential nutrient and is required for growth, metabolism, lactation, and reproduction. Without water, livestock production would not be possible. Despite its importance, water requirements in livestock have not received much attention from the research community since the 1950s. The goal of this project was to perform a regional assessment of live cattle and carcass characteristics in the northern plains. The assessment audited three packing plants to assess fed cattle, cow, and bull production. The live animal factors evaluated were transportation, mobility of cattle, identification, brands, and mud/manure present. Data collected during the slaughter process was bruising, dentition, and offal condemnations. In fed cattle yield grade, quality grade, and hot carcass weight were assessed. Early embryonic loss is a significant factor in livestock species' infertility, resulting in an economic deficit. In cattle, the in vivo fertilization rate is ~90%, with an average calving rate of about 55%, indicating an embryonic-fetal mortality rate of roughly 35%. Further, 70-80% of total embryonic loss in cattle occurs during the first three weeks after insemination, particularly between days 7-16. Growing evidence indicates that the oocyte plays an active role in regulating critical aspects of the reproductive process required for successful fertilization, embryo development, and pregnancy. Is There An Economic Advantage To Planting Diverse Summer Annual Forage Mixtures?, Kelly Mercier, Chris Teutsch, Ray Smith, Kenny Burdine, Edwin Ritchey, Eric Vanzant

This study examined economic implications of planting summer annual mixtures of grasses, legumes, and forbs at varying nitrogen rates. No differences in yield occurred between the three mixtures, indicating that mixtures with lowest seed cost will be most economical. Applying N resulted in yield increases of 12.26 lb DM per lb N applied. Although yield responses to N were positive, sensitivity analyses showed that applying N resulted in positive net returns only when hay prices were high and N prices were low. When utilization rates are accounted for, enterprise budgets determined grazing to be 18% cheaper to implement than haying.

Livestock naturally produce greenhouse gas emissions through enteric fermentation. Dietary manipulation strategies have been sought out to decrease emissions in ruminants using feed additives.

Two independent finishing feedlot experiments evaluated two types of biochar and its effects on animal performance, carcass characteristics and greenhouse gas emissions. A beef cattle population (n = 2,343) was used to assess the impact of variants identified from imputed low-pass sequence (LPS) on the estimation of variance components and genetic parameters of birth weight (BWT) and post weaning gain (PWG). Variants were selected based on functional impact and were partitioned into four groups (Low, Modifier, Moderate, High) based on predicted functional consequences and re-partitioned based on consequence of mutation, such as missense and untranslated region variants, into six groups (G1-G6). Modern molecular techniques enable characterization of the microbial biome in livestock manure, from which there is particular concern over emission of greenhouse gases. This study evaluated how sampling depth, time, temperature, and artificial rainfall affected microbial community structure in feedyard manure, and relationships between the manure biome and known parameters related to nitrous oxide (N2O) emissions. Nutrient restriction is a relatively common production insult to pregnancy in cattle. Recently, melatonin supplementation has been investigated as a possible therapeutic to rescue the negative effects of nutrient restriction. Neurotransmitters have been implicated as having negative programming effects in mouse and human pregnancies, manifested as metabolic and neurologic disorders. Inosine 5’- monophosphate (IMP) was the most abundant nucleotide in meat known to impart umami taste which thus far had been overlooked in meat flavor studies. The objectives of this study were to determine the umami taste threshold of inosine 5'-monophosphate (IMP), the effects of spiking IMP on the sensory descriptive attributes of various USDA graded beef strip steaks, and to differentiate beef by IMP content using electrochemistry.
