Cold plasma has emerged as a potential bio-decontamination technology for microbial and chemical risks associated with food products such as fruits and vegetables. This study investigated the efficacy of cold plasma treatment for the degradation of pesticides (boscalid and Imidacloprid) on blueberries in tandem with the need to retain critical quality attributes of a fresh high value berry product post treatment. An in-package high voltage dielectric barrier discharge plasma reactor was employed for this study. Phytosanitary treatments prevent the introduction of pests such as fruit flies into pest free zones, and are often required for international trade. Irradiation is increasingly being considered as an alternative to cold and chemical phytosanitary treatments, such as methyl bromide. In this study, the effect of low dose gamma irradiation on the post-harvest quality of two varieties of pummelos (Citrus maxima (Burm.) Merr.), an emerging crop of interest in the US was evaluated. Drosophila suzukii (Matsumura) is an invasive species that is a devastating pest of soft-skinned fruit crops. Although much effort has been directed toward developing traps and attractants to monitor for D. suzukii, current monitoring tools do not reliably predict fruit infestation. The objective of this study was to determine if D. suzukii females at different developmental stages are differentially attracted to monitoring traps with fermentation-based baits and ripe fruits. Two flexible food packaging barrier material film structures were employed for this research study to evaluate the effects of over-the-road truck transport. The films containing different barrier materials, ethylene-vinyl alcohol (EVOH) or aluminum oxide (AlOx), were selected based on their abundant use within the flexible food packaging arena. Pouches were formed and filled with tomato paste before being thermally processed then palletized for shipment. Pouches were shipped over-the-road via truck transport a distance of 2,500 miles. Increasing global population increasingly limited by resources has spurred interest in novel food sources. Insects may be an alternative food source in the near future, but consideration of insects as a food requires scrutiny due to risk of allergens. Currently, the insect Dactylopius coccus, known as cochineal, is used to produce carmine, a natural red pigment used in food, which has caused allergic reactions. This study investigated allergens of cochineal focusing on purification from the pigment. Mass spectrometry identified a previously described major allergen of cochineal and a tropomyosin, although further work is required.

Abstract
Interest in local and regional food production has been growing in the last few years. The study, therefore, assessed consumer attitudes and beliefs regarding local or regional livestock products. Data were obtained from a convenience sample of 384 participants from several counties of Georgia, and were analyzed by descriptive statistics, including chi-square tests. A majority of respondents thought using chemicals and additives in locally or regionally produced beef or goat meat was a serious or somewhat serious hazard. Consequently, many were willing to pay more for meat certified as locally or regionally produced. Furthermore, a majority agreed or strongly …

Models are valuable tools for explaining and testing systems. Small-scale models can be especially useful for educational purposes. For models to be useful, they have to accurately depict the larger system that they are describing. A novel man-made system, known as an agrivoltaic structure, is being constructed at Biosphere 2 near Oracle, Arizona. The word agrivoltaic is a combination of agriculture and photovoltaics, or solar farming. My research involved creating a small-scale version of this system for educational purposes. Food security in the arctic and subarctic is an area of growing research and concern as climate change continues to alter the availability of traditional foods eaten in remote areas, especially as shipping food has questionable sustainability and contributes to rising CO2 levels. In this paper, I will explore the ways in which locals interact with new food options on the island of Bali. Specifically, I will explore dietary behaviors surrounding pre-‐ packaged snacks and ‘fast-‐food’ chains and determine whether the presence of these food options is affecting the Balinese’s relationship with more traditional cuisine. I will use everyday observations and conversations with locals to analyze dietary habits and the various food items that are being consumed while examining the potential dietary differentiation between two age groups. On fresh fruits and vegetables, irradiation at low and medium dose levels can effectively reduce microbial counts which can enhance safety, inhibit sprouting to extend shelf-life, and eliminate or sterilize insect pests which can serve to facilitate trade between countries. At the dose levels used for these purposes, the impact on quality is negligible. Two commonly used methodologies for species detection within processed meat products are real-time polymerase chain reaction (PCR), a DNA-based method, and enzyme-linked immunosorbent assay (ELISA), a protein-based method. In this study, a real-time PCR assay was compared to a commercial ELISA kit based on sensitivity, specificity, agreement among duplicate samples, cost, time, and ease of use. Fifteen reference samples containing known percentages (0.1–99.9%, w/w) of pork and beef were analyzed in duplicate using both methods. Thirty commercial products, including sausages, pet treats, and canned meats, were also tested in duplicate with each method. Reference sample analysis showed real-time PCR was …

Data regarding the water and energy usage of current antimicrobial interventions in beef packing plants is scarce. The objective of this study was to collect representative water and energy usage data in a beef packing plant, with emphasis on antimicrobial interventions, to provide baseline data for comparison of new intervention technologies developed by researchers. Permanent and portable water flow meters were installed on the plant’s plumbing system to collect water flow data from March 2014 to March 2015. Black beans contain high phenolic contents that are considered potent antioxidants. Relatively little is known about their ability to inhibit the carbohydrate-hydrolyzing enzymes α-amylase and α-glucosidase from releasing glucose from starch and/or disaccharides. The objective of this project was to determine the optimum procedures for extracting total phenols (TP), total flavonoids (TF) and total condensed tannins (TCT) from black beans (Phaseolus vulgaris), and then to determine the ability of the phenolic rich extracts to inhibit α-amylase and α-glucosidase. This project is an exploration of how agriculture can be incorporated into the fabric of the city of Chula Vista, which has both uniquely urban and suburban areas. The proposal is to integrate agriculture as a design tool to reconnect to the city’s agricultural past and as a model for cities of the future. Available food sources can provide a different effect on the growth rates of Rhacodactylus auriculatus. In this study three food sources were compared, Repashy MRP, Pangea super foods, and GeckoPro New Caledonian blend. These are composed of similar nutrients but tend to have some points where they vary. Thirty-six gargoyle geckos were put through a trial over a 14 week period to determine which commercially available food source provides the best nutrients for growth, as measured by weight gain. Over 30% of adults in the US are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n=4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in randomized, crossover design with a one-week washout period. Texture is an often-overlooked food attribute and is known to influence other food characteristics. More specifically, texture has been repeatedly to influence how we perceive flavor. Several studies have linked this change in flavor perception to the altered mastication patterns that accompany texture changes. For the month of March, we implemented a mini education program at both EmblemHealth sites to engage, educate and empower members of the fitness center and weight management program. The program was designed to be fifteen minutes in length, allowing for more sessions over the course of 3 hours with one session a week alternating between topics. Upon survey evaluation of the 60 participants, they reported satisfaction with the overall program and validated the worth of EmblemHealth’s Fitness Center. The survey also showed that 10 out of 10 participants recognized sitting disease as a primary health concern after the presentation, …

The rates of food insecurity amongst Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. While Purdue Nutrition Society wishes that we could help all Hoosier children stay fed with nutritious meals, for now we are focusing on helping 20 local elementary students most at risk of going hungry over spring break. Primers were designed to target a 236-base pair (bp) fragment of the mitochondrial control region (CR) and a 179-bp fragment of the first internal transcribed spacer region (ITS1). Epidemiologic studies report associations between artificial sweetener (ASW) consumption and metabolic abnormalities, yet well-designed human intervention studies in humans are limited. Fresh strawberries are highly perishable and have a short shelf-life especially when the cold chain is not maintained. Strawberries exported to Asia are currently fumigated with methyl bromide for phytosanitary purposes, which exposes strawberries to warm temperatures for several hours and air freight without temperature control, resulting in a shelf life of just a few days in the destination country. Irradiation offers an efficacious alternative to fumigation and can be performed on cold fruit. Game meats represent a valuable specialty market in the United States that has high economic incentives associated with mislabeling. However, there is limited information on this topic. The purpose of this study was to conduct a market survey of game meats sold within the United States and identify instances of mislabeling using DNA barcoding. The objective of this study was to test a variety of ground meat products sold on the U.S. commercial market for the presence of potential mislabeling. Forty-eight ground meat samples were purchased from online and retail sources, including both supermarkets and specialty meat retailers. DNA was extracted from each sample in duplicate and tested using DNA barcoding of the cytochrome c oxidase I (COI) gene. The resulting sequences were identified at the species level using the Barcode of Life Database (BOLD). Any samples that failed DNA barcoding went through repeat extraction and sequencing, and due to the possibility of a …
