The Effect Protein Supplementation On Waist-To-Hip Ratio, Bmi, Lipid Profile, And Resting Energy Expenditure In Postmenopausal Women, Caleb Flores
Biological Sciences Undergraduate Honors Theses
Postmenopausal women are a growing and at risk population that face increased risk for adverse changes in body composition, lipid profile, and overall cardiometabolic health due to hormonal changes associated with aging. Over 40% of postmenopausal women have obesity, which can be linked not just aging but the menopausal transition. Because of the negative effects of menopause on cardiometabolic, research into dietary interventions to combat these effects are needed. High-protein diets have shown promise in mitigating these effects, but sufficient research has not been done to determine the effects on postmenopausal women. This study aimed to evaluate the effects of …

This study aimed to describe production challenges and implementation of good agricultural practices among CEA growers. Data collection methods included semi‐structured interviews (N = 25) and a supplemental online survey completed by growers (N = 12) in the U.S. Out of 18 total responses (i.e., multiple responses allowed per completed survey), survey data indicated …
How Does Increasing The Darkness Of A Plate Affect The Perception Of Both Bitter And Sweet Flavors?, Jessica Williams
How Does Increasing The Darkness Of A Plate Affect The Perception Of Both Bitter And Sweet Flavors?, Jessica Williams
Food Science Undergraduate Honors Theses
Extrinsic cues like plate color have been shown to effect taste perception. Previous studies conducted show a consensus that plate colors can modulate taste perception (Piqueras-Fizman et al., 2012, Stewart & Gross, 2013). No studies, however, have investigated varying color hues and their effect on taste perception. This study aims to determine whether the change in the black to white ratio of plate color can affect consumer perception of sweetness or bitterness.
We presented a group of volunteers two different brownies on plates varying from 100% white to 0% white in 25% increments. A 30:70 male to female gender ratio …

The Effect Of Response Conditions On Food Images-Evoked Emotions Measured Using The Valence X Arousal Circumplex-Inspired Emotion Questionnaire (Ceq), Han-Seok Seo, Lydia Rockers, Young-Gab Kim
Food Science Faculty Publications and Presentations
In 2020, a single-response-based, valence × arousal circumplex-inspired emotion questionnaire (CEQ) was developed. Using a between-participants design, previous studies have found that a multiple response (MR) condition better discriminated test samples (e.g., written food names) based on their evoked emotions than a single response (SR) condition. This research, comprising Studies 1 and 2, aimed to determine the effect of response conditions (i.e., SR vs. MR) on emotional responses to food image samples, using a within-participants design. In Study 1, 105 Korean participants were asked to select a pair of emotion terms (i.e., SR condition) or select all pairs representing their …

Development Of An Equation To Correlate Brite Tank Temperature And Pressure To Beverage Carbonation Concentration, Devyn Meyer
Development Of An Equation To Correlate Brite Tank Temperature And Pressure To Beverage Carbonation Concentration, Devyn Meyer
Biological and Agricultural Engineering Undergraduate Honors Theses
The Carbo Rock-It™ is an invention created to carbonate beverages at craft breweries. One of the Carbo Rock-It’s main features is that it does not add a significant volume of undissolved gas bubbles to the brite tank in which the beverage is carbonated. This may allow temperature and pressure readings from the brite tank to be used to determine the concentration of dissolved carbon dioxide in the beverage continuously in real time. This eliminates the need for manual samplings, which could save breweries time and allow for more controlled, accurate carbonation. The goal of this project was to develop an …

The purpose of this study is to gather data regarding consumer knowledge and understanding of …
Influences Of Intrinsic And Extrinsic Hand-Feel Touch Cues On Sensory Perception And Emotional Responses Toward Beverage Products, Ragita Cantika Pramudya
Influences Of Intrinsic And Extrinsic Hand-Feel Touch Cues On Sensory Perception And Emotional Responses Toward Beverage Products, Ragita Cantika Pramudya
Graduate Theses and Dissertations
Consumer perception of and preference toward products are influenced by intrinsic product-specific (e.g., product temperature) and extrinsic non-product-specific (e.g., packaging or container) characteristics. Besides communicating information between products and consumers to create expectations toward the content at the point of sale, packaging also influences sensory perception of the content during consumption. Previous cross-modal studies on packaging effects on the content had largely overlooked hand-feel touch cues. Touch closely relates to consumers’ emotional responses to and their quality evaluation of products. One way to manipulate hand-feel touch cues in a beverage consumption setting is to vary materials of cup sleeve, which …
