Plant-based foods are becoming increasingly popular because of changing consumer preferences. Most plant-based milks are not a direct replacement for cow’s milk because they do not have the same nutritional value and physicochemical properties. However, these properties could be modified and enhanced through processing. The objective of this research was to evaluate if chitosan and another food-grade compound can be incorporated into food-grade coatings in conjunction with propylene glycol and polysaccharides to control Tyrophagus putrescentiae growth without affecting sensory attributes, water activity, and moisture content of dry-cured hams. Each coating solution was coated on ham cubes (2.5 × 2.5 × 2.5 cm3, n = 5/treatment) or infused in ham nets, and dry-cured ham cubes were wrapped in the ham nets prior to inoculation with 20 mixed-sex adult mites. Urban farming has been transformed into urban agricultural activities oriented towards optimizing economic benefits through export market involvement. However, the expansion of the market has consequences for farmers. The involvement of urban farmers in export trade causes market pressures that affect agricultural production practices. This research used qualitative research methods. There were 27 informants in this study. Researchers collected data to determine market pressures faced by export-scale urban farmers in Bandung Metropolitan. These 23 million barrels of craft beer account for 12.3% of the United States beer consumption in 2020. The American craft beer industry is substantial and needs to protect its product from bacterial contamination.

The effects of pasteurization temperature and time on the change in seven peach puree variables over a 6-week accelerated shelf-life test (35°C) were evaluated. The variables of interest were three color measures [ L* (lightness), a* (redness), and b* (yellowness)]; two brown pigment measures [spectrophotometric absorption at 420 nm (Browning Index) and 443 nm (Hydroxymethylfurfural)]; °Brix; and pH). Orange peel (OP) is a major byproduct from orange juice production, and is a good source of fiber and flavonoids, particularly nobiletin. Nobiletin has been reported to exhibit pharmacological activities including anti-inflammation and antioxidation. Incorporating orange peel into food products would harness economic benefit of this industrial byproduct and support a sustainable food chain. This study was performed to evaluate consumer perception of gluten-free oat-based snack bars (GFOSBs) containing orange peel.

The color of edible bird’s nest is associated with its nitrite concentration, but this relationship remains inconclusive. This investigation aimed to evaluate the nitrite content in edible bird’s nest of four different colors: white, yellow, orange, and red blood. Fifty-eight edible bird’s nest samples were obtained from five swiftlet farmhouses in Borneo Island, Indonesia and analyzed for nitrite content using Genesys 30 visible spectrophotometer. Results showed that the dark-colored edible bird’s nests (yellow, orange, and red blood) had higher nitrite concentrations of 304, 317, and 309 ppm, respectively, compared with the white-colored one (15 ppm). Some new cassava accessions have been developed and released because of their high yield, resistance to disease, adaptability to wider ecological environment, and less cost of production. However, their flour and starch properties have not been characterized for potential food applications. In the present study, starch and flour were produced from two new cassava accessions (Sika Bankye and Bankye Hemaa) and evaluated for their physicochemical and pasting properties. The flour samples recorded higher values for the various functional parameters compared to their starch counterparts. Purpose: A systematic review was conducted to assess how the involvement of a registered dietitian nutritionist (RDN) in healthy behavior interventions (HBIs) potentially affects outcomes in older adults with type 2 diabetes (T2D).

Methods: Literature was searched for primary research published between 2016 and 2020 on HBI involving a RDN affecting outcomes in older adults with T2D. Introduction: Water, sanitation, and hygiene practices in sub-Saharan Africa, including Zambia, have not met the Millennium Development Goals (MDGs) and remain inadequate to improve the overall health and wellbeing of most populations.

Methods: Survey research, interviews, WASH observations, and anthropometric assessment were conducted between May-June 2022 on 6-7th grade students within 6 Zambian schools.

Results: While hygiene knowledge was prominent, and handwashing stations and pit latrines were available, schools rarely supplied soap or toilet paper. Diarrheal and respiratory diseases were common and water shortages remain problematic with some students traveling long distances to reach a water source.

Introduction: Dental caries is the most prevalent and infectious disease worldwide. Zambia has a high rate of vitamin A deficiency, and this deficiency is associated with dental caries.

Methods: Visual dental checks, interviewing, and anthropometric assessments were done on 781 Zambian primary school children.

Results: Caries rates are 20% among sample populations, males have more decay than females, first molars are the most decayed, a majority use toothbrushes to clean their teeth, and children who eat vitamin A rich foods are less likely to have dental caries.
