Ramps (Allium tricoccum) is a traditional plant in the eastern Appalachian Mountains. Ramps have been used in Appalachian folk medicine for its health promoting roles in lowering blood pressure and cholesterol. Information on the chemical composition of bioactive components responsible for the potential health benefits are scarce. Analysis of the chemical composition in similar Alliumplants showed that flavonols, induced similar health benefits. Therefore, the aim of this work is to characterize major flavonol conjugates in ramps. The secondary aim is to develop a preliminary quantification protocol. Objective: The objective and purpose of this research was to determine if individuals with type 1 and type 2 diabetes are at risk for developing eating disorders. Currently, there is a gap in literature on the topic of eating disorders and diabetes. Further, there is little research on those with type 2 diabetes and their risk for eating disorder development. Management of diabetes and eating disorder treatment contradict each other. Polyunsaturated fatty acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), are major maternal dietary supplements due to their positive benefits on neurological tissue growth during the first 12 weeks of gestation. Previous studies show that EPA and DHA inhibit muscle formation but promote adipogenesis. Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. The purpose of this study was to determine if STF’s model is an effective way to increase individuals’ access to fresh fruits and vegetables and increase their potential to meet the United States Department of Agriculture’s Food Patterns (USDA-FP) for to fruit and vegetable consumption. Environmental contamination is a public health concern. In particular persistent organic pollutants like Polychlorinated Biphenyls (PCBs) have been associated with multiple chronic inflammatory diseases, including non-alcoholic fatty liver disease (NAFLD). NAFLD prevalence has steadily increased and is expected to continue to rise with an estimated 25% of the world’s population and 80-100 million people affected in the United States alone. We analyzed the energy content of seeds of Texas doveweed (Croton texensis) obtained from the crops of mourning doves (Zenaida macroura) collected from plains-mesa sand-scrub habitat in Eddy and Lea counties, New Mexico. Seeds were removed from crops and dried for 48 hours at 60°C to remove moisture and to standardize masses. Seeds were then analyzed for gross caloric value (i.e., energy content) in an oxygen bomb calorimeter. Energy content of seeds of Texas doveweed was greater than many seeds previously reported from the diet of mourning doves.

Adults living in food insecure households consume fewer fruits and vegetables than adults living in food secure households (Hanson & Connor, 2014). The purpose of this study was to examine differences in fruit and vegetable behaviors (intakes; perceptions) of parents of elementary school children by food security status (food secure compared to food insecure; fully food secure compared to not fully food secure) in rural, Appalachian Mississippi. Recently published scientific articles have led to mixed nutritional advice on dietary saturated fatty acids. Lesser et. al (2007) identified that mixed conclusions in scientific articles on sweetened beverages might be attributed industry funding, as articles funded by the beverage industry are four to eight times more likely to report conclusions in favor of the sponsor’s products. This thesis applies Lesser’s methods to determine whether industry funding influences the inconsistent conclusions on saturated fatty acids. Utilization of flax oil is new to the livestock industry, and limited research has been done to see the benefits of feeding the highly unsaturated oil to both dairy calves and lactating cows. Two studies were conducted to evaluate the potential benefits of flax oil as a lipid supplement. The first study compared the supplementation of two plant based oils to growing dairy calves.
