Soy-derived ingredients are commonly added as auxiliary components to a diverse range of food products. The versatile end-applications of commercially processed soy ingredients is concerning for the safety of allergic consumers. Immunological detection of soy proteins in food matrices has some drawbacks, including loss of epitope binding and matrix masking. Therefore, the aim of this study was to assess naturally incurred matrices with an existing liquid-chromatography tandem mass spectrometry (LC-MS/MS) workflow to determine the recovery of total soy protein.

Recent studies continue to demonstrate the potential of edible insects as a protein base to obtain bioactive peptides applicable for functional food development. This study aimed at identifying antihypertensive, anti-glycemic, and anti-inflammatory peptides derived from the in vitro gastrointestinal digests of cricket protein hydrolysates. After sequential fractionation, the protein digest subfraction containing the lowest molecular weight (<0.5 kDa), hydrophobic (C18) and cationic peptides (IEX) was found responsible for the most bioactivity. The cationic peptide fraction significantly reduced (p < 0.05) α-amylase, α-glucosidase, and angiotensin converting enzyme (ACE) activity in vitro, and also inhibited the expression of NF-κB in RAW 264.7 macrophage cells. A total of 28 peptides were identified with mass spectrometry (LC–MS/MS) and de novo sequencing from the potent fraction. Three novel peptides YKPRP, PHGAP, and VGPPQ were chosen for the molecular docking studies. PHGAP and VGPPQ exhibited a higher degree of non-covalent interactions with the enzyme active site residues and binding energies comparable to captopril. Results from this study demonstrate the bioactive potential of edible cricket peptides, especially as ACE inhibitors.

If mashing is conducted at 62 to 63˚C, a higher maltose composition is obtained, and the limit is of fermentation rate is higher. The quality control of edible sunflower oil is monitored through several stages, from unrefined oil, during the whole refining process as well as the bottled oil. Initially is checked the unrefined oil by means of analyzing its origin, enabling us to understand what the origin of the oil is. Subsequently are checked the compounds that need to be removed from the sunflower oil in the refining process. We also pay special attention to the preservation of some compounds present in the unrefined oil. The methodologies applied for oil quality control are physical- chemical and microbiological methods.

This paper aims to analyze the impact of Covid-19 on cow’s milk production in Gjilan region. It is a descriptive and quantitative survey. The random sampling technique was used to select the respondents of 71 dairy farms in three municipalities of Gjilan (Vitia, Kamenica, and Gjilan). Interviews include farms where 5-78 dairy cows are bred. Data on milk production, farm expenses, and returns for each farm were recorded during the period February- April 2020 and a comparison was performed with the same period for 2019. This field experiment was designed to assess the effect of rootstocks M9 and MM106 on leaf surface in two different apple cultivars Idared and Granny Smith. This study focuses on the analysis and characterization of anthocyanins from Raspberry fruit (Rubus idaeus L.). The fresh Raspberry fruits were extracted with the solvent of EtOH 96% /0.1% HC l (1:1, ratio) at room temperature for 4 h in the dark. The extraction process was the important step in the isolation and identification of anthocyanins. For this purpose, anthocyanin contents in Raspberry fruits were determined with UV-Vis Spectroscopy. The results showed that the total anthocyanin content (expressed as cyanidin-3-glucoside) in the extract was 277.2 mg/L, which is equivalent to 9.33 mg total anthocyanin per gram of dry material.

This study examined the physicochemical properties of seven under-exploited plant oils in Nigeria, namely; Hevea brasiliensis seed oil (HBSO), Prunus dulcis seed oil (PDSO), Afzelia africana aril cap oil (AAACO), Jatropha curcas seed oil (JCSO), Sesamum indicum seed oil (SISO), Canarium schweinfurthii seed oil (CSSO) and Hura crepitans seed oil (HCSO). Characteristics such as colour, percentage yield, specific gravity, freezing/melting point, acid value, free fatty acid, iodine value, and saponification value were investigated. Vitex doniana is a medicinal plant commonly used in traditional medicine for the treatment of diarrhoea-related disorders.  In the present study, aqueous extract of Vitex doniana stem bark was evaluated for anti-diarrhoeal effects. Thirty albino rats of average weight 124 ± 4.35 g were distributed into five groups. Groups 1, 2, 3, 4 and 5 were orally administered 2 mL of normal saline, 2.5 mg/kg bodyweight (bw) loperamide, 100, 200, 400 mg/kg bodyweight of aqueous extract of V. doniana stem bark, respectively. Mesoporous thiol modified silicas have been prepared using castor oil as a templating agent. The preparation was done through a co-condensation of 3-mercaptopropyltriethoxysilane and tetraethylorthosilicate in a 1:4 molar ratio. Physisorption studies showed that the prepared mesoporous silicas have an average pore diameter of 9 nm, pore volume of 1.0336 cm3/g and surface areas of up to 605 m2/g. FTIR confirmed the attachment of thiol groups on the surface of the prepared mesoporous silica as evidenced with an absorption band at around 2600 cm–1.
