The purpose of this study was to determine if cardiac nutrition education can affect dietary patterns of subjects participating in Cardiac Rehabilitation. Surveys, a pretest given prior to the first cardiac class and a second identical test, administered following cardiac rehabilitation classes, were conducted. Fifty-five randomly selected participants from the outpatient Cardiac Rehabilitation Program were initially given the posttest. Thirty-three of the 55 surveys were returned. Cardiac health classes offered by various health professionals included cardiac nutrition education, group nutrition classes, guest lectures on nutrition, and cooking demonstrations. The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.

The purpose of this study was to determine the needs and relationships of high-risk community members in Cocke County Tennessee to food sources. Cocke County was chosen as the representative county in this pilot study due its high percentage of residents living at or below the poverty level, which can lead to hunger and food insecurities. A community food assessment was conducted among residents participating in a commodities disbursement program in Cocke County. Two hundred seven individuals participated in this survey. The purpose of this research was to evaluate whether serum prealbumin levels would serve as a predictor of hospital length of stay for elderly orthopedic patients who underwent hip replacement surgery. The study consisted of a set of 54 patients admitted to a hospital in Bristol, Tennessee. Patients with depleted prealbumin levels, low to low/normal prealbumin levels, or normal prealbumin levels were analyzed. Data collected from a retrospective chart review included: age, length of stay, serum glucose, sodium, potassium, hematocrit, hemoglobin, BUN, creatinine, WBC, prealbumin, and post operative diet consumption. Premature birth is defined as a birth occurring at or before 37 weeks of gestation, but it encompasses so much more than just gestational age. The incidence of premature birth has increased by 27% since 1981 and it accounts for 12% of all live births. In addition, premature birth can have devastating effects on the infant if not handled properly. Therefore, all forms of treatment of preterm infants are important. The purpose of this study was to ascertain the number of registered dietitians in Tennessee who perceive they are practicing at advanced levels versus those making recommendations only. Job satisfaction according to order writing privileges was also assessed. A five question survey was sent to hospitals meeting selection criteria. Thirty-three surveys (89%) were returned. Eighty-nine percent of dietitians with order writing privileges considered themselves to be advanced level practitioners compared to 60% in the group of dietitians who did not have order writing privileges. This study was designed to compare the effects of the consumption of one omega-3 (n-3) polyunsaturated fatty acid (PUFA)–enriched egg or one conventional egg on serum lipids in physically active adults. A total of 12 adults (mean age 33 ± 7 years, mean body mass index [BMI] 24 ± 3) were recruited, and dietary treatments were randomly assigned. After a 2-week lead-in period (baseline), participants received each 4-week treatment in a crossover arrangement with a 4-week washout period between treatments. Achieving and maintaining maximal peak bone mass is critical to the prevention of osteoporosis. Adequate calcium intake during youth is a major aspect of proper bone mass development. Because of the importance of calcium, a food frequency questionnaire (FFQ) that estimates calcium intake of 10- to 18-year-old Asian, Hispanic, and white youth living in the western United States was developed. This new FFQ was shown to accurately and reliably estimate calcium intake of these youth. Accuracy among Hispanics, however, was low and requires further evaluation. The purpose of this study was to determine if the nutritional needs of high-risk community members are met by supplemental food baskets distributed by charitable groups in northeast Tennessee. Hunger is a real problem among the area's elderly population, as 14.3% of the populations live at or below the poverty level. Data were collected using observation interviews at the food bank. A nutrient analysis tool was used to analyze the nutrient content of food items in a standard food basket. The findings were compared to the recommended dietary allowance for the elderly population. The purpose of this study was to determine if there was a significant difference in weight loss, body fat, waist circumference, or diet quality among participants taking calcium or placebo supplements in a lifestyle intervention program. Three participants ages 52-55 completed the 14 week program. Two participants took 1,000 milligrams calcium while one participant took a placebo. Changes in diet were analyzed by Nutribase IV and self perception. Anthropometrics were analyzed by analysis of variance, alpha level 0.05. Purpose of this study was to compare two methods of supplementing diets in order to provide additional protein and calories to increase body weight. The study consisted of two groups from the James H. Quillen Veterans Affair Medical Center Nursing Home Care Unit. Experimental group received foods fortified with increased calories and protein at mealtimes. Control group received nutrition supplements between meals. Fifteen subjects began the study. Analysis of weight change revealed that those in the experimental group had no weight change over the four months. Subjects in the control group gained an average of 4.8 lbs of body weight …

The purpose of this study was to increase knowledge of diabetes and promote healthy lifestyle behaviors to reduce diabetes onset in a community with a relatively high incidence of type 2 diabetes. Three hundred eighty seven students grades 7 – 12 participated in the program and taste test. Changes in knowledge before and after an educational program focusing on diabetes prevention were measured by comparison of identical pre, post, and retention tests. A crossover design study was conducted to determine if reducing pain, by using alternative sites off the finger tip, would increase testing frequency and improve clinical outcome as measured by glycosylated hemoglobin. Subjects with type 1 and type 2 diabetes tested with the FreeStyle alternative-site meter (group 1) or tested with their original meter (group 2). After 3 months the subjects used the alternate meter. Testing frequency and blood glucose concentrations were recorded for the month before the study began and monthly thereafter. In 1999, the FDA approved a health claim for a relationship between intake of 25 grams of soy protein per day and reduced risk of heart disease. Literature suggests that consumers are increasingly krtowledgeable about diet and disease risk factors. This study investigated milk consumption in an elementary school and whether it could be affected by milk temperature and/or nutrition education. This study was of interest because of the increasing amount of nutritionally related diseases, and the effect that calcium intake could have in diminishing some of those diseases. It was also of interest because the younger generation is drinking less milk and more soda, therefore setting themselves up for nutritionally related diseases later in life.

The survey investigated factors that influenced high school student participation in the National School Lunch Program. The National School Lunch program provides nutritionally balanced meals based on the Dietary Guidelines for Americans, the Recommended Dietary Allowances, and the Food Guide Pyramid. This nutrition program contributes significantly to the nutrient needs of adolescents, however, participation rates are low and students do not receive the health benefits associated with this nutrition program when they do not participate.

Androgen receptor (AR) gene CAG polymorphisms may be associated with body shape, and are associated with certain breast and prostate cancers. In addition, body shape is associated with risk for a variety of diseases, including heart disease, diabetes, and certain forms of cancer. The CAG repeat in exon l of the AR gene was quantified using Perkin Elmer Applied Biosystems GeneScan analysis software in 96 and 59 healthy Caucasian men and women, respectively, who were over the age of 50 years. The prevalence of cobalamin (Obi) deficiency among older adults is higher than among younger adults, and is estimated to be between 14% and 23%. Persistent Cbl deficiency can cause a variety of neurological deficits. Neurological dysfunction occurs commonly among older adults, raising the research question whether or not there is a relationship between the high prevalence of Cbl deficiency and neurological dysfunction among older adults.

Little is known of the elderly's ability to use a food frequency questionnaire to describe their dietary intake. This study examines the elderly's ability to reliably describe their diets and how age, education, cognitive status, and gender may affect their ability to complete and return a food frequency questionnaire. The reproducibility of the questionnaire was tested by a repeated administration among 85 participants 65 years of age and older from the Preston, Idaho, area. Correlation coefficients between nutrient scores from the first and second administration ranged from 0.48-0.79 (total population), 0.44-0.88 (males), and 0.39-0.86 (females). Subclinical vitamin A deficiency was assessed in 65 Hispanic children attending four migrant Head Start programs in Utah. Subjects aged 2 to 6 years (median 3 years 10 months) were examined for evidence of vitamin A deficiency by conjunctival impression cytology. Biochemical indices for serum vitamin A, retinol-binding protein, zinc, and iron were performed.
Of eight children (12.5%) with subclinical vitamin A deficiency, one child had a marginal serum vitamin A of 11 μg/dl. Retinol-binding protein concentrations were significantly lower in two subjects with abnormal conjunctival impression cytology. Serum zinc, which when low can mimic signs of ocular vitamin …

This study investigates the assumption that dietary restriction leads to the development of binge eating in culimia nervosa (BN). Bulimic women reporting an onset of binge eating prior to dieting (n=20) were compared to women reporting an onset of dieting prior to binge eating, using similar age subjects. Results suggest that onset of binge eating prior to dieting in BN is associated with earlier onset of binge eating, higher BMI, and improved response to cognitive-behavioral treatments at 6 month follow-up.
