Indonesian Journal of Public Health Nutrition (IJPHN)

Fulfilled nutritional needs play an important role at school age. The beginning of nutritional problems occurs due to knowledge factors, so it is necessary to implement efforts to provide information about balanced nutrition. Nutrition education research using lecture and puzzle game methods was conducted at SDN Pakintelan 01 aimed at determining changes in the level of knowledge and attitudes of students regarding balanced nutrition. The type of research is Quasy Experiment and uses a pretest-post test design with control group design. The sampling technique uses stratified random sampling. Improving Nutrition Screening Practice In The Hospitalized Heart Failure Patient Population, Amanda J. Bourgeois Jan 2024

Improving Nutrition Screening Practice In The Hospitalized Heart Failure Patient Population, Amanda J. Bourgeois

DNP Projects

Background: Heart Failure is a disease known to affect nearly 6.5 million adults in the United States. Characterized by recurrent hospitalizations, heart failure significantly contributes to morbidity, mortality, and healthcare costs in the United States and worldwide. Because malnutrition is prevalent in the heart failure population, healthcare providers must perform nutritional assessments on admission to intervene in the case of malnutrition, prevent deterioration, and improve patient prognosis. Without intervention and early identification of malnutrition, heart failure hospitalizations will remain a significant problem.

Purpose: The purpose of this study is to evaluate the effect of an evidence-based educational program for cardiac …

What Is The Satisfaction Of Youth Participating In A Pilot Reading And Food-Based Stem Education Program In Rural Appalachian Mississippi?, Meagan Smith

Honors Theses

Science, technology, engineering, and mathematics (STEM) education is a vital subsection of primary education which focuses on imparting knowledge to foster STEM literacy and ultimately bolster the workforce of STEM related fields (Holmlund, 2018). Due to both geographic and socioeconomic challenges, STEM education in rural areas suffers from a lack of engaging learning opportunities and contributes to a shortage of STEM professionals originating from rural areas (Munn, 2019)(Murphy, 2020). Rural areas such as Calhoun County, MS, where the pilot program associated with this thesis was conducted, do not have the means to support interactive learning institutions such as aquariums and …

Food Allergy Education In The Hospitality Industry, Hayley Stull

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Food allergies affect thousands of people, because hospitality foodservice workers come into contact with the public, it is necessary that they need to be fully trained to ensure the safety of the public. There is a lack in the consistency of training specifically concerning food allergies for food service workers across all states in the U.S. There are previous forms of educational tools concerning food allergies …

Cooking Frequency Associated With Dietary Quality In Icook-4h Youth Participants At Baseline, Amber D. Ford, Sarah E. Colby, Marissa Mcelrone, Lisa Franzen-Castle, Melissa D. Olfert, Kendra K. Kattelmann, Adrienne A. White

Health and Nutritional Sciences Faculty Publications

Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.
Objective: Determine baseline SE and CF and the associations with dietary quality and body mass index (BMI) of youth enrolled in iCook 4H.
Methods: Youth (n=228, …

This manuscript describes the development of a “learn by actively participating” curriculum for youth and their adult caregivers (dyad pair) to increase gardening skills, culinary competence, and family meal time. The curriculum was developed by integrating “iCook 4-H” and Junior Masters Gardener “Health and Nutrition from the Garden”, and “Essential Elements of 4-H Youth Development” curriculums with additional resources for gardening activities from the USDA’s My Plate and garden-based recipes. Expert reviewers (n = 11) provided feedback on the curriculum content, session structure, dosage, age appropriateness, and balance of the three focused areas. Seven family dyads (n = …

Impact Of Staff Education On Geriatric Polypharmacy, Valerie Ikemefuna Jan 2017

Impact Of Staff Education On Geriatric Polypharmacy, Valerie Ikemefuna

Walden Dissertations and Doctoral Studies

Polypharmacy, the simultaneous use of multiple drugs to treat a single ailment or condition, is a

major health problem among the elderly population that contributes to adverse drug side events,

health risks, hospital readmissions, morbidity, and mortality. Therefore, a staff education

program geared toward reduction of such adverse drug events was implemented at a single site.

The purpose of the project was to determine if the staff education program would increase

knowledge of adverse drug events due to geriatric polypharmacy. The Orem theory provided the

theoretical support for the project, and the Iowa model guided the evidence-based practice

change process. …

Portion Size Communication By Means Of Package Design, Tami J. Strickland Dec 2015

Portion Size Communication By Means Of Package Design, Tami J. Strickland

Graduate Theses and Dissertations

This qualitative study assessed consumers’ current methods of determining portion sizing of chicken products and examined their perceptions of how effectively three package designs communicate portion size. Everett M. Rogers’ Diffusion of Innovations (DI) Theory analyzes the characteristics of the consumer of the innovation (adopter) and the impact these characteristics have on adopting new innovations. The innovation in this study will be the prototype packaging. Focusing on Rogers’ adopter characteristics and defined proprietary consumer segmentation characteristics, this study will be pivotal for future package design projects targeting nutrition education.

Focus group questions were scrutinized through a pilot study and revised …

The Impact Of Parent Education On Parental Feeding Practices, Larra Kolby Brawley

Graduate Theses and Dissertations

This research looked at the potential impact that parent education may have on the feeding practices of parents of young children. Since eating behaviors are a national concern for both children and adults, it's important to examine how we can create not just healthier children but, as a result, healthier adults. This study utilized an intervention that was an adapted version of a healthy eating curriculum created by Sesame Workshop and the California WIC association with the intention of improving parental feeding practices through a behavior-based approach. Previous research with this curriculum has addressed only low-income populations, with a relatively …

Efficacy Of A Nutrition Education Program Designed For Grades K-3 Piloted In Johnson County Schools., Allison Nicole Lowry

Electronic Theses and Dissertations

The purpose of this study was to increase the nutrition knowledge of elementary school students by implementing nutrition education lessons. The subjects included 49 kindergarten through third grade students in Johnson County, Tennessee during the fall of 2004. Knowledge increase was measured by pretest and posttest scores. The tests were analyzed by paired t-tests. While all students showed an increase in mean score, kindergarten and first grade students did not show a significant increase in posttest scores. However, second and third grade students showed a significant increase in posttest scores, indicating an increase in nutrition knowledge.
