Pediatric food allergies are a growing public health concern in America due to their potential association with long-term nutritional impacts and reduced quality of life in those affected. Oral food challenges (OFCs) are considered the gold standard for clinical food allergy diagnosis, but few studies have examined if passing or failing an OFC affects overall diet quality in infants. This clinical observational study examined differences in diet quality, measured by the Healthy Eating Index (HEI), among 39 children aged 0–6 years who participated in OFCs at ProMedica Allergy and Immunology Clinic in Perrysburg, Ohio. Purpose: Medically tailored meal (MTM) programs generally demonstrate meaningful health outcomes for patients. There is a need to evaluate novel MTM delivery methods to understand participant and organizational-level impacts. The objectives of this study were to assess a shipped MTM pilot intervention, including 1) initial and ongoing client reach, 2) effects on clients’ health and behaviors, and 3) staff members’ perceptions of factors that influence intervention maintenance.
Methods: Based on the reach, effectiveness, adoption, implementation, maintenance (RE-AIM) framework, the mixed methods design included quantitative data collected from participants and qualitative data collected from MTM provider staff. The pilot took place …

Latine older adults face disproportionate risk of chronic nutrition-related conditions and food insecurity, which can exacerbate or contribute to mental health-related concerns. Cultural stigma toward mental illness can result in Latine clients, especially older adults, somatizing symptoms and focusing on physical health goals in counseling. Despite these intersecting needs, counselors often overlook their clients' physical health goals due to limited training and the assumption that medical providers alone should address these needs. This article advocates for the integration of basic, culturally responsive nutrition information into counseling practice to support client well-being while remaining within the scope of practice. Background
To examine physical activity (PA) among US military servicemembers (SM) with overweight and obesity (OW/OB) and if they meet Physical Activity Guidelines (PAG). To assess differences in PA by sex and associations between PA and body composition.
Methods
PA duration and intensity were objectively collected via accelerometers and self-reported daily average via self-report International Physical Activity Questionnaire (IPAQ) among US active-duty SM (n=113, 58% female, Mean BMI = 33.3 ± 3.9 kg/m2). The U.S. social welfare system includes programs aiming to increase access to nutritious food to reduce nutrition insecurity. However, studies suggest that immigrants continue to face disproportionate risks of nutrition insecurity and may face barriers to enrollment due to legal status. This study, using secondary data from the 2023 California Health Interview Survey, examines the associations between food stamp participation, food insecurity, and clinical diagnosis of diabetes among adult U.S.-born, naturalized, and non-citizen adults in California. The findings suggest that those enrolled in food stamps are more likely to report food insecurity than those who are not enrolled, and that …

The denial, concealment, or omission of disordered eating behaviors has received limited attention in the eating disorder literature, partly due to the lack of reliable and valid measures. This study re-examined the factor structure of the Denial of Disordered Eating Behaviors Scale (DDEBS-12) and tested measurement invariance across gender identity, racial identity, and levels of disordered eating in a non-clinical undergraduate sample (N = 3285). Confirmatory factor analyses did not support the original unidimensional structure. Instead, a seven-item model assessing denial of dietary restriction demonstrated the best fit and was renamed the DDEBS-restriction. The revised scale showed good internal consistency …

The prevalence and incidence of Non-Alcoholic Fatty Liver Disease (NAFLD) is rising. In the United States alone, the prevalence of NAFLD is currently 38% and there has been a 50% increase over the last three decades. The present study investigated the role of ultratrace mineral deficiencies, specifically magnesium (Mg) and zinc (Zn), and if so, what nutritional interventions could be made to ameliorate or protect against the development of NAFLD. The role of trace and ultratrace minerals in pro-inflammatory cytokine pathways contributing to NAFLD, specifically Interleukin-6 (IL-6), were investigated. Kid Eats is a free app for iPad encouraging children and parents to cook together at home using fruits and vegetables. A preliminary study with parents and children showed children enjoyed using the app and that it provided useful information to support children’s involvement in the kitchen, including guidance around safety concerns. Every family in the study voluntarily completed at least one of the recipes with their child at least once following the in-person activity. Parents reported that their children actively asked to cook the recipes from the app and felt the app helped increase their time spent cooking with …

As the search for innovative mental health treatments expands, dietary interventions have emerged as a promising approach for alleviating depressive symptoms. This thesis presents a meta-analysis of randomized controlled trials (RCTs) examining the efficacy of whole-of-diet nutritional interventions in reducing depression symptoms among adults. Grounded in Bronfenbrenner’s Bioecological Model and Engel’s Biopsychosocial Model, this study explores the intersection of biological, psychological, and social factors that influence mental health outcomes. A systematic review identified six eligible RCTs assessing the impact of healthy dietary patterns, including the Mediterranean diet and other plant-based interventions, on depression symptoms. Introduction: This project aimed to create a cookbook designed to help individuals receiving food assistance through programs like WIC, FDPIR, TEFAP, SNAP, and local food pantries, utilize beans, peas, and legumes in their meals. The focus was on providing easy, accessible recipes using six different types of beans to improve diet quality.
Methods: The cookbook was developed considering limited cooking skills, equipment, literacy, and time that may be barriers to preparing healthy food for low-income adults. Selected recipes were compiled into an educational cookbook.

The Quality Improvement Team proposed an intervention to increase enrollment in the Food Security Program, a six-month initiative that provides vouchers redeemable for fruits and vegetables. Long-term impacts of this Program include an improved food economy and enhanced patient disease management autonomy. This project aimed to increase the percentage of eligible adult medicine clinic patients enrolled in the Food Security Program by 25%, or 11 patients per month, based on the mean enrollment for the first four months of the Program (May to August) of nine patients. Purpose: The purpose of this research study was to examine the effect of an innovative, online COVID-19 interprofessional educational module among health and allied health professions students.
Methods: This study utilized a pre- and posttest design with quantitative and qualitative data collected winter 2023 and spring/summer 2023 semesters, and consisted of health and allied health professions students (N=143) from three Midwestern, urban, public universities. Background: Nutrition education during early childhood that includes experiential learning, modeling, and family engagement can support lifelong healthy eating habits.
Purpose: The present study examined the impact of a nutrition-integrated, 32-week supplemental curriculum entitled Growing Healthy Minds, Bodies, and Communities on children’s exposure to fruits and vegetables, ability to identify fruits and vegetables, liking of fruit and vegetables, and teachers’ perceptions of the curriculum.
Methods: A pre- and post- fruit and vegetable pictorial Likert survey was administered to 261 Pre-K4 children. To investigate teachers’ perceptions of the curriculum, a post-intervention focus group was conducted with 19 teachers.

Executive control in preschool age has been shown to predict important outcomes across development for youth, indicating that good, foundational EC abilities are associated with successful development in later life. This thesis aims to explore the intricate relationship between emotional eating and obesity among adolescents, with a focus on identifying emotional triggers and assessing their psychological impact. Utilizing a cross-sectional study design at a university in southern California, data were collected from two adolescents aged 13-18 years. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. Over the past two decades, the number of older adults in the U.S. who are food insecure has more than doubled (Ziliak & Gunderson, 2022). The United States confronts persistent child welfare issues rooted in poverty. The age-old debate vacillates between advocating personal responsibility and bolstering social safety nets. Current welfare programs, aiming to mitigate child poverty, often fall short given the deep nexus of poverty and child maltreatment. This paper probes the intricate ties between child poverty and welfare, emphasizing state legislative variances, inherent system paradoxes, and potential policy enhancements. Exploring historical contexts, existing societal frameworks, and future reforms, this research emphasizes the urgency for all-encompassing solutions. These should tackle poverty’s core while fortifying child welfare, safeguarding the well-being of forthcoming American generations.

Food insecurity is prevalent and associated with poor health outcomes, but little is known about its geographical nature. The aim of this study is to utilize geospatial modeling of individual-level food insecurity screening data ascertained in health care settings to test for neighborhood hot and cold spots of food insecurity in a large metropolitan area, and then compare these hot spot neighborhoods to cold spot neighborhoods in terms of the CDC's Social Vulnerability Index. Whole grain foods have been associated with health benefits, yet are underconsumed by youth compared to recommendations. This study evaluated impacts of a school-based curriculum among children in grades 3-5 to address barriers to intake (2018-2019) (n = 1,748). Surveys before and after the program indicated youth were more willing to try and better able to identify whole grain foods. Open-ended responses confirmed findings regarding increased ability to identify whole grain foods, increased preferences and perceptions of availability. Together, these impacts could increase the likelihood that youth can meet whole grain intake recommendations to improve diet quality and health.

This chapter reviews the literature surrounding autism spectrum disorders (ASD) and their relation to gastrointestinal (GI), behavioral, neurological, and immunological functioning. Individuals with ASDs often have poor GI health, including bowel motility issues, autoimmune and/or other adverse responses to certain foods, and lack of necessary nutrient absorption. These issues may be caused or exacerbated by restrictive behavioral patterns (e.g., preference for sweet and salty foods and/or refusal of healthy foods). Those individuals with GI issues tend to demonstrate more behavioral deficits (e.g., irritability, agitation, hyperactivity) and also tend to have an imbalance in overall gut microbiome composition, thus corroborating several …

Everyone can be positively influenced by effective interventions promoting healthier food choices. A handful of recent papers have documented positive impacts on dietary quality resulting from interventions that remind people to consider health through prompt messages or subtle priming in supermarkets and in controlled, online experiments. These studies have focused on the impact of reminders on nutritional quality rather than explaining how reminders work. INTRODUCTION: US school systems underwent major upheaval, including closures, implementation of virtual and/or hybrid learning, and stringent infection mitigation protocols, during the initial phase of the COVID-19 pandemic. We aimed to examine the association between food insecurity and perceived health, perceived stress, and social determinants of health concerns among elementary schoolteachers serving predominantly low-income children during the COVID-19 pandemic.
METHODS: Brighter Bites, a nonprofit organization that weekly distributes fresh fruits and vegetables and nutrition education materials to more than 300 schools serving racial and ethnic minority populations with low income, conducts annual surveys of participating teachers to help determine subsequent …
