The nutritional knowledge, food choice, and exercise habits of an individual determine his or her overall health and life expectancy. Information on these topics enables nutrition educators to develop strategies to improve knowledge and to tailor educational efforts which affect a large number of persons. Poor health in America today is an ever present reality. Heart disease, cancer, diabetes mellitus, cerebrovascular diseases, renal diseases, and pulmonary diseases are causes of death related in part to lack of nutritional knowledge and poor eating and exercise habits. A few of these diseases are chronic in nature and are the most deadly.

Conjunctival Impression Cytology Assessment Of Vitamin A Status Of Migrant Children, Laura Nihan

Subclinical vitamin A deficiency was assessed in 65 Hispanic children attending four migrant Head Start programs in Utah. Subjects aged 2 to 6 years (median 3 years 10 months) were examined for evidence of vitamin A deficiency by conjunctival impression cytology. Biochemical indices for serum vitamin A, retinol-binding protein, zinc, and iron were performed.

Of eight children (12.5%) with subclinical vitamin A deficiency, one child had a marginal serum vitamin A of 11 μg/dl. A Comparison Of Binge Eating Versus Dieting Onset In Bulimia Nervosa, Carrie Fenna

This study investigates the assumption that dietary restriction leads to the development of binge eating in culimia nervosa (BN). Bulimic women reporting an onset of binge eating prior to dieting (n=20) were compared to women reporting an onset of dieting prior to binge eating, using similar age subjects. Results suggest that onset of binge eating prior to dieting in BN is associated with earlier onset of binge eating, higher BMI, and improved response to cognitive-behavioral treatments at 6 month follow-up.
