Background—Stearoyl-CoA Desaturase 1 (SCD1) is a well-known enhancer of the metabolic syndrome. The purpose of the present study was to investigate the role of SCD1 in lipoprotein metabolism and atherosclerosis progression.
Methods and Results—Antisense oligonucleotides were used to inhibit SCD1 in a mouse model of hyperlipidemia and atherosclerosis (LDLr-/-Apob100/100). In agreement with previous reports, inhibition of SCD1 protected against diet-induced obesity, insulin resistance, and hepatic steatosis. However, unexpectedly SCD1 inhibition strongly promoted aortic atherosclerosis, which could not be reversed by dietary oleate. Background: Total body water (TBW) estimations have been used to estimate body composition, particularly fat-free mass, to aid in nutritional interventions, and to monitor hydration status. In the past, bioimpedance spectroscopy (BIS) devices have been used to estimate TBW. Previous investigations have examined the validity of the XiTRON 4000B (XiTRON Technologies) BIS device for estimating TBW. Recently, a new BIS device (Imp™ SFB7) has become available, claiming greater precision when estimating TBW. Color Me Healthy (CMH) is an interactive nutrition program designed for preschool aged children in child care settings. The current study examined if CMH increases the consumption of fruit and vegetables. Child care centers were randomly assigned to one of two conditions; children (n=165) in ten centers received CMH and children (n=98) in seven centers acted as controls. Consumption of fruit and vegetable snacks was assessed at baseline, one week post-intervention and 3 months post-intervention. Hierarchical linear modeling determined that group assignment was the only significant predictor of fruit and vegetable consumption. Children who were exposed to the CMH program …

Purpose: To compare selected food /nutrient consumption between families that educate their children at home with those that educate their children in the public school system.
Methods: The study sample included 112 children aged 7-11 years in Fayette Co Kentucky. The children were divided into groups according type of education. There were 65 home-schooled children and 47 children who attend public school. Subjects recorded their dietary intake for one week. The data were analyzed using Nutrition Data Software for Research (2006). Comparisons were made for the intake of selected nutrients using two tailed independent sample t-tests.

Background: Exercise and high-protein/reduced-carbohydrate and -fat diets have each been shown separately, or in combination with an energy-restricted diet to improve body composition and health in sedentary, overweight (BMI > 25) adults. The current study, instead, examined the physiological response to 10 weeks of combined aerobic and resistance exercise (EX) versus exercise + minimal nutrition intervention designed to alter the macronutrient profile, in the absence of energy restriction, using a commercially available high-protein/low-carbohydrate and low-fat, nutrient-dense food supplement (EXFS); versus control (CON).

The functional beverage Celsius®, has recently been shown, after acute and chronic (28 days) consumption, to increase resting metabolism and serum blood markers of lipolysis in healthy, college-aged men and women. The purpose of this study was to examine the combined effects of a 10-week exercise program while consuming Celsius® on body composition and cardiorespiratory fitness changes in sedentary men and women.

The purpose of this study was to determine if patients with head or neck cancer receiving radiation were satisfied with the nutrition counseling they were receiving and if they obtained any benefit. Radiation to the head or neck region promotes side effects such as taste changes and chewing and swallowing difficultly that decrease food and fluid intake. A reduction in nutrients leads to weight loss, and weight loss in cancer patients increases the risk of morbidity and morality as well as decreases quality of life. Plant sterol esters (PSE) reduce plasma low-density lipoprotein cholesterol concentration by inhibiting cholesterol absorption. Previous work in our laboratory indicated that PSE containing stearic acid (SA), compared to linoleic acid, were significantly more effective at reducing cholesterol absorption. We tested the cholesterol lowering properties of PSE containing fatty acids from beef tallow, a natural and abundant source of SA. Male hamsters were fed diets containing 0.0%, 0.5%, 1.0%, or 5.0% beef tallow PSE for 4 weeks. Dose-dependent reductions (P < .05) were observed in cholesterol absorption, liver esterified cholesterol, and plasma nonhigh-density lipoprotein cholesterol concentration; hamsters fed 5.0% PSE exhibited reductions of 56%, 98%, and 38%, respectively, compared to controls. Concurrent increases (P < .05) in fecal sterol excretion were also observed. In a second hamster study, the cholesterol-lowering properties of beef tallow PSE were compared to hamsters fed molar equivalents of free plant sterols (PS) and free SA. Beef tallow PSE were significantly more effective at reducing liver and plasma cholesterol concentrations than PS and SA consumed individually. Whether PS and SA act through independent or synergistic mechanisms will require further research, although the present findings support the use of dietary PSE containing beef tallow fatty acids in the management of hypercholesterolemia.

A review of literature was conducted to identify risk factors and prevention strategies for childhood obesity. Factors contributing to childhood obesity include poor food choices, physical inactivity, and genetics. Complications of obesity include respiratory, musculoskeletal, cardiovascular, and endocrine diseases, cancer, gallbladder disease, poor health status, depression, low self-esteem, and social withdrawal. Since childhood obesity, largely due to the environment that children live in today, is increasing in the United States, strategies must be implemented that will contribute to the prevention of childhood obesity. Changes that promote a healthy environment must involve all aspects of society to ensure that the prevention …

The present study was conducted with the use of data from the Freshmen Health Study, a longitudinal study of college freshmen aged 18 that examined change in diet, physical activity, and weight during the first year of college at Utah State University (USU). Participants were assessed at different data collection periods including the beginning and end of their first semester attending USU. Participants' height and weight were measured and they were given a self-administered Food Frequency Questionnaire at each data collection. This study investigated genetic predictions for amino acid biosynthesis and catabolism by Lactobacillus helveticus CNRZ 32, a commercial cheese flavor adjunct that reduces bitterness and intensifies flavor notes. Conversion of amino acids into volatile and nonvolatile flavor compounds by L. helveticus and other lactic acid bacteria in cheese is thought to represent the rate-limiting step in the development of mature cheese flavor and aroma. Education, however, could only be effective if the people did indeed alter their dietary behavior. This thesis studied the effect that educating a consumer can make on the consumer’s diet. The goal of this study was to determine the effectiveness of insulin delivered via multiple injections or by infusion via a pump on the quality of life in adult insulin-dependent diabetics. Four parameters, namely hemoglobin A1C (3 month average blood sugar levels), self-reported healthy eating habits demonstrated by consumption of 3 meals/3 snacks everyday, frequency of exercise of daily 30 min or longer duration and opinion of quality of life, were evaluated in patients receiving either insulin injections or infusion.

Soft drink vending machines are available in many schools across the nation. Some schools have recently removed soft drink vending machines and replaced them with milk vending machines. The purpose of this study was to investigate high school students’ (n = 84) perceptions of the shift from soft drink vending machines to milk vending machines in schools.

Turnip greens (Brassica rapa) are commonly consumed in the southern U.S.A. Typically, they have a bitter taste, which increases with maturity, probably because of increased levels of glucosinolates. While glucosinolate degradation products have been isolated from various members of the Brassica family, the effect of variety and maturity on these products has not been determined. Caloric restriction increases stress resistance and lifespan in Drosophila melanogaster and other species. The roles of individual nutrients in stress resistance and longevity are largely unknown. The vitamin biotin is a potential candidate for mediating these effects, given its known roles in stress signaling and gene regulation by epigenetic mechanisms, i.e., biotinylation of histones. Here, we tested the hypothesis that prolonged culture of Drosophila on biotin-deficient medium increases stress resistance and lifespan. BACKGROUND: Dietary calcium may play a role in the stimulation of lipolysis and the inhibition of lipogenesis, thereby reducing body fat.
OBJECTIVE: The aim was to determine whether an association existed between change in percentage body fat (%BF) or fat mass and calcium intake in children aged 3-5 y.
DESIGN: A secondary analysis of a 1-y randomized calcium and activity trial in 178 children was conducted. Three-day diet records and 48-h accelerometer readings were obtained at 0, 6, and 12 mo. Body composition was measured by dual-energy X-ray absorptiometry at 0 and 12 mo.

Consumption of plant sterol esters reduces plasma LDL cholesterol concentration by inhibiting intestinal cholesterol absorption. Commercially available plant sterol esters are prepared by esterifying free sterols to fatty acids from edible plant oils such as canola, soybean, and sunflower. To determine the influence of the fatty acid moiety on cholesterol metabolism, plant sterol esters were made with fatty acids from soybean oil (SO), beef tallow (BT), or purified stearic acid (SA) and fed to male hamsters for 4 wk. The Effects Of Branched-Chain Amino Acid Supplementation On Indirect Indicators Of Muscle Damage And Performance, Beau K. Greer

The purpose of this study was to determine whether branched-chain amino acid (BCAA) supplementation attenuates indirect indicators of muscle damage, lowers ratings of perceived exertion, and improves aerobic performance as compared to an isocaloric, carbohydrate (CHO) beverage or a non-caloric placebo beverage. Nine, untrained males (VO2 max 36.26 2.23 ml/kg/min) performed three 90-minute cycling bouts at 55% VO2 max followed by a 15-minute time trial. Metabolic data was collected every 15 minutes during the steady-state ride, and indirect muscle damage markers were assessed pre, post, 4-hours, 24-hours, and 48-hours post-exercise. Prior studies have unequivocally established a consistent association between osteoporotic hip fracture risk and type 2 diabetes mellitus. One reason this association still remains unclear is primarily due to the limited amount of research conducted in this area. The Utah Study of Nutrition and Bone Health (USNBH) is a case-control study conducted in Utah during the period of 1997-2001 to determine risk factors for osteoporotic hip fracture. All study participants (n = 2590) were determined from Utah residents 50-90 years of age. Cases were determined from 18 Utah hospitals during 1997-2001. Cirrhosis with ascites is associated with impaired renal function accompanied by sodium and water retention. Although it has been suggested that mediators such as nitric oxide play a role in the development of renal failure in this situation, other mechanisms underlying the process are not well understood. This study examined the role of oxidative stress in mediating renal damage during the development of cirrhosis in order to understand mechanisms involved in the process. Spontaneous bacterial peritonitis is a major cause of mortality after liver cirrhosis. Altered permeability of the mucosa and deficiencies in host immune defenses through bacterial translocation from the intestine due to intestinal bacterial overgrowth have been implicated in the development of this complication. Molecular mechanisms underlying the process are not well known. In order to understand mechanisms involved in translocation of bacteria, this study explored the role of oxidative stress in mediating changes in intestinal mucosal glycosylation and luminal bacterial content during cirrhosis. The purpose of this review is to examine the literature that has investigated mechanomyographic (MMG) amplitude and frequency responses during dynamic muscle actions. To date, the majority of MMG research has focused on isometric muscle actions. Recent studies, however, have examined the MMG time and/or frequency domain responses during various types of dynamic activities, including dynamic constant external resistance (DCER) and isokinetic muscle actions, as well as cycle ergometry. Objective — To compare documentation of two groups of clinical nutrition practitioners for evidence of the nutrition care process.
Design — This study used a comparative descriptive design. A retrospective chart review was conducted on all nutrition documentation in closed patient records. Documentation of two groups of nutrition practitioners (institution A = practitioners who received initial orientation and routine reinforcement in use of nutrition care process standards; institution B = practitioners who received orientation in use of a further assessment and medical nutrition therapy intervention procedure) was compared for evidence of a six-step nutrition care process.

The purpose of the study was to determine if nutrition knowledge would increase, indicated by improvements in pretest and posttest scores, following implementation of a nutrition lesson plan. The subjects included 532 fourth through eighth grade students from Johnson County, a rural county in northeast Tennessee. The lesson plans and pretests and posttests were developed to be appropriate for each grade level, with increased complexity in higher grades. The principal investigator graded the pretests and posttests and analyzed the data using SPSS. The results showed a significant improvement from pretests to posttests for all grades given a p-value of <0.05.

The purpose of this study was to determine the effects of long term walnut consumption on plasma levels of tocopherols and the inflammatory mediators interleukin-1β (IL-1β ), interleukin-6 (IL-6), tumor necrosis factor-a (TNF-a) and Creactive protein (CRP) in healthy participants. Ninety participants were recruited into a 12-month randomized crossover intervention study, which consisted of two phases, the walnut supplemented diet and the habitual diet. Participants were randomly assigned to either of these two phases for six months and then switched to the other phase for the second six months.
