The goal of this study was to determine how the date of harvest impacts the quality characteristics of Aronia mitschurinii (A. K. Skvortsov and Maitul.) ‘Viking’ and ‘Galicjanka’ berries. Aronia berries were collected from farms in the Midwestern and Northeastern United States over seven weeks of harvest during 2018, 2019 and 2020. The berries were analyzed for total phenol, anthocyanins, proanthocyanins, sugar, and acid. Aronia berry composition modestly deviated between each year of the study. Berries harvested in 2018 had the highest total phenols and proanthocyanidins, both increasing in content from weeks 1–5 from 15.90 ± 3.15–19.65 mg gallic acid …

Electrodialysis with bipolar membrane (EDBM) is promising to recover phospholipids (PLs) from sweet whey and whey protein concentrate (WPC), as it promotes lipoprotein complex formation following a decrease in pH and ionic strength. The aim of this work was to study the impact of dilution factor (without dilution, with a 2X, 4X and 6X dilution) after EDBM on the process performances. For both products, a 4X dilution, which cor- responds to a decrease in ionic strength of 81.4 ± 1.5 % for sweet whey and 79.4 ± 0.4 % for WPC, seemed sufficient to maximize lipoprotein complex formation as a …

Background: There is increasing interest in the use of eliciting doses (EDs) to inform allergen risk management. The ED can be estimated from the distribution of threshold doses for allergic subjects undergoing food challenges within a specified population. Estimated ED05 values for cow's milk (the dose expected to cause objective allergic symptoms in 5% of the milk-allergic population) range from 0.5 mg to 13.9 mg cow's milk protein. We undertook a single-dose challenge study to validate a predicted ED05 for cow's milk of 0.5 mg protein.

Researchers tested several vegan egg replacements in cookies to find one that resulted in product most similar to a cookie with eggs. It was hypothesized that flaxseed would be the best overall scoring egg replacement for vegan, egg-free chocolate chip cookies. Each egg replacement was tested in a controlled environment while recording the times and temperatures of each baking trial. The flaxseed egg replacement cookie scored closest to the control cookie after being evaluated.

The purpose of this study was to create a completely low-carb alternative to a conventional pizza crust, lower the sugars/carbs, provide nutritional value, and still produce an acceptable and palatable result. The target population is people who want to live a whole food driven diet, those who are plant-based, and for those who have high cholesterol and heart disease.

Researchers set out to create the perfect Macaroni and Cheese combination. Measuring stretchability, moisture content, as well as cheese combinations. Four paired comparison trials were carried out in a controlled college campus environment. Researchers found that finding the perfect cheese mix is more difficult to accomplish than anticipated.

The Standard American Diet includes high intakes of processed foods and saturated fat. The Standard American Diet has been implicated in contributing to the health challenges experienced in the United States such as obesity and chronic pain. The goal of this experiment is to reduce the fat content of cream sauce and receive similar scores among a group of panelists/taste testers in flavor, texture, appearance, and overall likeability to a full fat sauce. Cercospora spp. and Corynespora spp. are two common foliar fungal pathogens in Arkansas and other soybean-producing areas. Two primary diseases caused by Cercospora spp. are Cercospora Leaf Blight (CLB, caused mainly by C. kikuchii) and Frogeye Leaf Spot (C. sojina). Over time, many fungicides used to combat these diseases have become ineffective as the pathogens have developed a resistance to them. The class of the fungicide in question is Triazoles [Demethylation Inhibitors (DMI)–FRAC 3]. Fifteen isolates consisting of Corynespora cassiicola, Cercospora sojina, and Cercospora flagellaris were tested to determine baseline sensitivities using serial dilutions (0, 0.01, 1, 10, 50 mg/L) …

Whey protein isolate supplementation has been recognized as having potential for regulating appetite, thereby potentially improving mood and food intake. The objectives of this project were to 1) analyze the effects of high-quality whey protein intake on overall diet and 2) identify and examine a correlation between tryptophan levels and mood regulation. Rates of obesity and other health disparities are exceptionally high in rural Appalachian counties compared to the nation as a whole. One causal factor of these health disparities in Appalachian counties is the inequitable allocation of healthy food. Food insecurity and the local food environment are large drivers for obesity experienced by Martin County, Kentucky residents. Successful socioecological model (SEM) and policy, systems, and environmental (PSE) interventions have shown promising results in reducing obesity and enhancing food security in this population. The Apiaceae family of plants contains over 3,500 species, many of which are used as food crops: vegetables (carrot, parsnip, celery, etc.), herbs (cilantro, fennel, dill, etc.), and spices (cumin, anise, caraway, etc.). Many spices have been shown to exhibit antimicrobial properties against both bacteria and fungi. We set out to determine if the Apiaceae spice extracts currently used in our lab for anticancer studies exhibit any antimicrobial properties.
