In Koreatown, Los Angeles, one of the largest centers of Korean immigrants in the Western hemisphere, restaurant owners are constantly creating new forms of Korean cuisine that both challenge and preserve traditional methods of Korean culinary methods. Based on participant observation and semi-structured interviews conducted in Koreatown, Los Angeles in December 2020, I examine how Korean restaurant owners are navigating the current food scene while also maintaining their ethnic identity in a globalized landscape such as Los Angeles. This thesis provides an ethnographically grounded analysis of how existing regulations shape the legal recreational cannabis industry in Washington State. I examine the processes involved from seed to sale, including cultivation, processing, quality-control testing, and distribution of recreational cannabis. In June 2009, a group of masters students from the University of Gastronomic Sciences in Italy spent nine days visiting the lands of the Tevere river, travelling from its springs on Monte Fumaiolo in Emilia-Romagna to Rome by way of Umbria and the Lake Trasimeno. This article is a gastro-historic portrait of the lands of the Tevere, linking contemporary social, cultural and economic activities around food and tourism to the rich and long history of the region and highlighting persistent patterns, continuity and change.

Worries over widespread food shortages in the first few weeks of the COVID-19 lockdowns in the United States eclipsed the real hunger crisis on the horizon—one intimately tied to already existing inequalities. In the midst of the pandemic, the specter of hunger is haunting the same people it always has—the poor, the undocumented, low wage workers, the un- and under employed. It is not our supply systems that are breaking down and causing hunger, but our systems for ensuring people can access the food that exists which have been broken for a long time.

Passing Down The Rolling Pin: Lefse, Memory, And A Norwegian-American Identity, Rebecca Garbe

This paper explores the intersections between memory and food-making and how they inform a Norwegian-American cultural identity. Based on fieldwork done in June and July of 2019 in Fosston, Minnesota, I use lefse, a Norwegian potato-based flatbread, as a focal point, for analysis. I argue that lefse-making in Fosston acts as a medium through which residents engage with a collective memory of an immigrant heritage. This traditional food-making, I assert, relies on knowledge passed down through and across family lines allowing food-makers and eaters to experience an embodied connection to their cultural past. Text production indexes a set of values as semiotics are utilized to market gastronomic products. These values are referenced through the language used, various font styles and sizes, and the food being promoted. The Basque Country has become a “Culinary nation,” world-renowned for its unique culture and gastronomy. This paper looks at how semiotics are used to create value in marketing locally-made wine and cider. A ubiquitously seen Basque font is used for both cider and wine to reference traditional components of Basque culture, while font size on Rioja Alavesa wine labels stresses the distinction between neighboring regions. American Jews, specifically those who do not observe, often turn towards food as a performance of Jewish identity, both publicly and privately. Longing for roots, these Jews reach for a piece of Jewish culture that can make them not only feel Jewish, but also grounded in a longstanding tradition that explicitly ties Judaism to a dynamic food culture. In doing so they invent traditions, creating habits sometimes loosely based in prescribed or familial tradition, sometimes not at all. In this way, food, through invented traditions, allows modern non- observant American Jews to make their Jewish identity tangible.

In December 2018, the United Nations adopted the Declaration on the Rights of Peasants and Other People Working in Rural Areas. UNDROP is the product of 17 years of struggle by La Via Campesina, other transnational agrarian movements and allies that included NGOs, states, UN mandate holders, and academics. It recognises the dignity of rural populations, their contributions to global food production, and their ‘special relationship’ to land, water and nature, as well as their vulnerabilities to eviction, hazardous working conditions and political repression. This study is an examination of how women participate in agriculture in Samoa as farmers and growers, what hardships women encounter and how they overcome these, and the organizations that influence people’s experiences. Censuses have historically undercounted the number of women in agriculture in developing countries, largely due to rigid international definitions of what counts as labor, which overlook cultural nuances, and this study aims to fill this gap in research. This dissertation examines the archaeofaunal remains from Skútustaðir, a middle to high-status farm in Mývatnssveit, Northern Iceland, to understand the experience of rural communities and their ecologies during Iceland’s transition from regulated colonial exchange to a capitalist economy during the 17th through 19th centuries. Archaeofaunal analysis is used to reconstruct changes in the ways that people herded, hunted, and fished, providing insights into how they managed their local environments for subsistence and novel contexts of exchange. Agriculture and climate change are interconnected processes, with agriculture implicated in rising green house gas emissions, deforestation, soil and water pollution, and reductions in biodiversity. Conversely, changes within ecology (including a warming climate), alter growing conditions for farmers. Farmers face changes in both temperature and precipitation, as well as an increase in adverse weather events that significantly threaten productivity and livelihoods.

In this dissertation, I explore ‘green’ urban development and urban agriculture projects from the perspective of residents of an African American majority neighborhood in Kansas City—who reside in an area referred to as a ‘blighted food desert’ by local policy makers. In Kansas City, extensive city government support exists for urban agricultural projects, which are touted not just as a solution to poverty associated issues such food insecurity and obesity, but also as a remedy for ‘blight,’ violence and crime, and vacant urban land. As the 1960s Environmental movement has grown, sustainability and justice discourses have come to the fore of the movement. While environmental justice discourse considers the unequal effects of environmental burdens, the language that frames "sustainability" is often socially and politically neutral. This thesis critically examines sustainability initiatives and practices of an urban farming organization in Florida. Based on ethnographic fieldwork in 2017, I explore the extent to which these initiatives incorporate race, ethnicity, and socioeconomic class when working to provide sustainably grown food in diverse communities.
