Journal of the Arkansas Academy of Science
Linear probability estimation and survey data are employed to quantify the influence of the lifestyles of individuals on the change in their body mass index (BMI). The analysis also explores the effects of demographic characteristics (age, gender, and ethnicity) in weight management. Results suggest evidence of association between changes in lifestyle and changes in the BMI of individuals.

Acute fatty liver of pregnancy (AFLP) is a rare disorder which is fatal if not recognized and treated early. Delivery of the feto-placental unit results in dramatic improvement in maternal liver function, suggesting a role for the placenta. However, the mechanisms by which defects in the fetus or placenta lead to maternal liver damage are not well understood and form the focus of this study. Placenta and serum were obtained at delivery from patients with AFLP, and placental mitochondria and peroxisomes were isolated. Placental mitochondrial function, oxidative stress, and fatty acid composition as well asserumantioxidants, oxidativeandnitrosative stress markers, andfatty acid analysis …

Used a population-based sample (Georgia Centenarian Study, GCS), to determine proportions of centenarians reaching 100 years as (1) survivors (43%) of chronic diseases first experienced between 0–80 years of age, (2) delayers (36%) with chronic diseases first experienced between 80–98 years of age, or (3) escapers (17%) with chronic diseases only at 98 years of age or older. Diseases fall into two morbidity profiles of 11 chronic diseases; one including cardiovascular disease, cancer, anemia, and osteoporosis, and another including dementia. Centenarians at risk for cancer in their lifetime tended to be escapers (73%), while those at risk for cardiovascular disease …

Protection Against Endothelial Inflammation By Green Tea Flavonoids, Yuanyuan Zheng
University of Kentucky Doctoral Dissertations
Endothelial inflammation is a pivotal early event in the development of atherosclerosis. Long term exposure to cardiovascular risk factors will ultimately exhaust those protective anti-inflammatory factors such as the heme oxygenase (HO) system. The HO system plays a critical role in cellular and tissue self-defense against oxidative stress and inflammation. Caveolae are membrane domains and are particularly abundant in endothelial cells, where they are believed to play a major role in the regulation of endothelial vesicular trafficking as well as the uptake of lipids and related lipophilic compounds, possibly including bioactive food components such as flavonoids. Research in this dissertation …

University of Kentucky Doctoral Dissertations
The secretory phospholipase A2 (sPLA2) family is a group of enzymes that catalyze the hydrolysis of glycerophospholipids at the sn-2 position, generating free fatty acids and lysophospholipids. The sPLA2 family has been implicated in various physiological and pathological activities. Eleven sPLA2’s have been identified in mammals, and the function of each isoform likely reflects its tissue distribution and substrate specificity. Studies in vitro indicate that Group X (GX) sPLA2 potently releases arachidonic acid (AA) and lysophosphatidylcholine from mammalian cell membranes. Interestingly, some of the biological effects mediated by GX sPLA2 in vitro …

Cardiovascular Disease Risk Factors And Associations With Indicators Of Body Fat, Diet, And Physical Activity In U.S. Children Ages 6–11, Melissa A. Masters
Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
Research was conducted to determine the prevalence of cardiovascular disease risk factors in U.S. children ages 6-11 and associations with body fat, diet, and physical activity. Data for 685 children ages 6-11 was obtained from the National Health and Nutrition Examination Survey (NHANES). NHANES data was examined to determine the prevalence of cardiovascular disease risk factors in these children, the impact of indicators of body fat on cardiovascular disease risk factors, the association between cardiovascular disease risk factors and dietary components, and the relationship between physical activity and cardiovascular disease risk factors among U.S. children. Children were also evaluated for …

Current Perceptions Regarding The Importance And Safety Of Fish Consumption And Omega-3 Fatty Acid Supplementation Among Pregnant Women, Jessica L. Ess
Master's Theses and Doctoral Dissertations
Background: Previous studies suggest many pregnant women are under-consuming fatty fish and are deficient in omega-3 (ω-3) fatty acids.
Background: Previous studies suggest many pregnant women are under-consuming fatty fish and are deficient in omega-3 (ω-3) fatty acids.
Methods: A 10-question survey distributed to expectant mothers via an online survey and via paper form through 3 obstetric clinics over a 2-month period.
Results: Of the 104 participants, 82% consumed less than 2-3 servings of fish per week, and at least 30% were confused about mercury content. Over 60% of doctors did not provide recommendations regarding ω-3 intake. One-third of participants …

Fruit And Vegetable Consumption In Four Elementary Schools After Implementation Of Nutrition Education Programs, Lori Nelson
Master's Theses and Doctoral Dissertations
Nutrition education programs in schools often promote fruits and vegetables with the goal of increasing consumption among children. This study determined whether nutrition education programs increased fruit and vegetable intake in four elementary schools in Florida from October 2008 to October 2009. School A offered the U.S.D.A. Fresh Fruit & Vegetable Program; School B had a Student Wellness Advisory Council, OrganWise Guys and CATCH; School C had OrganWise Guys and CATCH; School D had no nutrition education programs. Students’ favorite fruits and vegetables at breakfast and lunch were compiled. An increase in fruit intake was observed in three out of …

Health Impact Of Brief Interventions By A Registered Dietitian During Exercise Sessions In A Phase 2 Cardiac Rehabilitation Setting, Terrie Holewinski
Master's Theses and Doctoral Dissertations
Weight management is integral to cardiovascular risk reduction. However, minimal weight loss is achieved during participation in many cardiac rehabilitation (CR) programs. The objective of the present study was to establish if brief interventions by a registered dietitian (RD) during cardiac rehabilitation sessions improved the health status of patients with cardiovascular disease. An RD provided individualized nutrition counseling, answered nutrition questions, and reviewed weekly progress in a CR program for a four-month period. At baseline and upon completion of 19 CR sessions, nutrition knowledge was assessed using a 38-question test, and body weight was measured. Upon completing CR, patients rated …

The Effect Of Heating On The Antioxidants Content In Edible Oil., Premanand Krishnan
Student Works (2010-2019)
There are many types edible oils with various brand found in the market. The types of oils involved in the analysis for the antioxidants content were palm oil, olive oil, canola oil, sunflower oil, soy bean oil, corn oil, gingerly oil, rice bran oil, mixed oil and ayurvedic oil. The method used to evaluate the amount antioxidants in this study was 2, 2-diphenyl-1-picrylhydrazyl (DPPH). In this test, the scavenging of the DPPH radicals was followed by monitoring the decrease in absorbance at 515 nm. Heating the oil samples to various temperatures shows negative effect on the antioxidants content. The antioxidants …

Survival And Inflammation In Patients With Heart Failure: The Impact Of Overweight, Obesity, Diabetes And Fruit And Vegetable Consumption, Heather Payne-Emerson
University of Kentucky Doctoral Dissertations
Overweight and obesity are paradoxically associated with better survival in patients with heart failure (HF). This association is poorly understood, in part because the impact of diabetes (DM) on survival of overweight and obese HF patients has not been considered. Inflammation may contribute to worse survival in overweight and obese HF patients with DM, and levels of inflammation may be associated with fruit and vegetable consumption. However, neither of these relationships has been investigated in patients with HF.
The purposes of this dissertation were to a) examine the effect of DM on survival of overweight and obese patients with HF, …
