The objective of this study was to determine the effect of increased vitamin D fortification (250 IU/serving) of high-temperature, short-time (HTST)–processed 2% fat milk, UHT-processed 2% fat chocolate milk, and low-fat strawberry yogurt on the sensory characteristics and stability of vitamin D during processing and storage. Three replicates of HTST pasteurized 2% fat milk, UHT pasteurized 2% fat chocolate milk, and low-fat strawberry yogurt were manufactured. Abstract

Background

Postprandial hyperglycemia is an early defect of type 2 diabetes and one of primary anti-diabetic targets. Treatment of postprandial hyperglycemia can be achieved by inhibiting intestinal α-glucosidase, the key enzyme for oligosaccharide digestion and further glucose absorption. Grape pomace is winemaking byproduct rich in bioactive food compounds such as phenolic antioxidants. This study evaluated the anti-diabetic potential of two specific grape pomace extracts by determining their antioxidant and anti-postprandial hyperglycemic activities in vitro and in vivo.

Methods

The Carboxyl-Terminal Segment Of Apolipoprotein A-V Undergoes A Lipid-Induced Conformational Change, Kasuen Mauldin, B. L. Lee, M. Oleszczuk, B. D. Sykes, R. O. Ryan

Apolipoprotein (apo) A-V is a 343-residue, multidomain protein that plays an important role in regulation of plasma triglyceride homeostasis. Primary sequence analysis revealed a unique tetraproline sequence (Pro293-Pro296) near the carboxyl terminus of the protein. A peptide corresponding to the 48-residue segment beyond the tetraproline motif was generated from a recombinant apoA-V precursor wherein Pro295 was replaced by Met. Cyanogen bromide cleavage of the precursor protein, followed by negative affinity chromatography, yielded a purified peptide. Nondenaturing polyacrylamide gel electrophoresis verified that apoA-V(296-343) solubilizes phospholipid vesicles, forming a relatively heterogeneous population of reconstituted high-density lipoprotein with Stokes’ diameters>17 nm. Reversed phase high-performance liquid chromatography with diode array detection (HPLC-DAD) was utilized to analyze the ingredients of various dietary supplements. Dietary supplements are classified by the Food and Drug Administration (FDA) as foods rather than drugs, and as such have very different labeling laws. Specifically, we tested several types of "vitamin water", 5-hour energy, and multi-vitamin supplements to determine if the advertised contents were actually present at the levels specified. Using our method, we were able to simultaneously analyze the B-vitamins present. It was determined that several of the energy drinks contained B-vitamins that were not in agreement with their …

Implementing A Solid Waste Management Diversion Program In A Conventional Cook–Serve Hospital System: A Feasibility Study, Marjorie Freedman, Irene Franklin

Americans generate over 250 million tons of municipal solid waste (trash) each year, with institutional facilities such as hospitals accounting for up to 45% of this waste. Solid waste diversion, through recycling and composting, decreases the waste sent to landfills. The objective of this feasibility study was to implement an integrated solid waste diversion program at a conventional cook–serve kitchen for a 250-bed hospital. The waste diversion program resulted in 1390 pounds of organic matter and recycling being diverted from landfills over 5 days. It is estimated that the continuing program will reduce landfill waste by 51 tons annually.

The State of Utah has one of the highest food insecurity rates in the nation. It is ranked in the top 4% in the nation of being food insecure and 34% of the state is considered low-income, defined as at or below 185% of poverty level (LeBlanc, Christofferson, & Christensen, 2008). These trends place Utah’s low-income population at increased risk of obesity and chronic disease. Background: Rapid weight gain in childhood may increase the risk of chronic adult diseases. Few studies have examined the effects of lifecourse weight gain on waist circumference (WC), hip circumference (HC), or waist-to-hip ratio (WHR).
Objective: To evaluate the effects of birthweight and weight gain from birth to age 23 years on WC, HC, and WHR in young adults.
Design: Population-based birth cohort study started in 1982. A sample of 856 individuals was examined in 2006. Conditional growth analyses were carried out with adjustment for confounders. WC and HC were also mutually adjusted.

Background—Stearoyl-CoA desaturase 1 (SCD1) is a critical regulator of energy metabolism and inflammation. We have previously reported that inhibition of SCD1 in hyperlipidemic mice fed a saturated fatty acid (SFA)-enriched diet prevented development of the metabolic syndrome, yet surprisingly promoted severe atherosclerosis. In this study we tested whether dietary fish oil supplementation could prevent the accelerated atherosclerosis caused by SCD1 inhibition.

Methods and Results—LDLr-/-, ApoB100/100 mice were fed diets enriched in saturated fat or fish oil in conjunction with antisense oligonucleotide (ASO) treatment to inhibit SCD1. As previously reported, in SFA-fed mice, SCD1 inhibition dramatically protected against …
