Department of Biological Sciences Publications
The objective of the present study was to evaluate whether the content of sugar, protein, fat, or fibre in commercially available and specially formulated plant-based beverages (oat, soya and pea) influences the growth rates of Listeria. Beverages were inoculated with a strain cocktail of Listeria (approximately 1 × 103 CFU/mL), and the data demonstrated that Listeria could proliferate in all tested beverages. Moreover, varying concentrations of naturally occurring or added sugar (0–3.3%), protein (3.3–5%), fat (1.1–3.5%) and added fibre (0–1.5%) did not have a statistically significant (p > 0.05) impact on the growth rates of Listeria in the tested …

3rd Place Research Paper: Cultural Attitudes Towards Ethnic Cuisine In Italy, Rachel Berns
Kevin and Tam Ross Undergraduate Research Prize
Italy has become a common “landing country” for many European and Asian immigrants, creating a perception of invasion that has led to cultural reactionism masked in the reinforcement of “traditional cuisine.” For so-called traditional foods to endure, they must continually be reinvented, bearing different meanings and social values throughout time and space while accumulating rich, cultural baggage that serves as a powerful marker of identity in a given society. This paper explores the role of traditional cuisine in Italian national identity and pride, and the subsequent historical culinary antagonism maintained in widespread attitudes toward ethnic cuisine in Italy. Through an …

Analytic-Holistic Cognitive Styles Affect Consumer Responses To Food And Beverage Samples During Sensory Evaluation, Thadeus L. Beekman, Han-Seok Seo
Food Science Faculty Publications and Presentations
Recent studies have shown that the analytic-holistic theory is applicable in sensory science-related areas. Analytic and holistic cognitive style groups have been found to have significantly different perceptions and behaviors within food-related scenarios. These differences were further investigated and identified within the current study, focusing on specific areas of common sensory tests and analyses where analytic and holistic cognitive style groups may differ from one another. Before the main study, 419 volunteers were classified into three groups based on their scores to the Analysis-Holism Scale (AHS). The extreme groups (65 adults for each) were identified as the “analytic” and “holistic” …

Pea And Hemp Protein-Polyphenol Complexes For Improved Curcumin Delivery Via Emulsion System, Muhammed Suhail Ashraf
Theses
This study focuses on producing and characterizing protein-polyphenol complexes derived from pea and hemp proteins, paired with a variety of polyphenols including 2,4-Dihydroxybenzoic acid, Ferulic acid, and Rutin. The complexes were characterized using various techniques: UV-visible spectroscopy, fluorescence spectroscopy, total phenolic content analysis, and radical scavenging activities. Further, oil-in-water emulsions stabilised using these protein-polyphenol complexes and starch were explored as delivery systems for curcumin respectively. The formation of complexes was revealed by UV-visible spectroscopy, which indicated significant changes in the spectra of hemp and pea proteins upon complexation with polyphenols. The findings from UV-visible spectroscopy were supported by data from …

High-fiber, low-cost agricultural byproducts offer a sustainable alternative for mitigating the competition for crops between humans and livestock. Pigs predominantly utilize dietary fibers through the process of microbial fermentation within the gut. This study explored the gut microbiota and the capacity for carbohydrate degradation in 30 individual Lantang pigs, a breed indigenous to China. Through metagenomic analysis, a total of 671 metagenome-assembled genomes (MAGs) were assembled and assigned into 14 bacterial and 1 archaeal phylum, including 97 species from uncultured microbes. The phylum with the highest abundance were identified as Bacillota_A, Bacteroidota, and Bacillota. Remarkably, the investigation revealed nearly 10,000 …

Research outputs 2022 to 2026
Sulfur containing compounds including glucosinolates (GLS), sulforaphane (SFN) and S-methyl-L-cysteine sulfoxide (SMCSO) have been proposed to be partly responsible for the beneficial health effects of cruciferous vegetables. As such, greater understanding of their measurements within foods is important to estimate intake in humans and to inform dietary intervention studies. Herein is described a simple and sensitive method for simultaneous analysis of 20 GLS, SFN and SMCSO by liquid chromatography mass spectrometry. Analytes were effectively retained and resolved on an Xbridge C18 column. Detection can be achieved using high resolution or unit resolution mass spectrometry; the latter making the method more …

The prevailing climate is an important factor affecting the development of the physical quality and flavor of cacao (Theobroma cacao L.) beans. The influence of harvest seasons on the physical, chemical, and flavor characteristics of cacao beans from Nakhon Si Thammarat Province, southern Thailand, was assessed. Among cacao beans, those harvested in the rainy season (R) had the highest fresh and dry weights and the lowest bean count per 100 g (87.00 ± 2.83). Although the overall fat content remained relatively constant across harvest seasons, cacao beans harvested in R exhibited a significantly higher fatty acid (C16:0, C18:1, and …
