Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. There exists little information regarding how instant rice’s storage conditions affect its quality. Such information may be elucidated by studying sorption isotherms which describe the storage temperature, relative humidity, and instant rice moisture relationships.

A surrogate is commonly used for process validations. The industry often uses the target log cycle reduction for the test (LCRTest) microorganism (surrogate) to be equal to the desired log cycle reduction for the target (LCRTarget) microorganism (pathogen). When the surrogate is too conservative with far greater resistance than the pathogen, the food may be overprocessed with quality and cost consequences. In aseptic processing, the Institute for Thermal Processing Specialists recommends using relative resistance (DTarget)/(DTest) to calculate LCRTest (product of LCRTarget and relative resistance). The goals of this study were twofold: to further examine sustainability within the brewing industry through a literature analysis across four academic journals, and a benchmarking analysis of a Louisville, Kentucky brewery’s resource consumption and emissions production. Publications related to the brewing industry were examined for the presence of sustainability keywords: “efficiency, sustainability, carbon footprint, climate change and greenhouse gas”. Benchmarking examined the local brewery’s primary production facility to determine their performance compared to other surveyed breweries pursuing sustainability across the country. Flakes are products that are generally made from cereals. In this study, we are interested to use black soybean (Glycine soja (L) Merrit) and bangle (Zingiber purpureum Roxb.) as flakes ingredients. Black soybeans have high antioxidant components, while bangle contains high antioxidant and fiber components, which enables it to capture free radicals. Electromagnetic-driven energy such as infrared (IR) technology holds great potential in deactivating Aspergillus flavus spores and prevents aflatoxin B1 (AFB1) contamination. Aflatoxins, highly toxic secondary metabolites primarily produced by Aspergillus species within the Flavi section (A. flavus, A. parasiticus, and A. nomius), pose substantial health risks to both humans and animals due to their significant toxicity and carcinogenic properties. Quantifying the chemical process of milk spoilage is challenging due to the need for bulky, expensive equipment that is not user-friendly for milk producers or customers. This lack of a convenient and accurate milk spoilage detection system can cause two significant issues. First, people who consume spoiled milk may experience serious health problems. This study investigated the phenolic compounds in date fruits, mainly soluble and hydrolyzable compounds, and insoluble melanin. Soluble (27.5–54.0 mg/100 g FW) and hydrolyzable (24.0–78.5 mg/100g FW) phenolic compounds were determined in 18 cultivars using ultra-performance liquid chromatography coupled with mass spectrometry. Phenolic acids were predominant in both fractions while flavonoids were mainly present in the soluble phenolic fraction and the proanthocyanidin B1 and B2 were only present in the hydrolyzable fraction. Four total antioxidant activity assays (total phenolic content, ABTS, FRAP, and DPPH) gave different results for both the soluble and hydrolysable fractions of 26 date fruit cultivars, which …

This study evaluates the structural, physicochemical, functional and rheological properties of papaya dietary fibers (DFs) extracted by alkaline, water and combination of water/wet ball milling. The particle size of DF subjected to water/wet ball milling (WB-DF) was considerably reduced compared to DF extracted by water (W-DF) or alkaline (AL-DF) methods. WB-DF in comparison AL-DF increased the water holding capacity (WHC) by 4.1 folds, oil holding capacity (OHC) by 1.7 folds and water swelling capacity (WSC) by 2.6 folds. The popularity of insect protein as a food and feed supplement is growing. Protein quality, end use and prices vary considerably between different insect species, which may incentivise insect protein adulteration. Here, near-infrared (NIR) spectroscopy and chemometrics were used to detect the presence of cricket, black soldier fly larvae (BSFL) and mealworm proteins in a simulated complex insect protein mixture. Additionally, BSFL protein powders collected from three commercial sources were investigated to determine whether the NIR-based technology can discriminate the proteins obtained from different companies based on their composition. Objective: This study aimed to develop novel soybean protein isolate (SPI)-based emulsifiers. Methods: The structure of SPI was modified by limited enzymolysis combined with glycosylation and the effects of this synergistic modification on the emulsification characteristics of SPI was studied. Results: Among the different components obtained from the SPI hydrolysate (SPIH), the high molecular mass component (F30) exhibited the best emulsifying property. The emulsifying stability of F30-dextran conjugates obtained for 4 h was the best. Compared with SPI, SPIH and F30, the F30-dextran conjugates stabilized emulsions showed the lowest initial average particle size and the best storage stability. When the …

Objective: Exploring the optimal process for the degradation of T-2 toxin in beer by glow discharge plasma(GDP) and its impact on the physicochemical indicators of beer. Methods: Based on single-factor experiments, a response surface optimization experiment with four factors and three levels was conducted using the Box Behnken method to determine the optimal degradation conditions for T-2 toxin in beer. Results: When the discharge voltage was 570 V, the action time was 18 minutes, the discharge current was 99 mA, and initial concentration of T-2 toxin was 8.5 μg/mL. Objective: To improve the adsorption of genistein by zirconium-based metal-organic frameworks (MOFs) with triangle aromatic ligands. Methods: Two MOFs (MOF-808 and PCN-777) containing different sizes of triangle aromatic ligands were synthesized by hydrothermal method for adsorption of genistein. Methods: The inhibition and clearance of silymarin on S. aureus ATCC25923 biofilm formation were detected by crystal violet staining, the effects of silymarin on its biofilm metabolism were investigated by MTT staining, and the effects of silymarin on its coagulase expression and hemolytic activity were investigated by freeze-dried plasma and aseptic defibrinated sheep blood. Objective: Obtaining hhigh-yield pprotease-pproducing bacterial resources through fermentation of advantageous protease-producing strains derived from Shiping stinky tofu. Methods: Single-factor and response surface experiments were used to optimize the culture medium and fermentation conditions. Using casein as the substrate, the effects of temperature, pH, metal ions and organic reagent on the protease activity and stability of strain JX-11 were investigated using enzymology techniques. Results: One strain of high-producing proteinase-secreting bacteria, JX-11, was isolated from Shiping stinky tofu, identified as Chryseobacterium pennipullorum. Methods: TCMSP database and the network maps were constructed with Cytoscape3.9.0 software.
